My husband I spent a week in Cancun for our anniversary and while we loved the sun and the waves at our all inclusive resort, the food throughout the week was just okay(though we admit to being real food snobs). We treated ourselves on our last night to the tasting dinner at Tempo and it was the highlight of our trip. Each course was superb, the mixture of flavors and the molecular gastronomy techniques were surprising, creative and delicious. We were especially impressed with the wine pairings accompanying each course. Each wine was good on its own but really shone in combination with the food. The service was impeccable and friendly without being annoying, each course’s description was informative without being over the top. Our waiter Carlos was wonderful, knowledgeable and funny all at the same time. The pianist was wonderful and the ambiance was simple and elegant. I particularly loved the«liquid salad» course and the beet caviar. I was particularly impressed with how they made humble ingredients(beets, spinach, melon) the real star of several of the courses. If you like foams, papers, infusions, and tiny dots of sauces that are marvelously complex than this is the place for you. Great to have a little fine dining while in a touristy resort town.

Weird dress code! First time I wore crocs and the front desk said no because this is a 4-diamond restaurant. He then asked his supervisor to come and check, who then said my friend’s hoodies was unacceptable. We ended up going back to our hotel and changing our dresses. The receptionist then said our shoes(which were okay based on the previous two staffs) were unacceptable. He then checked with another manager. We waited for 10 minutes and the manager finally came and rudely said«sneakers are okay for you, but not here.» He then totally ignored us and kicked us out silently.

Read all the reviews here and decided to have a little splurge away from our all-inclusive resort. It’s hard to find as Unilocal nor its website tell you which resort it’s in, but we got there climbing 60 steps and all. Looked awesome and swanky so was excited to sit and have a little romantic dinner with hubby. Only, they jacked up the prices to have only 1 special«I’m screwing you over because it’s Valentine’s Day» tasting menu. We made reservations thru opentable and checked that they could email us at anytime about any thing so we were shocked that our only option for dinner was a $ 128US per person tasting menu that neither I nor hubby were too interested in eating. This was double the price listed on their website and all of the Unilocal reviews. They wouldn’t even let us split it or choose some of the options since I don’t care for liver and hubby dislikes the shellfish. So to that my friends, you suck and instead let us have dinner at Lorlenzos across our hotel for an amazing price and value.

My husband and I visited Tempo during our vacation and we are so happy that we did. When we arrived at Tempo, we were greeted with a glass of Chandon champagne. Initially, we were going to choose the a la cartel menu, but at ~900 pesos, we decided the tasting menu was the way to go. We decided to also select the wine pairing with our meal. Service was impeccable. Samuel and his crew did a great job of attending to our needs. Carlos, the sommelier, does a great job with the wine selection and pairings. My favorite dish on the menu was the low temperature prawns or the truffled egg yolk. Tempo is a must try for people who appreciate different techniques. The chef uses foam, gelee, dust, powder, etc. Dinner at Tempo is a great meal for the senses. Come hungry and leave full!

Maybe the best deal in Cancún. The tasting menu we had last week was fantastic. Chef definitely uses a lot of modern techniques, but to great effect, and not just for show. Perhaps my favorite touch was the tray of salts they bring out at the beginning. Each one is for a specific course, but we had fun trying to identify what each one was before the waiter told us as the course was presented.(I was 4/5, go me!) Our favorite dish was probably the first non-amuse bouche course, the Prawns at Low Temperature. It came out as a bunch of powders and foams and prawn bites. The waiter then poured over a coconut milk«gazpacho». After mixing it all up, it was simply divine. There were kalamata olive pearls that added a nice contrasting flavor to the prawns and coconut milk. The biggest miss was probably the very first amuse bouche that featured a doctored up peanut butter that kind of overpowered everything else. We saw the peanut butter later in a dessert were it was much better suited. This is definitely close to Michelin star quality food and service. I hope Chef Martin continues, and we will be dining here every time we’re in Cancún.

I understand that this is an upscale restaurant with dress code. However, my open toe shoes or sandals are just as upscale as a closed toe. I am in Cancun for leisure not work. For the amount of money guests are willing to pay, management should reconsider dress code for women or at least make it a subjective guideline. Otherwise, management is evidently losing profit here and I am happy to take my money elsewhere where I am welcomed.

Fabulous food and fabulous service. Definitely worth stepping outside the all-inclusive dinners to experience. The wine was perfectly paired with our lobster dinner and the service was top notch. We are food snobs who have dined all over and would highly recommend Tempo. It was the perfect, romantic birthday celebration we had in mind.

Your 5 star experience starts with a warm greeting from the lovely hostess. Before we were seated, a complimentary round of Möet Champagne was a lovely way to get dinner service started. For our dinner, we chose a few items from the regular menu. They also offer a tasting menu. EVERYTHING was delicious.

