Carpatia Sausage

Great Sausage great service. Go in with a sense of adventure not as an entitled American and you will have a great experience. Owner had just made a fresh batch of sausage and they were hanging in the shop. We told him what we liked and he recommended 3 types and gave us instructions for hanging them to cure at home. After about a month they were ready and it was worth the wait.

My husband and I came to this place as we kept seeing it as we drove home and decided to give it a try. We walked in all smiles and the guy at the front didn’t even look at us or greet us, we said hello, he didn’t respond we said hi again and he gave back a smug hi. We ignored it and thought maybe its the heat and he maybe in a bad mood, nope he’s an asshole. We asked do you have any lamb or beef sausages, he responds with an aggressive and blunt «NO». Still not even looking at us looking straight forwarded, he looked so mad. We even complimented his shitty little store and said it was nice, he didn’t say thank you, nothing. I feel he didn’t like us because of our race, I have never, ever thrown the race card around but this def felt like he didn’t like our race, as if he wished he could put a «NO middle Easterns and Samoans allowed». Why do I believe this? 1. We were dressed decent 2. We were very poliet 3. We tried to make conversation with him, we even greeted him. There’s nothing else I can think of. Its just that hate he had in face was disturbing, I’ve lived in Seattle my whole life and this has to be the worse store owner I’ve ever came across. I will stick to Salumi, they have quality meat, they aren’t assholes, and they have a hugggggeeee variety of meats, plus their reviews far exceed this piece of shit place. I really want to go back and give the asshole my two cents, but its not worth it. Never ever will we go here, and we will for sure tell everyone we know to never come here and to just stick to Salumi.

This is the most overdue review I have given. Six years ago this week we moved in to our house down the street. Every once in a while I am fortunate enough to have time off when he is open. I have no idea what I buy half the time. Ia am afraid to ask and that is cool. As a customer too often people kiss my ass while selling me mass produced processed crap. I would rather get the best sausage in a place where the dead hang like victims of a horror movie. You just walked in to the old world. Deal with it. While you eat your large corporate hot dogs I will be dining on an Italian Sausage that challenges my taste buds and supporting the guy on my street.
Get a sausage and some smoked meat. Slice it thin and share it. It will stink up everything. Yes that is the good stuff.

The sausage and smoked meats are excellent. Love the smoked Canadian bacon. Interesting Eastern European selection of condiments, wines, and little snacks things as well. Like being in Europe. Minus one star only because the customer service is as if the guy could care less whether you were there or not. Definitely Soup Nazi vibe, which personally I take with good humor but don’t expect the good humor back. Cash only can be an inconvenience, so come prepared.

When I was deployed to Sadr City, Iraq in 2008, the owner of Carpatia sausages, a former US Marine named Jan, was kind enough to send my comrades and I some sausages. After months of eating army rations, they were a godsend. Jan’s sausages taste amazing, and are so well cured that they are capable of standing up to even the 140 degree heat of Iraq in the height of summer. Buying sausages from his shop means not just buying an excellent product, but also supporting the veteran community.

Drove by this place a million times when I decided to stop one day, after checking Unilocal for a good but her shop in my neighborhood. WHOA! This place, and the owner, are exceptional. It is not what you would expect when you walk into an American butcher shop, but it is exactly what I became used to in my stays in Europe. The selection changes daily, based on what he has made, what is cured, what requests he has from customers. So it is always different and we leave with something new everytime.
Biggest suggestions: Sausage (our favorite is the Italian, but any kind is excellent), Lebansky, Bologna, and if you like a very spicy sausage the Devil Dogs.
It is fairly busy and somewhat picked through by Saturday, so try to make it in during the week.

I’ve used his smoked sausage, smoked ham hocks, the smoked ham and loin that is creamy and so so so buttery, oh my, and now I’ve tried the very spicy smoked sausages too. This place must, MUST, stay in business in this neighborhood. Realtors will start to list it as a huge Shoreline plus in fliers; far above the «so called» excellent shoreline schools, which I give two stars, BTW. Get past the taciturn bed side manner and put all that smoked meat into you. Gaaaaaaaah! Sogood

I don’t think the lights were on when I was in, very dark inside. What I could see were a bunch of sausage, slabs of bacon, some bratwurst and headcheese. If there were meats hanging from the rafters it was too dark to see. Nothing was priced, nor were there descriptions. The guy sitting in the corner on the computer was less than helpful, I think he was annoyed I was there. With his enthusiasm to sell stuff I wound up walking back out. I cant foresee this business surviving for long like this.

The guy had a photo of the Soup Nazi, so if that’s any indicator of anything. This place is awesome. The salami was excellent. Cash only!

This place is phenomenal! Excellent meat and easily my favorite thing about my neighborhood! His products are well worth his seemingly gruff personality (although if you’ve spent any time in eastern Europe, you wouldn’t describe him as gruff).

Went for the first time today. Love how the meat is hanging from the ceiling and the smell. Give it 5 stars just for being unique and run by the owner. Also like the meat a lot. It is mainly pork and recipes of central european orgin. Prices seamed very resaonable with the majority of cured meats between $ 8 and $ 10 a pound.

Fantastic place. I’ve been going here (it’s now known as Pannonia Smokehouse) for years. The owner, Jan, keeps talking about going back to Europe but I hope he never does.
FYI to Terri B. Yeah, I totally understand and believe your experience. Just so’s you know, the further East you go in Europe, the less they believe in customer service in shops like these. So I think Jan’s just aiming for the authentic old-​world experience…

This place is amazing. It’s full of naturally smoked bacon, ham, hamhocks, sausage, etc. at very reasonable prices. A pound of excellent hand-​crafted bacon is only $ 9 or so, and their ready-​to-​eat sausages, such as the landsjager and the «devil dog» are great as well. The guy behind the counter was not all smiles, but he was courteous, answered all of my questions very patiently. and gave me a taste of anything I asked about. I look forward to patronizing this place often in the future!

