Closed? I pulled up for lunch today and found an empty parking lot! I looked in the window to find the owner sitting there. He came to the door and explained the economy got him. I’m disappointed that I didn’t get to try it. I’m puzzled how one of the highest rated Q places in Wichita can’t stay open?

If you ever have a better brisket, then you are likely dead and dining in heaven.(But heaven would probably order take out from Bubba’s.) My wife and I came for the lunch buffet on a rainy Thursday afternoon. The layout was humble with brisket, hotlinks, ribs, pulled pork, mashed potatoes, beans and cole slaw. On the table Bubba presented two sauces, a sweet and mild savory. The brisket was outstanding! Soft and juicy with just enough seasoning to give it a distinct character. Too many bbq places overcook this cut until it falls apart and pass the crumbled overcook remains as tender. Bubba’s brisket maintains it’s integrity while delivery memorable texture and flavor we will come back for.

Nicely seasoned meats… we had pork, brisket, ribs, hot links. The stars were the brisket and the ribs… as they should be. The seasoning really brings the ribs along. They were cooked just right with a medium smoke flavor. Perhaps a little more fat than I like, but easy enough to work around. The brisket was sliced thin and was tender. The fat layer on top was easy to remove and the flavor of medium smoke was there. It also seemed as if the meat was injected with seasonings. This is a common competition BBQ practice now. The pork and links were minor players and nothing stood out to me. I only had one side… potato salad. They are heavy on the yellow mustard in their version. So you have been warned. I like it. You may not. There sauce had to have some liquid smoke. Smart move. I liked the hot version a lot. No worries. stick to the standards/classic here and you’ll be happy. Ribs and brisket.

Bubba’s, HAHA. I had their BBQ Buffet today. Well, they had short ribs, pull pork, chicken and turkey. sides were mashed potatoes and baked beans and white bread. Thats it thats all they had. The ribs and pulled pork were good as well as the baked beans, BUT come on, NO potato salad or cole slaw. Now that is just wrong. «WRONG» I tell ya. The service, not so friendly at all, sitting on their asses in the dining area on their laptops goofing. Asked for potato salad, they said rudely«We have it, but will have to charge extra for it». REALLY??? I really don’t think I will ever go back to Bubba’s. Poor additudes on BBQ.

Ehhhhh… Very average barbecue. Where to start? «Nekkid» wasn’t really the way to go for brisket as is was very dry and could have used the sauce. Ribs were somewhat lacking in flavor as well, though they were tender. I tried the slaw and beans for sides, not bad. The beans were the best thing I tried. The prices were very fair for the portion sizes offered.

Taking a 36 hour drive from Arizona to Michigan takes its toll on a man’s stomach… luckily thanks to all things wireless, my brother and I were able to search for BBQ places as we were heading into Wichita, KS. Since we weren’t wanting to venture too far off the 54, we decided to try Bubba’s. At first I was a bit let down because the place was empty, looked like a Subway and didn’t have that down home feeling and look that I expected a Kansas BBQ joint to look like… but first impressions are not everything. I ordered the sampler platter and being a huge fan of both dry and wet BBQ I had to have a bit of it all, along with a side of baked beans and coleslaw. The beans were amazing. absolutely some of the best I’ve ever had, sweet, and spicy just the right consistency and a beautiful color. The coleslaw however, I did not appreciate. Although I give it good props for being crisp and fresh and not overly wet… I found it a bit bland. The meat: pulled pork was awesome, just the right bite of smoke and melt in your mouth tender. The rib was falling off the bone, the turkey had a great aroma, and flavor, but was a bit dry. The brisket disappointed me as I found it tough. It had good flavor and was sliced perfectly against the grain and on a bias, but just didn’t fall apart the way it should. The BBQ sauces on the table: Chipotle BBQ sauce… I regret not buying a jar, perfect blend of sweetness and heat, along with the great smokiness that chipotle brings to the table! Did not try the sweet BBQ sauce, so I will not review! All in all, I would probably eat here again, but my ordering will be specific, and I would not go too far out of my way for it.

