Well I would have to day the ribs are good. But they say they are baby backs that is a lie. They are spare ribs all the way. The sauce taste like my crappy hotel room smells .Go for the ribs but take lots of money and a bottle of sauce. Also who in there right mind doesn’t give napkins when you get barbecue. Not worth a second trip.

First off I did not eat the food. It’s not a restaurant with tables & chairs. No address. It’s just a truck in a parking lot. The other reviews dont tell ya this. I guess you eat in your car or hotel room if you’re a tourist such as I was. As I sat in my car watching, a cook came out and put tape across the menu items indicating sold out. So I drove away.

Due to the nature of my employment(traveling rock band), I see A LOT of what America has to offer, and have had every pulled pork sandwich from Savannah, Georgia to Amarillo, TX. That being said, Jethro’s Genuine Texas BBQ is one of the BEST pulled pork I’ve ever had. First of all, 7 bucks will buy you a sandwich the size of a breakfast plate. HUGE bang for your buck! Glazed bun, juicy pork. I prefer going classic with the coleslaw thrown in the mix. Jethro’s particular mix is super sweet and spicy. PERFECTLY orchestrated! Clean, comfortable outdoor seating, and friendly staff rocking some of that good ol’ outlaw country on the boombox. Seriously folks, this is the REALDEAL! If you’re traveling through Taos, look him up. It’s a welcome change from your typical burrito stand. He’ll be my first stop when I come back. Thanks Jethro!

I am originally from Texas and enjoy the different styles of BBQ from around the country. Jethro’s is a great addition to the Taos food scene! The sliced brisket and the ribs are juicy and flavorful. The sauce is really tasty as well– yes, you heard that from a Texan. I haven’t tried the sausage because they had already sold out the times I’ve been there so far. Don’t miss trying some of the best BBQ in New Mexico. They’re open Thursday– Sunday. I hear they will place the famous smoker & food truck just north of Albertsons soon so keep an eye out.

We live in Austin, TX, arguably the BBQ capital. I enjoyed Jethro’s ribs, brisket and pulled pork. They ran out of sausage so I didn’t get to try it. Jethro used to live in Austin, and I would say this: if he opens a BBQ place in Austin I would eat there. They open at 11am. Make sure you get there early before they sell out. If you like good«hole in the wall» food then you’ll love this. Got the brisket Frito pie. Wife got the sausage sandwich. Worth the money spent. Ate under a nearby, enjoying being outside. Even the kids like it! And they normally don’t like bbq.
