While the bean selection is significantly improved for what one can expect from Whatcom County, for what this place gains in mystique & coffee selection it loses in temperature, wait times, and ambience. Literally– cold coffee, almost always? Why? Since there’s only one employee at a time and very little equipment the wait time is a bit long-even for a pour over w/lecture on origin. Also seems to be owner by Faithlife, local Christian Bible software company. I dunno, weird. Wary of all Christian coffee shops in this town, personally.

Yes, I have had a life long love affair with coffee. From truck stops to bistros. Onyx treats their coffee and patrons with respect. The coffees on offer are unusual and the preparation is impeccable. This really is THE place to experience a true tasting. The staff is fully informed about the coffees they serve. They know the growing region, the farm, the way the bean is processed and exactly how to prepare the perfect cup. From a single cup to a flight of three coffees, perfection. Onyx is worth the trip on any Saturday.

My Ranking of #3 of the top Three Coffee Shops in Bellingham is Onyx Coffee Bar. Onyx is serious about coffee. They serve delicious coffee by the carafe and offering whole bean by the gram from the finest roasters in the world. If you are ever walking around Farmers Market on Saturday, and want a great Brew form some of the worlds Finest Roasters and Growers, then take a walk to the End Railroad. 1015 Railroad Ave, Bellingham, WA. The experience is terrific to say the least. Seth, the local Barista can walk you through the where and hows of the coffee bean. He is a Plethora of Coffee Knowledge, and if you listen you will leave with more knowledge about the Coffee bean than you ever thought possible. Onyx is truly a must experience. This isn’t so much a café or coffee shop. Onyx is really a little coffee schoolhouse. Suppliers of green coffee to the most discerning roasters on the North American west coast, from Ritual in San Francisco to Crema & Revolver here in Vancouver. These guys are really all about the bean, they’re the Haute couture of coffee. They are serious, friendly, down to earth,(pardon the pun) and true entrepreneurs. Stop in on a Saturday morning to learn about coffee origins, roasting and brewing methods and then sample some of the current best with a pour-over. Don’t come in expecting a latte or a cappuccino as they don’t have an espresso machine. Also available are some quality brewing apparatus. Cool and sublime, this educational space is truly one of a kind.

Coffee lovers absolutely must visit Onyx for a tour de force tasting experience. Many single-origin coffees from roasters across the PNW reflect a discerning selection and appreciation for fine coffee. Bellingham has the ability to surprise and Onyx delivers a delightful tasting experience. Coffees here are a milder-roast variety and they don’t serve espresso. While my preference is for a darker-espresso roast, having a mild roasted bean can provide a range of interesting flavors unique to the bean and region in which it was grown. I tried two varieties, one from Guatemala and the other from Tanzania. I got two distinctly different coffee tastes with a range of nutty, earthy, and fruity hints. Coffee is so much fun and it was nice to try something completely different from my daily dark-roast espresso kick(s). If you’re driving to Onyx, be warned parking can be a pain(it’s located around a lot of construction sites, when I visited). The shop is small and cozy, but it may not be a great hang-out if it’s busy(if there’s more than 6 customers there). Everything is aesthetically and literally tasteful and the macaroons were a particular treat.
