This place definitely has potential. I’ve been to Cuernataco three times so far and had a pork burrito, quesadilla and breakfast tacos. Everything has been good, but the chorizo breakfast tacos are awesome, much better than the egg dominated tacos at 263. Green sauce is good too. I spoke to the owner and he has owned a couple restaurants in Mexico and it shows in the food. Ingredients seem fresh and food is more and authentic than tex-mex. In my conversation with the owner he mentioned that this is a soft opening and he plans to reopen with a more comprehensive menu… hopefully with tacos. I didn’t give five stars for a couple reasons. First the hours are 7:30 to 6:00. The 7:30 start makes it hard to grab a taco before work. Also, I stopped at 5:45pm the other day and it was already closed. Hopefully this food truck makes it. Great to have another option in the neighborhood.

The wife unit stopped buy on Monday to try the lunch burrito. She selected a carne asada and a green chili pork. I tried the green chili pork and it was very satisfying. Well seasoned pork, rice, beans, and cheese. The burrito weighed in at 15.3 ounces for $ 6, a great value, for us 2 meals. Did not try the carne asada.
