I love Pizzeria Gabbiano! It’s one of my favorite lunch spots in Pioneer Square! I’ve been here multiple times, taking coworkers with me. I’ve tried just about any flavor combination they’ve made. While some are better than others, overall their ingredients are fabulous and their pizza is hands down one of my favorites in the city. Their staff is friendly and helpful, they’ll let you open a tab if you’d like to wait for new pizzas to come out of the oven. I love the concept of paying by the weight so you can try any and all flavors they have available. Also, I think for lunch, you can’t beat having a flavorful lunch for under $ 10. I’ve come back over and over again, and will continue to do so.

UPDATE: since I am down here for jury duty for a while I had to come back to this spot again. This is a great establishment(and concept). I tried a few new types of pizza today(the pork was my favorite — great flavor and spice). I also tried the salami, basil, pesto and mozzarella sandwich. It was fresh and loads of flavor. Great, friendly service and atmosphere. Today I brought two new friends and will do so again in the future! Past review: Good variety of pizza options all with high quality ingredients and toppings. My favorite was one with anchovies and olives. The line was out the door and moved fast. Good service and friendly folks! My pizza was room temperature because they have it out and then cut you a piece as your order — it was fresh though. If you like it hot might need to ask them to heat it up. Look forward to going back and trying more types of pizza.

Pizzeria Gabbiano sells their pizza by weight. They have several varieties and you just tell them how much you want of which. I tried the mortadella pistachio, Yukon potato, and prosciutto. The slices were not too thin but they were delightfully crispy. My favorite was the mortadella with pistachio but the meat to crust ratio is disappointing. The prosciutto came with grated cheese and arugula so it had the most«going on». Loved it but it was more like flatbread with toppings. The Yukon gold slice had a delicious bechemel sauce but I wasn’t crazy about the starch on starch. I prefer Il Corvo for lunch but if I were in a hurry, this place is a wonderful option.

I think this place is so cool. I don’t know that I could say anything more than what’s already been said, but there’s 5 – 7 types of pizza to choose from, you pay per pound, and you can choose how big a slice you want of each type of pizza you get! A dream for someone who can be indecisive or likes variety! The guy behind the counter was so nice and helpful — even offered to warm up my pizza before I left even though the place was about to close. Surprisingly, I really liked the squash pizza and pistaccio and proscuitto pizza… though the sausage and mushroom pizzas were good as well. The one sad thing is that this place is mainly open for lunch hours on the weekdays. Wish they had more weekend hours since I work out on the Eastside!

Amazing pizza. Had a small slice of 4 different flavors but the artichoke /sausage slices was some of the best pizza I have ever had. Place is laid-back and the staff was friendly. Was fun to watch the pizzas being prepared while we ate. The pizza was slightly pricey(sold by the weight) but worth the price for their unique flavors. Definitely a must-eat.

EXCELLENT pizza that they serve in accordance with the portions that YOU want. The offer about 5 – 7 flavors that vary by day, and you can choose small or large slices of each flavor per your fancy. The flavors are unique… you’ll never find these at any olé pizza joint. Last week, I tried the squash pizza, prosciutto piazza, and a small bowl of the cauliflower salad. Since there was cauliflower in the salad, I decided I wouldn’t try the cauliflower pizza. The pizza is sold by the pound. When I was here last week, I noticed that they now have a sandwich option too! I’ve been here 3 times now, and each time I’ve thoroughly enjoyed the food. It gets extremely busy at noon, and has limited seating, so go early if you can.

I came here for a weekday lunch with a few friends and fell in love instantly. :) This pizza parlour has a certain charm that fits its Pioneer Square location, with its exposed brick walls and communal seating. I absolutely love the idea of ordering by weight. You literally can go up to the counter and indicate that you want thiiiiiis much of whatever pizza they have on rotation. It’s definitely a first-come, first-serve basis — once they run out of a certain kind, they’re out until they make a new one. But don’t worry — I noticed that they have hot pizzas coming out pretty quickly! I’ve only tried the peperonata and mushroom pizzas so far, but they both tasted great. :) The peperonata pizza came topped with(you guessed it!) a bunch of peppers and I liked that it had a little zing to it, nothing too spicy at all. I couldn’t help but keep glancing at the pizza counter as they brought out each new pie. It’s kind of like a game of chance — your options depend entirely on when you visit and changes all the time! Go early if you can because Gabbiano fills up pretty quickly. On that note, I’m definitely visiting again because you can never have enough pizza! :D

I got two different pizza, and since it’s sold by weight you can pick the size of your sizes. Both pieces of pizza were tasty, but what constituted maybe one full slice of pizza cost over eight dollars.

Wow — this place has really hit its stride! All 4 flavor combos I tried today were spot on, and the staff were calm, friendly and in control. Love! This is also a very practical lunch stop when you work in the area because it’s truly fast, but also delicious. Win all around.

I had really high hopes because who doesn’t worship Il Corvo, but here was my experience today: Came in after the lunch rush. There was still a lot of open seating, lots of pizza options still and they appeared to be making more. I ended up ordering simple — the Margherita Pizza, which is basically sauce, cheese and basil. Can’t go wrong, right? Eh… I got the last end piece and most of it was burnt on the bottom. I powered through. It was kind of rock hard. Food today — meh, service — great. I like that you order by weight. You can say, hey I just want a tiny piece of this and a huge piece of that and all of that other one and they charge you by the oz. I believe. It’s amazing! You order at the counter and they bring the pizza out to you(although I was too excited I just waited at the counter and grabbed it there). Self serve water station. Bus your own stuffz. Will I be back? Of course!!! I’ll probably edit my review at some point when I know I’m going to eat a life-changing piece of pizza. Just, today was not that day.

