I ordered breakfast pastries and mini blueberry lavender pies for a work function and both were a huge hit, even with the picky eaters!

Just had the BBQ tempeh taco at the Sunset Valley tent location. We started eating it on the car ride home, and I was ready to turn around for another one! Best vegan taco I’ve ever had. We’ll be back, for sure.

I look forward to Wednesdays at the Triangle SFC Farmers Market just for Happy Vegan! All the items are delicious but my favorite is the Kale Chickun Salad. The taste is out of this world!

I’ll attend the farmers market at the Triangle JUST for these guys. The gluten-free cupcakes are hands down the BEST cupcakes I’ve ever ordered from a bakery. They blow Hey Cupcake right out of the water. They are moist and stay together well, despite being GF, and have seriously delicious flavors. The chocolate mint is one of my favorites, along with the lemon and coconut(and I don’t even really like coconut!) They are also extremely reasonably priced. The big cupcakes are a few bucks and I believe the mini cupcakes are just $ 1. I couldn’t believe this considering that they were vegan, GF and SO tasty. And the guy who’s always at the farmer’s market booth is so frickin sweet and helpful. I recently tried the lentil shepherd’s pie based on several recommendations and damn. It was good. And only $ 3!!! I’m not vegan, nor do I have a total gluten-free diet, but these are my favorite cupcakes in all of Austin. I will have to start hitting up local coffee shops around town, because I cannot wait for Wednesday to roll around to get my fix.

Favorites in this order: Choco Mint Sammie-4.4 stars. Two chocolate cookies held together with a mint cream. Consistency of the crust of a brownie, not too sweet, the perfect amount of chocolate, and creamy minty center. Would buy again. Oatmeal Cookie Sammich-4.3 stars. Soft oatmeal cookies held together with a crème center. Recommended. Ginger Snap Maple Sammich-At least that’s what I think this was. 4.3 stars. Tasty, loved the maple center. Recommended when your feeling like fun flavors.

Their Mac ‘n’ Cheese and Chick’n Salad are just to die for. My favorite is the Chick’n Salad, which is a cold Kale Chickpea salad, with some amazing mustardy seasonings thrown in and a creamy texture. My stomach is growling just thinking about it. And I’m not vegan either. Their vegan tacos are great, too. Happy Vegan comes to Texas VegFest every year, so if you’re there, snag their combo plate of Mac ‘n’ Cheese, Chick’n Salad and vegan Shepherd’s Pie hot and fresh. As far as I know, that is the only place they will serve their food fresh. Man do I wish they had a storefront. I’ve only seen them two places: the Farmers’ Market on 4th and Guadalupe on Saturdays, and Texas VegFest. I’ve gone to the Farmers’ Market just for the Chick’n Salad alone. But go early or else they will be sold out…

Oh my gosh the Happy Vegan Baker Vegan Mac&Cheese is amazing! I just bought some at Bennu Coffee and it was such a delicious experience in my mouth! I am lactose intolerant so I miss cheesy foods, like Mac & Cheese, like crazy! So as you can imagine, this was a real treat! Get some of this! I hope they keep selling this product at Bennu, and hopefully at Monkey Nest soon, which is right around the corner from my house!

Went to VegFest this weekend. I looked for Arlo’s food truck, but never saw them. Sad face. Walked around, made fun of vegans, then saw Happy Vegan Baker’s booth. They offered up some treats and sweet stuff, but I don’t like sugar. So, I ordered some Smokey Chili with cilantro pesto and Mac & Cheese with cornbread. Crap! It was good. The cilantro pesto was good enough to drink from a bucket. Or a Cilantro Pesto keg stand. Yes.

I buy Happy Vegan’s cupcakes at the coffee shop Bennu on a regular basis. I’m pretty sure they are gluten free as well as being vegan, though you’d never know it. They are really good, and somewhat addictive. I think I’m going to have one now.
