After wandering thought the Public Market, I decided to order the chicken phở soup from Noodle Lab. The woman working at the counter was very friendly and answered my questions about the dish. I noticed the lady serving me was measuring and weighing everything she put into my soup, including the noodles and chicken. Once I got my bowl, I did notice the amount of rice noodles I was given was pretty skimpy, and even the size of the container was small for the $ 8 I had paid. The flavor was spot on, and I enjoyed the slightly salty flavor of the broth. I’d say it was enjoyable but it seemed to be a bit skimpy on the amount you are given.

I tried the pork wonton soup and it was pretty good! The wontons were fresh and noodles were good along with the broth. I haven’t tried anything else yet but I will consider. I just feel that it $ 8 is a little overpriced for what you are getting. I can justify the soup $ 7.00 because the bowl was bigger than the portion. I believe that they could generate more traffics with small and larger bowls. The noodle lab and the public market was dead. With the cold weather, there is nothing better than having soup! Get some snowy specials for a lower price and the place will be swarmed.

I’ve had Noodle Lab’s chicken curry udon, Dan Dan noodles, and phở ga. All were delicious, made with care, fresh, and satisfying. It would be nice to have one or two more choices, but their capacity appears limited by their small kitchen. Regardless, their food has been consistently great. Highly recommended.

I came on their Shoyu Udon day and it was delicious. Super friendly, quick service. $ 8 for a decent portion. Yes, they only have one menu item per day, but they are a small shop, give em’ a break, guys. It was hot and delicious. I will return.

I was so excited to try this place, but it was a disappointment. Today’s special was Phở Ga — chicken noodle soup. When I arrived they didn’t have any noodles ready, but I really wanted to try the food so I waited 10 minutes. The soup was ok, but the chicken seemed like it was precooked/packaged and I ended up throwing it away half way through.

This is a great experimental ramen booth in the middle of the Boston Public Market. I’m in Boston once a week for work, and 2 out of the last 3 weeks I’ve decided to eat here. Relative to everything else in the market — and in the Financial District/North End part of Boston — $ 7.99 for a ramen lunch is a GREAT value. I’m used to paying $ 10 – 11 elsewhere for ramen that isn’t nearly as good. The fact that they only offer one type of ramen a day makes the ordering process super easy. ‘I’ll have… the only ramen you’re offering today, please!’ It’s a small booth in a larger market, so be prepared to wait to order(especially as word gets out), and then hopelessly look for a table to sit at while you eat.

When I first read the description for this spot on the Boston Public Market website(advertised as a spot for authentic yet unique handmade ramen and noodles), I was excited to try it out. Unlike the experience of other reviewers, service for me was quick — I almost instantly received my bowl of that day’s special, curry udon. However, the meal itself was extremely disappointing. I paid over $ 8 for a small bowl of cheap udon noodles, lukewarm oily broth(touted as curry, but not at all spicy — and I think the reason why the service was so quick was because it was sitting out for a while), a single spear of asparagus, a single thin slice of overcooked pork, and half a hard-boiled egg. Overall, I would not recommend this spot and will likely not be going back. I feel like, for a similar(or even lower) price point, there are many superior spots for ramen in Boston where you get much more for your money.

I was so excited for this place, and then my dreams and hopes were shattered as soon as I physically arrived at this. well, words can’t really describe. This place touts itself as a trendy noodles place, specializing in ramen and shanghai soup noodles when I first read about them during the buzz of the grand opening of the Boston Public Market. Well, that MAY be the case. yet I never got to try the noodles they«specialize» in. The reason? Because this place, my friends, is literally a stall, and one of the SMALLEST in Boston Public Market. If you’re selling food ready to eat… and you’re smaller than the ice cream place, the donut place, hell, even the wine jelly stall right next to you, there’s something wrong here. Because of the small capacity of this place, they can only offer one noodle dish at a time — and the day we came, they only had udon. Yes, you heard me. One. Dish. Hence, no menu, so don’t bother looking. Now, I COULD be okay with this type of business strategy. IF they utilized social media better. This place has no official website, and only an instagram account, which has been rarely used. That’s it. Come on. If you’re only able to offer one dish each day, then you need to use social media to tell everyone what is even being offered — that means create a facebook/twitter page! Second qualm — the actual food quality and time. It sucks. We of course got the udon, as we were starving by the time we arrived and was dead set on trying some ramen. I begrudgingly forgave them for not having ramen and got the udon, hoping at least it would be delicious. It wasn’t. I make udon at home better than here, and that’s saying something as I’m a horrid home cook. The udon they used was the dry-pack type, so it’s more instant than the fresher ones where you have to freeze. The soup base was plain, and the toppings were sparse and underwhelming considering I paid $ 8 for a small bowl that I had to wait about 10 minutes for(again, small capacity, so they can’t make too much at once). I think they have a few kinks to work out in terms of their strategy and menu, so until then, I’ll be staying away from this place whenever I visit the Boston Public Market.

Ok. So the product is kick ass. The noodles are cooked just right, the broth is phenomenal in that it is not a big salt lick/it has a perfect balance of flavors, and the add ins fantastically complement the basics. It’s delicious, super fresh and served piping hot. The downfall is that this is a tiny 2 person operation – the woman owner cooking and 1 cashier — in an incredibly busy location. I am not exaggerating when I tell you I was about 6th in line and waited over 20 minutes to place the order. And I say«the order» because they only serve one type a day. Wasn’t really an issue because id rather they have 1 awesome ramen then 10 mediocre but be prepared to get what they chose for the day. But coming here for lunch during the work week might prove impossible. Anyhoo, the ramen is awesome, the slowness of service blows. I recommend trying them because it is a high quality dish, but I’d suggest you go after the lunch rush if you don’t wish to risk your job for the ramen.

(in Boston Public Market) I have been dying for a ramen place in the Gov’t Center /Downtown area and boom Noodle Lab opens! It is only the 2nd day so my 3 stars could change. Today, they had the Shoyu Ramen for $ 7.99(ramen noodles, 2 slices of fish cake and 2 pieces of pork). Comes out to $ 8.55 after taxes. The noodles were really good with its soft yet not mushy texture and there was a good portion in the bowl. The broth is just right. Not overly salty. I just wish there was a bit more. The pork was the only big downfall. It was overcooked. If it was more tender and not dry, I would want more than 2 pieces. At least 3. Overall, it’s not bad if you have a ramen craving. I would definitely give them another go. If I could make any suggestions, I would probably replace the spoon with the bigger plastic soup spoons(since it is hard to drink the broth with a dinky spoon) and definitely perfect the protein. Not sure if there was an option to add more protein. Again, it is only their 2nd day so I am sure they are working out some of the kinks. P. S. They take card. You can’t sit down here. It is just a stand.
