When I arrived at the intersection of 26th and Rio Grande, I surveyed my options among the plethora of food trailers and made a narrow mental list of possible candidates worthy of my palate and pocket money, Ham It Up TX was not a final contender. I was debating between Wunder Waffle and Thai of the Town, when my friend indicated that Ham It Up TX had a pulled-pork sandwich combo for only $ 7. Immediately the price captured my attention. Wunder Waffle’s chicken and waffle special was $ 8, and the surrounding trailers had similar if not higher prices for an entrée alone. I was intrigued by the price($ 7 flat, cash or credit) and the quantity, pulled-pork sandwich + drink + bag of chips, so I decided to give it a try. Simply put. BESTDECISIONEVER! First thing that needs to be said, the man staffing the trailer was very kind. Secondly, I didn’t have to wait more than 5 minutes for my sandwich, which was made fresh in the trailer’s kitchen. Of course you really want to know about taste? It was delicious. The pulled pork was so soft and tender. The barbecue sauce, unlike some competitors, didn’t drench the sandwich.(It’s annoying when a sandwich is drippy and the sauce is leaking out the bottom and all over your fingers, this was not the case.) There was just enough sauce to keep the sandwich moist and flavorful. It was of a reasonable size, similar to your basic homemade sandwich. There was a varied enough assortment of chips(Frito’s, Cheetos, Doritos, BBQ Lays…) and beverages(water, Dr. Pepper, Coke, Sprite…). The trailer itself wasn’t aesthetically unique or eye-catching. It was white with a large pig face painted at its front. From the look of it, I assumed this trailer was another«bacon fanatic» venue. As much as one can love bacon, bacon-crazed food venues aren’t my thing. For visual reasons alone, I wrote-off this trailer at first glance. Now that I have tried the food, at such a great price, I will be coming here again!

Ordered a bacon cheeseburger combo for cheap! There’s a pretty good waiting time, but you realize why the deliciousness took so long after the first bite!

Definitely a full five stars for this little place! I ordered the pulled pork sammy and it was delicious – nicely cooked meat(and plenty of it!) and tasty sauce. Also got the blueberry cream pie for dessert and it was equally tasty(I hear they also have a peanut butter pie which I will have to try next time). Reasonable prices and very friendly service as well, something that is pretty hard to come by in West Campus. I will definitely be back for more!

Often, trailers that center around the inglorious bastard swine, bacon, or pig offals seem to either overdo it or underperform; see bacon sandwiches that underwhelm or pretty amazing BBQ trailers that smoke up some mean ribs. Think about it. Why would you NOT run an eatery around the creature that so tears up our wonderful Texas land? Asian countries would kill for the availability that we Americans have to shoot hogs for fun and let them sit, without eating their meat. Don’t you know that swine have the best feed-per-meat ratio? Additionally, we don’t even have to feed them. The wild guys run amuck and eat whatever they want. Except humans. This new guy on the block, curing its own ham and slapping it in between some sourdough for a simple, but handcrafted«ham and cheese» offers up much in the way of unclean animal. For lunch, the aforementioned staple or perhaps the pulled pork would be great. A note on various barbecue sauces around the world, in regards to the pulled pork sammich. Generally speaking, sauces are far too on the vinegar said or perhaps on the sticky/sweet side. Here, they counter the overly sweet notes with a nice complex flavor, creating one of the few sweet sauces that I can actually tolerate. The pork flavor was a little lost, unfortunately. I gotta return in due time to get one of their killer-looking biscuits, chock full of great goodies, including, yes, you guessed it, more pork parts.
