The sunshine beat down in waves as a breeze rustled the palm frond fringes. It was time to root down. Onlookers gawked, interest was ripe for my avocado topped, tomato adorned, bacon stippled, mashed potato and carrot concoction. The friendly smiles of the chefs matched the rich wholese goodness of the meal. Market. Fresh. Cooked. Vegetables. Creamy sauce with scallion highlights. Black pepper flecks. I awaken I would have added lemon juice for a citrus kick. This is Florida. Then I had the shrimp and scallop smash. With lemon.

On a perfect November afternoon(today) we made our way to the Sunday market in Hyde Park. The market was chock full of crafts, produce, specialty shops-but most importantly-food tents. While there are tempters galore-the Tree Dog Roots tent caught my eye-just what is a root vegetable smash? So I had to ask-on this day it was a mix of potatoes, parsnips, and carrots-yum on its own… but what they created for me was pure mouth magic. I should have taken a picture-but let me try to describe it… a half Florida avocado sliced in the shell. The center stuffed with smash, then topped with three cheeses-cheddar, provolone, and goat, add to that bacon, scallions, fresh grated pepper and a drizzle of ranch dressing. It was amazing! Big tip-I was late in the game and they do run out/sell out of ingredients, so don’t put it off-go early! They normally have chicken and more to choose from. I was getting next to the last of the smash and it was still epic. I know they are at Wiregrass Mall the first Saturday and Hyde Park first Sunday.