«Nights in white satin, Never reaching the end, Letters I’ve written, Never meaning to send» (Nights in White Satin — The Moody Blues) Maybe not white satin, but there were plenty of white dinner jackets and white gloves on the waitstaff who lavished service on us for all 2 hours of our ten course tasting dinner to culminate our vacation in beautiful Cancun. We saw a team of five waiters decked out in white, and every time we were served a new course three guys took care of us, each one carrying a plate to the three members of our party. It was sensational service, which was appropriate for this beautiful and sensational restaurant. What was very cool, was that every time a course came out, we were treated to a little description of what the dish was, what its components parts were, and the chef’s recommended way to eat it. And at the end of the evening, the Chef came out, shook our hands and thanked us for our business. Tempo is not included with the«All Inclusive» cost at Paradisus. It offers a la carte choices and two variations of the tasting menu. The tasting menu feast was offered with or without wine pairings for $ 709 Mexican pesos or $ 45US and $ 1297 Mexican pesos or $ 83 with the wine pairings. Each course is served with a small course of a different bread. So what did we have? I’ll let the eloquent menu answer that one. Snack Appetizer Organic Egg At Low Temperature, With Mellow Chick Pea Juice And Soft Crumbs Fennel Pearls In A Creamy Emulsified Risotto Pickled Mushroom Salad, With Quail And Foie Gras Cream On A Gelatinized Iberian Stock Grilled White Tuna With Mango And Capers On Soy Sauce Accompanied With Celery Salad Beef Tenderloin Accompanied With Swiss Chard Chlorophyll Camembert Cheese Bonbons And Iberian Ham Sauce Frozen Celery With Mango, Beet And Fruit Compote Chocolate Soufflé With Caramel And Cinnamon Ice Cream Petit –Fours So how was it? It was magnificent, every bite and every morsel. Even something as sketchy sounding as a low temperature egg with chick pea juice– that was decadently creamy, luxurious, and delicious. The main courses of tuna and beef were ridiculously good. The three desserts were a great way to finish things off. That chocolate soufflé with cinnamon ice cream should be a controlled substance. Combine the welcome from the gorgeous hostess, the beautiful interior, the excellence and professionalism of the waitstaff, the long stemmed rose given to me to present to my wife, and the great food with spectacular wines, and you have a memorable experience that we will remember for a long time. Adiós, Cancun. Nos lo pasamos muy bien.

Wow! I must be one of the most picky diners around… I travel all the time for work to different cities and check out Unilocal for the best dining experiences. This place is one of the best restaurants I have ever been to. If I had this meal for $ 250 at Alinea, I would not have been disappointed and think all this for US$ 50(+$ 30 for wine pairings). Beautiful atmosphere(no view so could be anywhere) and great service. Items were creative, inventive, and very unique to other restaurants with tasting menus. If I lived nearby I would come back here every time the tasting menu changes.

We came here for dinner on a Monday night during our 4 day stay. We had a 5 course meal with a bottle of wine. Our total meal cost about $ 200. Each dish was delicious and different. It reminded me of food that I would order at a nice restaurant back home. Service was absolutely lovely. The best we have had in a really long time. But the bottles of wine were a bit much. The«sommelier» wasn’t much of a help and it felt like the wines were a bit more overpriced than usual since the wine cost as much as our meal. Overall, I would come back again. It is truly a fine dining restaurant within the Paradisus.

A little about me: I am a foodie, a true food snob, a Michelin star fanatic who rarely eats anywhere that does not offer a Chef’s tasting menu consisting of impeccable small portions cooked to perfection to amuse my taste buds. I have eaten at some of the world’s best restaurants like Eleven Madison Park, Le Bernadin, Guy Savvoy, Victoria and Albert’s, Jean Georges, etc. I am no stranger to fine dining, in fact I crave it, live it, eat it and breathe it often. With that in mind… Everything in this restaurant was perfect — except that they had our reservations for 2 when we had made it for 8, but that was not a problem — they quickly prepared our table for 8. The staff is warm and welcoming yet precise and meticulous. The somm is truly great — his wine recommendations were on point and formidable, excellent additions to our dishes. You have a choice between a la carte and tasting menu, and the whole table does not have to agree on that choice. If you have food allergies or restrictions they do their best to accommodate even with the tasting menu option and they coordinate the service like a ballet to allow everyone to feel comfortable while waiting for the ones doing the tasting menu to eat their additional dishes. Several extra dishes, amuse bouches, are served in the beginning, middle and end of the meal. The restaurant is located inside of Hotel Paradisus. White linens and white décor set the mood of a white canvas to an amazing array of colorful, perfectly crafted dishes to die for. Everything tasted incredible and fresh, I can guarantee there is no better restaurant in Cancun and this is probable one of the three best in all of Mexico. The flower at the end given to the men to give to the women adds a very romantic touch. I would certainly make sure to return if I return to Cancun.

