Oh no — no no no! Okay here goes — Mistake #1 — We decided to have dinner here — we usually only come for a drink and the guac. Mistake #2 — We waited over 20 minutes for someone to take our order. And that was after asking two different servers if they could take our drink order. Mistake #3 — We went yesterday — May 5. Yep — Cinco de Mayo When we finally placed our order — House Margarita w/table side guacamole — Another 10 minutes before it arrived. Margarita was good — it’s not from a mix so it’s a bit pricey but if you go during happy hour I think it’s ½ off. I know the appetizers are ½ off — that is why we order the guac — normally it’s $ 10. The guac is made at your table and is really delicious. Too bad they don’t have decent chips to go with it, For dinner — hubby got the green chili stuffed burrito and I got the Baja fish tacos. Holy crap — the tacos were HORRIBLE! No flavor at all. Even squeezing the lemon(yep — not lime) didn’t help. There was so much freakin’ batter to get thru to the fish — eh — yuk. Hubby? The green chili was too salty — but he ate it. I don’t normally complain to staff — but our server did ask how it was and I had to be honest. He comped my dish. Had we done what we normally do — Happy Hour drinks and guac only — it would have been a relatively decent experience.

We used to come frequently and it was decent food. Something has changed. We sent back a margarita because it was happy hour and watered down. Ordered chicken enchiladas and the chicken was rubbery. The sauce was bland and gelatinous. Salsa was in desperate need of flavor. What has happened?

Good lunch specials. I grade Mexican restaurants on beans and rice. If they can nail the beans and rice the rest is usually pretty good. Their beans and rice are good along with everything else I have tried.

Where does one start with this place. From top to bottom it sucks. Service is deplorable, you’ll be lucky to be greeted in 10 minutes, then the drinks will take another 15 minutes. Generally the server has to make all the drinks themselves, I assume the bartender is passed out under the bar somewhere. From there on, if you don’t waive them down, you’ll get nothing else. Food, it’s horrible and I don’t know if it’s supposed to be Mexican, tex-mex, or somewhere in between. It’s flavorless, and the menu offers an odd selection of entrée’s that keep you guessing. Stick with the chips, and pray they aren’t stale. Finally, brush up on your Spanish lessons, you’ll need it. Most of the employees have apparently decided that English is tedious and shouldn’t be used.

Very mixed experience. The chips and salsa were good but the quesadilla was not. How do you mess up a chicken quesadilla? I think it was a very poor quality cheese. I left half of it on the plate. The Carlos Miguels in Highlands Ranch is much better. Skip this place and enjoy dinner elsewhere.

I agree with some of the above comments., and disagree with some others. I thought the food was mediocre, def not bad. Way to expensive for the flavor, and items, and freshness. I love Mexican Food but in this area of Castle Rock, every Mexican place we’ve been to is either much to expensive for what you get or just bad Tex Mex. Margaritas at this place are so expensive, and its all sugar, even if you up the price for a nicer one. I did think the service was really fast and helpful and when we moved over to the bar, the bartender was friendly also. The bar area is large. Our bill was as high as going to a really nice place in town. Ridiculous really. Being from a pricey city in Cali, I feel that everything was subpar with top dollar prices. I would have paid that if it was worth that, but it absolutely was not. I have heard there are good HH deals and football specials, so may check that out, but will not be back for dinner. I think this place makes money because of location. Hopefully they will rethink the menu and prices and become a a great restaurant in town.

Probably one of the worst managed restaurants I’ve ever been to. I read the reviews first but wanted to give it a shot. This place clearly has a management issue, the food was mostly tasteless the«meat» in the green chili was awful the salsa tasted«funny» Spanish rice looked a day old. Black Beans might as well have been microwaved out of the can(zero prep) took us about 5 min before we were greeted at the podium when we walked in. It was about 3 min before we even saw a server walk thru the restaurant. THEBIGGESTISSUEISTHEIRSODAHAD A VERYBADALMOSTMOLDYAROMA. not sure if their lines have never been cleaned or some issue with the ice, but immediately caused nervousness. Place looks nice but that’s obviously where they put the emphasis not in the food or service. Worst 35 $ I ever spent, especially on a date was very embarrassing.

This was my first experience at a Carlos Miguel’s and it was an ok one. We ended up here mainly because there wasn’t a wait to be seated and we could start digging into chips and salsa right away. The service was fine — we got refills on drinks and chips quickly enough and none of the orders were messed up. That said, the service definitely didn’t impress. Everyone, from the waiter to the hostess to the bartender, seemed to do the bare minimum, as other reviews have suggested. As for the food, it also wasn’t anything overly impressive. Everyone at the table enjoyed their food, but nobody was raving about it. This place seems like a fine choice for a quick stop, but I don’t think I’d go out of my way to visit again.