I love Il Corvo Pasta, so have been wanting to try this place. The pizzas in general is a bit too thick for me, but the ingredient combinations are pretty good. Caramelized onion, pancetta and arugula: very nice and sweet and salty combination. Mortadella, housemade mozzarella and pistachio pesto: my favorite, so satisfying, but a bit of waste for the beautiful mortadella because it just tastes like ham. Pear and blue cheese: very good combination. Quattro Formaggi: great flavor Pancetta and Mustard green: another favorite Margherita and Crimini Mushroom were meh… The chocolate cookies were not crispy enough. Overall…it’s not bad, but not my favorite kind of pizza.

There’s been a lot of complaints on Unilocal about this place. Some say that this isn’t pizza, its focaccia. Some say its expensive for what it is. Waaaaah waaaaah waaaah. I happen to like Pizzeria Gabbiano. Where I’m from, you can’t get pizza like this… focaccia or otherwise. I love the idea of picking which type you want, and how much you want of it. On the day that we went, there were six types and we couldn’t decide which ones to choose so we chose all of them. About a one inch slice of each, just so we could try. The total came out to around $ 13 and you know what? I’m fine with that. Each selection was more delicious than the next. Mike Easton has a great thing going on here. I haven’t been able to try Il Corvo yet so that will have to wait until my next trip to Seattle.

Don’t get me wrong — the pizza is gorgeous, very creatively put together, and freaking delicious, and I love that I have the freedom to pick which slice and what size. However, at 32/kg(2.203 lbs), it’s unjustifiably expensive. I did fall in love with the pizza they had Friday of last week. It had chicken, bacon, and mustard greens, I think. I don’t know anymore, but it was amazing. It was like eating a Filipino chicken asado-flavored pizza. I’m going to be looking for that from now on. Mortadella with pesto was yummy as well! The salad of pickled veggies I got was just okay. A little too sweet for my taste, but I ate all of it. I think salads sell for a little over $ 3/cup. I loved what they did with the space, though. It had a modern industrial feel, and the communal tables concept was cool. I loved the antique weighing scale at the counter! I don’t plan on going broke anytime soon, so I probably won’t be eating here too often, but yes, if you’re looking for legit, unique pizza in Seattle, this place is it!

This place is yummy. My friend and I had the day off so decided to come here for lunch. Been wanting to come here for a while but always end up at El Corvo(which is always a great choice). Came here right before the rush and got the steak and butternut squash pizza. The pizza was good, the crust is different but not in a bad way. We also got their other side dishes like the marinated veggies(which was amazing, who can’t say no to those mini onions) and I think the orzo salad which was also good. And because we wanted to try more stuff we got the olives which were good(i love green olives, hate black olives).

You had me at pizza. Even though this is more of a crazy flatbread than a traditional pizza I’ll allow the nomenclature on the basis of sauce + bread + cheese with an Italian flavor profile. Chef Easton is at it again, bringing crazy traditional Italian food we didn’t even know we wanted. This time he is slinging Roman style«Pizza» by the kilo. The surprisingly light and crisp base is covered in a slew of different toppings ranging from Pear and Gorgonzola to Pepperoni and Kale. All of which were inventive and well thought out. We managed to beat the 11:30 rush on a Tuesday and had wonderful service, they were able to cut each one of the flavors into personal 1.5″ slices so we could both try a little of everything. I had a small glass of their wonderful citrusy lager and enjoyed the view through the big windows. While it was a satisfying and very new experience for me I won’t cash in another vacation day to dine on Roman style pizza. But if you are in the area I highly suggest you give it a whirl.

A friend and I had lunch here today and thought it was an interesting concept to buy pizza by the kilo. Have a little, or have a lot. There was a nice variety to choose from and new pizzas continuously came out of the oven. The crust was very focaccia-like; airy, but with a crisp bottom. I ordered thin slices of the parmesan potato rosemary(basically tasted like mashed potatoes on bread), the porcini mushroom bechemel, coppicola brussel sprout, the four cheese, and a san pelligrino. While I felt pretty satiated, I’m torn. It was good, not mind blowingly so, and the prices definitely leave a lot to be desired.

Pizza by the ounce? Who would have thought that pizza would be weighed by the ounce. Makes you not feel so guilty when you are in between having 1 or 2 slices. You can either eat a really big ONE slice or you can have a really small ONE slice. If your trainer asks you how many slices of pizza did you eat, you can justify your ONE really big slice of pizza that you just ate as only a hiccup in your diet :) Aside from the fact, I thought that the topping choices for this pizza place was really interesting. I eat a piece of pizza with pistachios on it. I didn’t think that eating pistachios would go well with a pizza but it did work. I am looking forward to going back to this place to eat some pizza again and maybe try the other pizzas with toppings. Remember that this is not a pizza hut or a papa johns. When you come here, try to be adventurous and let you palate take you outside your comfort zone. But then again, even their simple pizzas have good quality toppings. Must come back here on another day when in the area.
