When my husband recently retired from a 24 year long career in the Army I decided the achievement warranted celebration. A big party, to be exact — but what kind? I wanted something fancier than a backyard barbecue but more casual than a formal banquet, and after searching all over town, calculating catering costs vs. space rentals, Knights of Columbus came through! We rented the lower hall and were told we could decorate as we pleased, they simply asked that we not drill holes in their walls(because some idiot actually did that). Chef Marc Molinari always made time for me during the planning stages and was incredibly accommodating with the menu. So accommodating that, upon request, he whipped up a Yakisoba dish that my husband remembered fondly from his basic training days. They offered a variety of dining options: linens, booze, bartender, servers, buffet step up or sit down table service, all the while remaining mindful of my budget. It was a complete relief to have everything I needed available on site, and I honestly can’t think of another venue in Sierra Vista that could have provided all the same services for roughly 1500k. It was perfect!