Simply: They. Just. Don’t. Care. Anymore. Seriously, we’ve been going to Carlos Miguel’s for 5 years and the experience has been getting worse for the last year or so. The best part of the dining experience is getting seated. Really. After that, it’s a crap shoot if you’ll get waited on within 20 minutes. Now, for the food: Eh. Where has the combination of flavors gone? The food used to be so good and now it’s basically taste-free. I pray that new construction will bring in a fantastic Mexican restaurant. Adiós Carlos…

Not impressed at all with Carlos Miguel’s. I never dined here before tonight, but I had a groupon and decided to give it a try with some family from out of town. The food was pretty bland and left much to be desired. The sides on our plates were cold. The service was bad, and our waiter never really apologized for anything, let alone take anything off the bill. Generally inattentive service throughout the night. Honestly, the only redeeming factor was the half-price house margs(served all night, not just happy hour). Plenty of better, more authentic, and cheaper Mexican food options in the area.

If I could give any advice it is do not eat here. Not good food not good service the $ 15 seafood chimichanga has 0 crab and remnants of chopped crap shrimp it only smells fishy. Don’t even bother if you are thinking of going here just go next door to craves I can promise you won’t be disappointed that way

I’m not sure why this place is rated so low. We really enjoy coming here! They have great freshly made guacamole at your table and we like to get the fajitas. They also have a nice patio to sit at when the weather is nice.

I am a bit surprised by such a low rating for this restaurant! My girlfriends and I originally wanted to try the burger place next door, but their wait was about 20 minutes. We were pretty hungry after running so we just decided to walk over to Carlos Miguel’s. It was on a Saturday, but the restaurant didn’t seem too busy. We decided to enjoy the nice weather on the patio. Our server was prompt at taking our drink and food orders and made sure we had chips and salsa each time it was empty. After asking our server what her favorite was, most of ordered her recommendation: shrimp tacos! We were glad we did because it was really good. It came with cilantro rice on the side which needed more seasoning! It was so bland that I wondered if they even put any salt in it. It’s unfortunate to see that so many patrons were disappointed by their food and service, but our experience here was pretty nice!

3 stars because the food was yummy, despite the generally poor service. When we were seated, they brought out both salsa and beans for dipping our chips. That was really cool since my husband doesn’t eat salsa and is usually stuck with just dry chips. It was nice for them to provide an alternate dip. Really great touch! Frankly, we will go back because of that, because of the awesome fish tacos we got, and because of its proximity to other good establishments. But the service was not yummy. Hostess table was a bit snarky. Server was very slow to get us menus, take drink order, receive food, and bring our check. Basically at all stages where the server had to go retrieve something, it seemed like a long time until we saw her again. Nobody was really friendly or chipper. Just some people sorta there… doing a job… no real zeal for it. I like restaurants where the people seem to like people and to like their job, where they’re into the experience because hey, I’m paying money to eat out, I expect smiles and an upbeat, fun atmosphere. Those things were missing from our experience here. By the end we were itching to go, even though we were filled to the brim with great food.

Nope nope nope. Food: Of the 5 items our table ordered; one was ice cold, one was burnt, and one was plain gross. Not to mention overpriced! Service: Very slow, got our checks wrong, rolled eyes when we asked for anything. Eat elsewhere!

This is probably the worst excuse for a mexican restaurant I have ever witnessed. The only thing that is somewhat acceptable is the table side Guacamole. Everything else tastes terrible. The management is the worst part. Terrible Vibes. Terrible Food. Watered down drinks. Even with Happy Hour prices it is not worth the money. Take my advice and choose somewhere else to eat. This place sucks

Every time I’ve tried this place… disappointment. Mediocre food, abysmal service, and terrible atmosphere. This trip we witnessed the wait staff confronting the hostess on not providing them with enough seated tables. The management was more like an angry overlord glaring down over a fiefdom. Our server did their job but that’s it. No smiles from anyone and no sense of caring about our business at all. In making eye contact with the staff and a smile… nothing but dead faces. Either they had a bad Botox session or are going through the motions of a terrible workplace. The food was nearly tasteless, dry and over cooked. Forgettable at best… On our way out… Eye contact with the hostess and not the slightest hint of thanks. Lame…

The whole experience was lackluster here. We were in the area for some Castle Rock Outlet shopping and needed some fuel to keep us going. Carlos Miguel’s is situated right next to Crave Burger and I’m regretting the decision we made to eat here. The one time I don’t use my Unilocal App and I end up at a place like this. Place was completely empty and I think it’s suffering from an identity crisis. Inside it appears as though they are trying for a version of Mexican fine dining or something. Unfortunately the food quality does not come close to even okay. Price point was high, especially for Mexican. The dishes started at $ 15 and went up to $ 28 or so. There was not a separate lunch menu, another miss since I didn’t want a platter of anything I just wanted something quick and satisfying. I ordered something with chicken, can’t even remember since it tasted like nothing. No spice, no flavor, no hint of heat or herbage or something other than cheese to give the dish flavor. My mom had some sort of stuffed chicken and the chicken appeared to have been prepared in the microwave or re-heated in some way. Crave would have definitely been a better way to go on this afternoon and believe me I will remember this for my next visit to the Outlets. Never again Carlos Miguel’s — how disappointing.
