Beautiful shop. My first visit was on the grand opening with tons of free samples. Awesome. Decided to give the sandwiches a try for dinner tonight, was a bit disappointed. Tasty, but the quality of the meat was overpowered by too much bread. With 2x the meat/toppings and a different type of bread than a thick baguette it would have been amazing. Will be back, but for the meats rather than the sandwiches. Hope that will make me come back for a 5-star review like the others on here!

I want to start by saying I really enjoy the location of the shop, being right on the river side of the Market Block was a nice choice. The inside has a great feel and truly brings you back to an «old-school» butcher. With that though is an old school butcher menu, you won’t find new age sauce marinated meats. However the steaks I brought home were fresh and perfect, I also bought a new type of bacon made from lamb on the workers suggestion which was great. They also told me that they do sandwiches that I’m looking forward to trying and are open for lunch! If you’re looking for a new place local to grab a nice set of steaks or meat for dinner this is it.

So excited this amazing shop came to Troy! The butchers are so knowledgeable, and they source their meat from local farmers who use sustainable practices. I’ve been in several times; tonight I purchased the picanha steak and some compound butters in the case caught my eye. I got the parsley-sage-garlic butter and it was amazing on the steak, and tossed with the vegetables I ate with it. Run, run, run to the shop. Don’t walk– RUN and grab some meat here. You won’t regret it.

Awesome butcher shop run by amazing people right in the heart of downtown Troy. Sentinel Butchery boasts a beautiful selection of fresh meats displayed in a stylish space. I have ordered a cheesesteak and a Reuben sandwich and both were out of this world. There really is no comparison when eating local, humanely-raised meat vs. the factory-made products available in the major stores. The staff is knowledgeable, friendly and clearly has dedicated their lives to preparing meat in a more ecologically-friendly way.

Just seeing the carcasses hanging in the cooler behind the counter, makes this a cool place. In some ways, this reminds me of the butcher section of Mom & Pop grocery store I use to provide delivery for 50 years ago. There isn’t a lot of meat on display in the case, but if you are looking for a particular cut of meat from a specific farm raised animal, you can simply ask for it and they will try to accommodate you. The staff are very friendly and helpful. There are a few other groceries on some shelves, but I was more focused on the meat. I ended up buying some house smoked shoulder bacon that I intend to use in place of Canadian bacon. Egg mac-muffins here I come.

Thus far we’ve bought beef, pork and lamb from the good folks at Sentinel. Oh, yes, and a pork burrito. All were superb. The staff are friendly, knowledgable and accommodating. A terrific addition to downtown Troy!

There’s awful stuff going on in the world in the way pigs, cows, chickens and the rest are bred and raised and slaughtered. Some of it really sets me off. Getting your meat from nearby farms promising animals that are mostly pasture raised with humane, compassionate treatment is good in all ways possible, including your body and your soul. And mine needs all the help it can get. Sentinel opened in October 2015 and is run by owner and butcher Emily Peterson on River Street in downtown Troy. «Farm to Table» is lettered on the large front windows: all the meat is locally sourced, including Wagyu Beef from Royalton Farms, VT, and pasture raised chicken, pork and duck from Sun Catcher Farm(Feura Bush, NY). The store is bright and clean with a few grocery items to round out your purchases, including best quality local dairy products. The selection was conservative but well considered, including ground beef, lamb, and house made sausages. One of the boys talked me into buying Ghost Pepper Hot Italian Sausage, saying it wasn’t that hot, so I bought ONE, promising to return if it was, because I know where he works, and I will find him. I’m thinking this weekend I’ll use it to lace a puttanesca sauce. The store was busy on the Saturday that I visited(Farmers Market Day in the Atrium), with customers asking plenty of questions and carefully selecting their food.