This place is the real deal. I won’t be satisfied until I try every think he makes. The Landjager is a good place to start.

I love coming in here, and my cats are always super friendly when I come home from a visit.
The owner is the only person I’ve ever seen working, and he seems angry at first but then if you talk to him he’s very nice and incredibly helpful. His wine is from all over Europe and is super inexpensive – it makes a nice gift or just something to bring to a party. I’ve never tried any of the meats other than the dried sausages, but someday I will be sure to try something else.
It’s cash only, and maybe checks, so be sure to bring enough. Yes, Carpatia is closed on certain days and months, but he’s pretty much running this place alone and dude’s got to take a vacation! It’s worth it to come back, so be sure you check the website first.

I loved this place. It is a tiny slice of the Old World, right here in Shoreline. I recommend it simply as a way to experience the European style of shopping: walk in, meet the owner, chat, ask about the wares, tell him what you think you want, learn about the items he suggests, take a taste of one, then of another, consider your purchase, chat some more, and eventually make a decision. Then linger and browse the wines, the condiments, or just stand there and soak up the luscious, smoke-​cured air. Add a Tokayi to your purchase, or some mustard.
It’s a slower pace. It’s a more friendly, personal interaction. If someone is ahead of you, settle in for a wait (or go next door to Larry’s wine shop to browse there for a while).
My first visit, after a taste, I got a half pound of the best prosciutto I have ever had in Seattle. Dry, buttery, light salt, touch of pepper, and a delicate but definite flavor from the meat. We discussed British back bacon, and determined that he had something close, but not what I was looking for. He gave me a sample of his «devil dogs» (sausages with a good jalapeño heat in the mix) and I just HAD to have a deuce to take home.

The Sausage House is Seattle’s best ethnic butcher shop — bar none! The owner smokes his own meats, prepares prosciutto (prsut) in the old air-​dried style, and has a ton of exotic — for Americans — sausages for sale. Also fresh Wurst, delicate Bratwurst, Leberkäse (bologna loaf), and more. This Slovak Croat knows his trade, having learned it back in Bratislava and in Austria.
He is energetic and eager to explain the differences. Try the spicy Devil’s Sausage — that will put to rest any rumor that Central Europeans eat bland food. Slovakia was part of Hungary for a long time, and the sausage selection reflects that influence. His Landjäger is traditional and well-​smoked. With an international clientele — mostly Czech, Slovak, Hungarian, Russian, Croat, Romanian and German — Jan fills the vast void in Seattle that was left when another generation of immigrant butchers passed on. He is a real asset to our ethnic communities, plus he and his new assistant also speak German.
The shop also sells Central European condiments, breads, spices, and prepared foods. Lately he also has added wines and beer from the region. The beer is authentic and offered at much lower prices than at so-​called beer specialist shops (Stiegl Gold at $ 2.25 a half liter! The real Budweiser (Czechvar), some other Bohemian and Slovak or Polish beers, plus a Romanian brew and Karlovac from Croatia.
The shop is in North City just a half-​block east of 15^th NE in the center of a small business block. Just follow your nose to the fragrant smoke.

Found these guys here on Unilocal last week and was SO jazzed to go since they are just up the road from my house. I arrive only to find a sign on the door that says «Closed for February». HUH?
So I go again yesterday figuring they will be open and refreshed. Got the first right.
It is a very small store. No big, I prefer to shop locally and find these kinds of businesses endearing. That’s where the happiness ended. A man came from the back asking if he could help me. I let him know I had never been there before. Instead of offering to tell me about their products, he told me he would be back in a few minutes then. HUH? Since I had never been before, don’t ya think I might need help or have questions?
Boy, did I have questions! Nothing is labeled. Nothing is priced. (It is illegal in WA ST to not price items in grocery stores!) Most of these meats are things I have never seen before (at least not without a name or price tag).
Don’t shop here unless you have a crowd to feed as every package is sealed and they are huge. No, they will not break the packages down. They have no samples so you are taking your life in your hands buying a meat you have never heard of. How do you know if hot is too hot or mild not hot enough?
I had already told a friend I was going and how excited I was. She and I may split a package of something later. Can’t remember the name as it was some German/​Hungarian/​Polish/​Japanese thing and I do not know the language. Or I will just go somewhere else where the service is better and I can get a taste before I buy.
The man working at the shop made me feel like I was an inconvenience because I asked too many questions. There was basically no customer service. That could be why not another soul came through the door while I was there. He was annoyed when I needed more description than just the name of things that were new to me. I am a mega cook and love trying new meats. So a better description and a small sample were certainly in order. Me thinks they would sell a ton more if they just improved on those two. I am thinking this guy is a son or some other relative who was hired because he couldn’t get a job any place else. Bad business decision!
I did buy a package of some bratwurst kind of deal that he said was mildly spicy. There is enough in there for 2 full meals at least! Hoping my idea of mildly spicy and his are the same or I will be feeding it to the neighbors.
Really doubt I will ever go back and I certainly won’t be promoting as excitedly as I was last week, if at all. There are cool sausage shops all over Seattle and I will be a customer in those stores.

Wow, what a wonderful meat shop. I walked into this small family owned business and was intoxicated by the fantastic fragrance of smoked meats. The man running the shop let me sample some different meats before I made my decision.
I look forward to going back to the Sausage House, which may result in me adjusting my rating to 5 stars.

Shoreline is lucky to have such amazing smoked sausage right in North City. This place is a find. Highly recommended.
