Of the two employees we spoke to, neither knew how the meat was sourced or if it was grass or corn fed. They couldn’t even tell us what seasoning they used on their own short ribs! Worst of all, their jerky was expensive and inexcusably bad. We are always looking for/sourcing conscientious food providers on all levels, and this business failed right off the bat.

I recently took a small hog here to be processed into breakfast sausage. The deposit was $ 85, I thought that was a little steep for a skinned and gutted hog that weighed 40 pounds but I left it anyway thinking that I would get some of it back when it was done. When I picked up the meat it was only 22 pounds and I didn’t get any of the deposit back because they said it was a flat rate for all hogs under 100 pounds. Which is a shit deal if you kill hogs that are a good eating size. When I cooked the meat there was no fat content at all and extremely watered down. Any good wild game processing plant adds a decent amount of domestic hog fat to make sausage. But not this place. Needless to say I will never go back to this place because of the ridiculous prices and the terrible quality of meat. It would of been more cost effective to buy breakfast sausage in the store than to go here.

Was very impressed to find butcher in Texas that I could get a Tri-Tip roast at a decent price. Although the beef jerky was a little over peppered for my personal preference, but I will certainly be back to buy my meat.