Living in California, it’s nearly impossible to find good BBQ. Bubba’s is a real treat: perfectly seasoned meats, perfectly cooked. The sauce, served on the side, accompanies and doesn’t overpower the meat. The beans: awesome, some of the best I’ve had. Coleslaw is equally fantastic — crisp and refreshing; the perfect antidote to the spicy, intense barbeque, not overly weighed down by mayonaise.

Was on a business trip in the area and decided to have some BBQ. Saw the recommendations online and thought I’d try it. The menu is short and sweet. Seems to do a lot of business as a take out place. Very well lit but sparce on the décor. Nice people working, but don’t give much direction to new-comers. It’s all good according to the girl taking my order. I had ribs and a hot link, and it was very good. The claim that you don’t need BBQ sauce was true. Ribs came right off the bone. It was delicious. I would recommed but mostly as a takeout only.

AMAZINGLY good BBQ for very little money. Their motto doesn’t lie, it’s meat too tasty to put sauce on(but they have some good BBQ sauce on the tables if you really must). Check it out and support great local food in Wichita!

One of the best things about coming to Kansas from Texas is that pulled pork is an assurance. Brisket can be a tricky thing for some pitmasters, and I’ve never cared for any sort of ribs, so pulled pork, sausage, burnt ends, and turkey are my favorites. Luckily, the first three are exactly what Bubba’s was offering when I visited on a Thursday night, and each was exceptional. The restaurant is named for the emphasis on the meat’s dry rub, and de-emphasis on sauce, which is how barbecue should be served. Indeed, the sauce was not required to enjoy the meat, which was a very good thing because I really don’t like the KC-style barbecue sauce. Bubba’s was as good as others I’ve had, but I really don’t care for the sweetness. The sausage was interesting — a little bit spicy, loosely packed, and almost a nonexistent casing, it seemed more like a bologna than a sausage, though the taste was still there. Much ado is made about the burnt ends, appropriately. I imagine the lack of brisket in Kansas barbecue means that burnt ends are not widely available in the area, so it’s no wonder they can go fast. I’m not sure when they’re available, so I would probably call ahead next time. Beans were nice, and I think I prefer them to PIPO because the sauce base isn’t as sweet. The potato salad was interesting, too — a mustard-based affair that contained as much potato as it did granny smith apples, providing a tart crunch that I didn’t mind at all. Between Pig In Pig Out and Bubba’s, 13th Street seems to be the go-to place for barbecue in Wichita.

BBQ places can certainly be inconsistent. I broke my Bubba’s experience into a three-act play to properly reflect the epic drama. Trip #1: What I got from Bubba’s today, my first time there, was inedible. Sliced brisket was dry as could be and had no bark at all – and, not surprisingly, pretty much no flavor; ribs were nicely meaty and not overcooked, but salty as all hell. The beans were outstanding, some of the best I’ve had. All in all, though, it was disturbingly bad. I missed out on the burnt ends… those are served a different day. But after this experience I don’t think I can go back and waste another $ 10.(I ended up stopping at Pig In Pig Out because I could not eat more of Bubba’s). On a second trip, for burnt ends: People, BUBBA’S SERVESTHEBESTBURNTENDSEVAH, like in all of the history of time immemorial– the dawn of cow, man, fire, even. They were blackened with pronounced and flavorful crusty bark, yet stunningly moist and melt-in-your-mouth tender. The sauce, which has a curious and not-quite-appealing taste on some of the other cuts, was absolutely perfect with the burnt ends, completely in harmony. I alternated between bites with and without sauce. I asked the server how long they had been smoked. «15 hours,» she said. Damn, that is RIGHT! I will be going back often, pretty much every Saturday I think, and must try to reconcile this gaping maw of variation between what I ate on my two trips so far… surely people who serve the kind of patient, gloriously inefficient perfection as their burnt ends must also be able to produce a decent piece of brisket, right? Surely. Trip #3: Out of burnt ends one night this week, I was forced, FORCED I tell you!, to try something else again. So I got the sampler plate. Well, I dunno what was up with Bubba that first time I went there, but this was really good across the board. The brisket was moist if not great; the ribs were better; and the pulled pork was a revelation. So there are the stars at Bubba’s: burnt ends and pulled pork and beans. The secret is that the burnt ends are cut first and prepared separately from the rest of the only-ok sliced brisket. Kinda too bad, but no matter… I’m sold. This is the best bbq in Wichita.

