This place is pretty rad! It is invite only, but if you make friends with some of the Brewers or bartenders at H&G, you may get lucky enough to snag an invite. The food tastes good, which is a plus, but the atmosphere is where it’s at. Whether it’s chili or sausages, the chef is working to make the food, every couple of months. I find that chewing the food really makes the flavors explode with«Fitz’s» food. Some foods, like pudding, you can swallow and miss all the intricacies, but not at the palace! Also, all the food is locally sourced from within a block, which is a huge plus(we DO live in austin). It’s super easy to find on the Car2go app, which is a big plus when I’m trying to find restaraunts on my Car2go app! Also, the place is small, but the flavors exist, in both time and space. As an amateur physicist, that’s important in a culinary environment. This is one of the few chefs in Austin… Scratch that, AMERICA, that understands that we’re all just holograms. #lifewhy

Fitz’s Hot Sausage Palace is perhaps the most exclusive restaurant in Austin. Where people wait for hours to get a taste of Aaron Franklin’s brisket, there are some that have waited for weeks in order to try Fitz’s Hot Sausages. WEEKS. The man knows how to work a grill and the menu changes all the time. And unlimited chips? SIGNMEUP! If you are fortunate enough to try Fitz’s Hot Sausage Palace, make sure you know that seating is extremely limited so get their early and stay late.
