The Piemaker

Pies are a Scottish, well, I wouldn’t say national dish or gourmet treasure… but they’re Scottish as haggis, Greyfriar’s Bobby and 90 consecutive days of rain. Oh and whisky. So yeah, basically pies are like whisky (does that sell them to you?)
Scottish pies are different to normal pies as well. They’re thin crust, with a flat top, and goooood. So good. My childhood memories largely revolve around the once-​every-​few-​weeks dinner we’d get from the local butcher with both a macaroni cheese pie and Scotch pie (which is very heavily peppered mince with no gravy).
If the words «macaroni cheese pie» make you confused, repulsed, intrigued or all of the above, you have yet to live in a carb-​based way, my friend (although don’t even think about suggesting a lasagna pie to me, god no).
So, now you know that pies are good, and Scottish-​style pies are exceptionally good, you’ll understand why the Piemaker are so well-​loved in Edinburgh. Their original branch is on the South side, on Nicholson Street. And they opened this newer branch in 2013. And they still serve up equally delicious pies.
Sadly quite a few places do pies that aren’t good. If your first macaroni pie was from a place that begins with G and sounds like «dregs» then please, don’t base your opinion or love /​distate of macaroni pies on that experience. Wipe it from your memory and go to the Piemaker instead, then see what you think.
Highly recommend on a cold winter /​autumn /​spring /​summer day, when you’re wrapped up, and eating it on the street in a brown paper bag as you go.
