I took the tacos, tacos, tacos class with Casey and it was great. There were a bunch of no-shows so we had a really small class and a lot of personalized attention. As a bonus, I learned how to use the pressure-cooker that has been sitting in the closet that I got for my wedding. So THAT’S how you use that thing. We made 3 kinds of fillings, 2 salsas and 2 coleslaws. I am especially excited to make the tomatillo salsa again. I had no idea that it would be so easy. I have another gift certificate for a class with Casey and I can’t wait to learn something else new.

Took the sauce class here and it was great fun! Chef Casey is an excellent teacher. I will definitely be back for some more classes! The location is great, just a few steps from 11th& Pearl downtown. Parking was kind of a hassle — that would be one thing that would deter me. However, parking in downtown Boulder is relatively inexpensive(at least compared to Austin) and was about $ 4 in one of the public garages. The cooking area was smaller than the space at the Culinary School of the Rockies, but classes are also smaller and less expensive so it’s not much different. The kitchen seems to be missing some tools, but had others. I also learned that I’ve been using my lemon juicer wrong from three years. Thanks to Chef Casey for the lesson and the recipes!
