Last year I attended several outdoor festivals and met Christene and Gregory, the owners of Miss Vi’s Cook-Up Catering. They specialize in Caribbean cuisine. The name of the business came from Christene’s Gramma Viola. Christene was making chicken jerk tacos at the Safety Harbor Seafood Festival when I stopped by to see what they had. I learned that they not only make tacos, but curry, jerk and vegetarian dishes. I immediately chomped into the jerk tacos, followed by a beef empanada and was in Caribbean heaven. The food is outrageous and cooked with a lot of love. They catered a party that I attended and there was ohhs and ahhs throughout the evening. The pineapple upside down cake dessert was to die for!