Ahhhh tasting menus. You get dressed up(at least you should a little) and prepare to have your taste buds dance for 2 – 3 hours. We had a hard time getting into Tempo which just hyped it up even more. There were so many awesome tastes that happened that night! My personal favorite was the salad and the tuna steak. The wine pairing is a must! Great wines that they picked. The chef came out and thanked us for coming. He even sent us an extra dish compliments of him because he had heard we hadn’t been able to get in for the past few days. What a nice touch! I just had a couple problems. 1-way too much salt! Our waiter warned us it might be salty(that’s never a good sign) so when it got much too salty for me at the tuna course, I asked to switch to low sodium. He said of course! I’ll bring the salt on the side just in case you need it. Which I didn’t because still the following courses were basically dipped in a salt bowl. I took my knife and removed at least the top layer of salt of my beef tenderloin and could again taste the food. My only other problem-while our waiter was doting and attentive, whenever he would explain what our dish was he would only speak towards my dad, and so the 2 of us gals at the table couldn’t hear him. So most of the time I didn’t know what we were eating. What a bummer. I’ve done the tasting meals at other paradisus resorts and they are absolutely 5 star! I have to give this one a 4 for the salt explosion though.

We had the 10 course tasting menu. First thing is that I have to give it 5+ stars for the superb service! Waiters & staff are very knowledgable However, due to some of the dishes being a little off. .. The food is only a 3.5 stars. We’ve been to San Sebastián & were looking forward to a tasty meal here in Cancun. The two dishes that did not agree with my palate was the oysters appetizer & the fennel foam risotto. I felt that the oysters were not as fresh & were too salty/briny/fishy. I usually love oysters everywhere so I was sad that I was not able to fully enjoy this dish. As for the fennel foam risotto. .. I thought there would actually be some grains in the risotto! But I guess the chef & I had different interpretations of what it should be. The foam fennel was just not enough substance to be a full dish. The other dishes in the menu were great & dessert was really the best part of the meal. Would I re comes this to others? Yes, it’s a wonderful experience. I would just go back for the wine & service alone

We enjoyed a 4 course tasting menu as part of a company vacation. It featured interesting combinations including beet foam, soy sauce soaked melon, and the best tuna I’ve ever had. Everything was fresh and flavorful. There was not one unremarkable dish. The white tablecloth atmosphere is clean and attractive, but not remarkable, probably so as to not be distracting from the dining experience. The experience is focused on the food which is expertly plated. Service was outstanding. The sommelier was particularly warm and personable. The waitstaff was very responsive and spirited. They laughed and played along with my game of using my water glass to cover the black food stain that I created on the white table cloth.

Had amazing meal here. One of the best meals I’ve ever had. Was so much better than fancy restaurants in nyc which costs 5times more than this place. Ambiance wise nothing extra ordinary but food is absolutely amazing. They were not overly sauced so could taste fresh ingredient. Must try if you go to Cancun.

To celebrate my girlfriend’s 30th birthday, we picked the top rate from TripAdvisor and Tempo definitely met our expectations. We chose the tasting menu with the wine pairings. Miguel was our waiter and did a spectacular job. Each dish was beautiful visually. Our favorite dishes included those with fish and later the chocolate lava cake. Some of the food was a little salty but not overwhelmingly so. They were able to present an extra dish with a candle for my girlfriend, which was very sweet. The chef came by also to make sure we were happy. Great ambiance, service and a very comprehensive gastronomic experience.

So 1– it was the best match of wine to food I have experienced; 2– every course was memorable; and 3 — The service was perfect. My last tasting menu experience was Daniel in NYC and it was a good one but not as great as this pleasant surprise in Cancun. Congratulations to the staff and especially the Sommelier.

This restaurant should have a Michelin rating. One of the best meals of my life 10 courses with 6 wine pairing. It was a 3 hour dinner that was OUTSTANDING. Ignacio was our waiter., and each course was explained in great detail. This wasn’t just a delicious dinner, it was a foodie experience. Pricey but worth it..

In a place like this you have to go for the tasting menu, my husband and I did and it was absolutely amazing! Everybody treated us like rock stars, our server Raul explained every course with detail and excitement. The manager Fares checked in with us constantly to make sure everything was perfect. The sommelier Carlos not only gave us paring options for the menu but offered to take us a few pictures in the wine room. They found out we were celebrating our honeymoon and gave us a surprise desert! If you are staying at the Paradisus you can’t miss having this culinary experience, is definitely not just a dinner.