As BBQ places go in Wichita, Bubba’s nekked BBQ is unsurpassed. It’s like BBQ from those out of the way places that I so love up in Kansas City. I came across Bubba’s cause it was close to where I live and thought I’d give it try, and am I ever glad I did. We get a couple racks of the most excellent ribs when we’re having it for dinner. During the day when I stop in for lunch I like the Burnt ends(absolutely the best I’ve ever had) and the pulled pork which tastes like it’s been slow smoked for a very long time. Sitting here drooling just thinking about it. There may be some pretty good chain places around here, and even some good private ones, Bubba’s is up there with the best. The sides are unique and all delicious. Baked beans are wonderful and I adore the potato salad. Many times Bubba’s runs out, which is a little annoying. It happened to me a few times that I went to pick up some ribs and they were out. I solved that by just not going after a certain time. My loss if they were still dishing out. I missed it one to many times and decided it wasn’t worth the effort if they weren’t going to worry about it. On the occasions that I do have time to get there early, Lisel likes the sauce Bubba serves while I prefer mine… Nekked!

This is my current favorite BBQ place and it’s in my neck of the woods… just west of Riverside so it’s even more perfect. My boyfriend and I are hooked on the pulled pork and Bubba’s sauce is perfectly blended sweet, spicy, smoky Utopia!!! The prices are very reasonable and everything is always fresh. Baked beans & potato salad are very good, broccoli salad is a little inconsistent… one time it was fabulous the next time only so-so. The brisket and ribs are also quite tasty. Put this on your definitely must try list… you won’t be disappointed. Oh and BONUS… live music on occasion. I’m not sure if they post the dates or if its just random but the last time we went their was a one man band playing electric guitar, harmonica and some other unrecognizable instruments. Not sure who he was but he is a local musician I’ve seen before at Neighbors in the Twin Lakes area and also at Chelsea’s when I used to tend bar there. Good eats… and good vibrations… Bubba… you rock! Keep on doin what you’re doin!

I was driving around in the blowing and drifting snow, thinking about lunch today, when I decided to try Bubba’s BBQ, which I had driven past dozens of times. Because of the weather, they weren’t busy, so I placed my order(to go) and had my combo meal(pulled pork, baked beans, and a pop) in virtually seconds. The smell taunted me on the short drive home. The pulled pork, served on an oversized sesame-seed bun, was perhaps the best pulled pork I’ve ever had — tender, rich, smokey all-pig texture and flavor. It was almost a shame to put the zesty chipotle bbq sauce on half the sandwich… but I did. The beans were rich and smokey, with bits of meat in them. MAYBE a little sweet for my taste, but nicely spiced. I really need to get back there and try the ribs and brisket… but I want another pulled pork sandwich. It’s that good…

I had heard this place had just opened in April so I was excited to find a new BBQ place to try. My friend Laura and I went for lunch. It is very tasty meat indeed. This is a no frills BBQ joint with straight to the point meals. I had the Turkey and I enjoyed it thoroughly. I will be going back. They don’t have a lot of staff, so the line was at least six people deep when I got there, yet it did go quickly. Drinks are unlimited refills on soda which you serve yourself. They have a cute logo, shirts and hats. Neat mural in the restaurant itself. Totally casual place to eat. Bubba, you know your Q!
