Ate there at the Madee fund raiser food truck battle in Staunton this weekend. Summary — lots of great ideas poorly executed. Collard greens way over-vinegared, hiding any other flavors. Oyster Po Boy — way too many capers, making it overly salty and again hiding the more subtle flavors the slaw and pepper jelly on it probably had — and the large bun was not very good quality bread either and was at least 50% of the sandwich. Beans and rice — not much character. None of the food tasted liked it had been cooked with care — felt just thrown together. Won’t return.

Most delicious Oyster Po’boy I’ve ever had! Not exaggerating. I can’t say enough about how amazing the food was. We also had the fish and chips. The fish was so fresh, tasty with a great crunch. The fries were hand cut and wonderful. Oh and let’s not forget to mention the collards/kale, perfect amount of heat and sopping up the pot liqueur with the cheesy cornbread, heavenly. I would follow this truck everywhere. Unfortunately I live in Virginia Beach. I can’t wait to try the shrimp and grits, gumbo, Cajun chicken sandwich, red beans and rice. Omg. The fat kid in me just died and went to heaven.

Of the many food trucks in the Harrisonburg/Staunton area, this ranks among the tops and offers good food that’s different from the standard fare. Liz is extremely personable and her culinary background in Cajun cooking shines through. Don’t miss this truck if you get the chance. All the food is good, and the Poboys and greens can’t be beaten.
