Horrible! Ordered a full rack with two sides the ribs were dry and rubbery and the sides were microwaved and yes I watched the cook put the Mac and cheese and collard greens in the microwave. Never again!

Good collard greens, excellent mac and cheese, and gorgeous smoky ribs. What’s not to love? Another plus, you can pay with credit cards!

The ribs here are chewy alright. They have a good flavor, the ribs do, but they are chewy, not falling off the bone by any means. And a little too much fat for my tastes. The ribs were all I got. I don’t like a lot of the sides that most places serve so didn’t get any, none sounded good to me. And while the ribs did taste good, had a nice flavor, were really nice and charred(a compliment) there was just too much fat and the ribs were too tough for me to want to go back. Sorry but I used to get Jammin’ Joes ribs before they went out of business and his ribs WERE tender and lean.

Collard greens – Awesome! Potato salad – fantastic! Ribs are tasty, but for the price, I’ll continue to go to Famous Dave’s and get baby backs. The ribs at this place are chewy, but they do have a good flavor. I can’t wait to try their smoked chicken wings!

So there I was doing my weekend errands in Woodbridge and I saw the darndest thing — a food truck parked on the side of the road that says, «North Carolina BBQ»?! Double take!(then almost cause an accident, read again — and make U-turn). Attached to the truck was a fully engaged smoker trailer sportin’ a plume of porktastic aroma. When I parked in the lot, I saw that I wasn’t the only one ready to get myribs on. There are astream of regulars that frequent this truck every weekend and make it a normal part of their weekend routine. As I walked up to the window, I couldn’t ignore the mouth-watering fragrance emanating from that smoker and I salivated over the menu. Besides BBQ and pulled-pork, they also offers half-smokes, turkey legs and chicken wings. Scrumptious sides included the typical southern fare: collard greens, baked beans, string beans and mac & cheese please(which in the south is also considered a vegetable I’ll have you know). I ended up ordering the ribs/bbq combo for $ 15.00 and picked-up a side of collard greens to make my order $ 18.50. I had $ 20 in my pocket but guess what? The guy takes credit cards! So you don’t have to have cash to give Ribs on Wheels a try. The helpings are very generous and there was more than enough food for two adults and a child. The pulled pork had the distinct NC style of sweet vinegary twang to which I am familiar, but I found them a little dry to my liking. The ribs on the other hand were lip-smaking amazing. Whatever ingredients they put in their special secret BBQ rub, it’s a winner. The rack was cooked just right as the meat fell easily off the bone. These ribs include a smokey flavor that make them oh so good. I can see myself giving this truck five stars if not for the limited hours and I considered the food a little pricey(he’s only paying himself — there’s no overhead). Regardless of the drawbacks, give NC Ribs on Wheels a try if you are in the Prince William Parkway /Lake Ridge /Potomac Mills area of Woodbridge.
