My friend Bob invited me along to try a meal prepared by Chef Ysaguirre of Red Wattle. The Red Wattle is currently in the process of establishing a permanent location. The meal was served communally with about 10 – 15 other people there and featured wild game from Broken Arrow Ranch. There were numerous courses which were all stunningly delicious. My favorite was the succulent fried quail with collard greens, yams, and kumquats. People were fighting to get the last pieces of fried quail. Also the boar shoulder with grits, cabbage, and pancetta was fantastic-the meat fell off the bone and blew comparable pork shoulder out of the water. Definitely worth making an effort to try this place in the future. Other noteworthy dishes from the night: boar spare ribs with blackeyed peas and pickled carrots; roasted beets, grapefruit, and crème fraîche; house made charcuterie, jam, mustard, and pickles.
