What is the first thing you think of when you go to a barbecue joint? Ribs!!! Don’t think about it when you go to the smokehouse before 5. When I tried to order a half slab at 345 the waitress told me they only serve ribs for dinner because they were still on the smoker. I know how long it takes to smoke ribs, no more than 5 hours. So if you need to hire a night cook do it. I had to order the Carolina chicken sandwich and my wife got the brisket sandwich. Lets start with my wife’s «brisket» sandwich. It looked like the roast beef you get in the tub from Aldi’s it was that shiny, tough, soggy, gray looking roast beef with no smoke ring or flavor to be found. My Carolina chicken did have good smoked flavor if you could get past the over– powering Carolina sauce. The sauce was basically a jar of Hines mustard that they tossed my chicken in and threw on a bun. We drive 30 miles to this place expecting great barbecue and found a bar serving bar food and passing it off as quality barbecue.
