Baxter’s was our first stop on our trailer tour of S. Congress today and it was a great start.
I had the Quesadilla with 4 cheeses and organic locally grown roasted squash. It was 1 flour tortilla folded over and grilled to order with the yummy melted goodness inside. At only 2.50 it was the perfect size and price to allow for more sampling.
My friend had the Veggie Burrito (5.50 and huge) stuffed with black beans, cheese, rice, roasted organic veggies, lettuce, tomato, pico and guacamole.
Of all the trailers on S. Congress Baxter’s is by far the most reasonably priced. Next time I want to walk away full I will definitely go with the Veggie Burrito.
