I was very underwhelmed by the food. Location is great! Service is fast and extremely friendly. Environment is nice. Huge parking lot. I would give 5 stars for service if I had that option. Maybe I’m picky about Mexican Food being from San Diego, but I have had great Mexican Food all over the country. This food was not good, and dinners were extremely overpriced. So overpriced, I decided to al a carte due to being nervous about the quality. Had I purchased a $ 15 meal, I probably would have sent it back. Some things I didn’t like: Salsa, it tasted like a taco sauce, and a lot if dried spices. Nothing tasted fresh. To me it tasted processed, mixed with some fresh ingredients. The food, both our plates not only needed flavor balance and tons of other fresh ingredients, But really needed SALT. I usually think food is much to salty to put this comment in perspective, and here I was, caking it on my dish. It made a huge difference. In Fact the meat was cooked perfectly tender in my taco, it just had zero flavor. No dry rubs, no seasoning, or SALT. Honestly, I hate saying this, but even the tamale was bland. My tacos didn’t even come with pico, which I find slightly odd. Maybe some fresh diced lime onions. I would never purchase anything over $ 10 here, or you might just leave upset. One of the highlights of the night besides to excellent customer service was an extremely GREATMUSHROOMSALSA/PICO. It was fantastic. Balanced, fresh tasting, and amazing. I can’t imagine the same person that made the mushroom pico was the same person who made the food we ate for dinner. Two completely different palates. But who knows. This was my first time here, so maybe it was a fluke, or the chef was out that day, and I will try it again due to location & that they serve margaritas(which we did not try). I will say, they have a good following, & it was packed. So they aren’t hurting for my business anyway. Maybe people just love the fantastic service and friendly smiles.

this restaurant is very family oriented. polite servers, warm service and prompt. i dont know how these Unilocalers can attack these qualities. i dine quite often over there. also i order to go. the prices are reasonable andfair for every one. like my mom used to say you cant please all the world all the time but most of the time.

Big portions and friendly staff, but food was typical TexMex and nothing to brag about. Not the best, but not great either. My chile rille is were bland and over-battered. Tacos were ok, but looked like store bought taco shells and they fell apart. Could use a better beer selection as well.

Great food. Salsa is very good. Not the best I have had but worth coming back for. I world rank the salsa on my top ten list. The food was as good just like any other good Mexican food place would be. Nothing spectacular but it is good. Service was above average. I would recommend this place if you are looking to eat in castle rock. Land want a nice place to sit down.

It’s decent Mexican food. Atmosphere is great and staff is fast and friendly. Food is a tad bland but they serve it fresh and hot. I go when it’s a group of us meeting from all sides of castle rock.

I had the chorizo lunch burrito here. It was a little bland and nothing to return back for. I’ll keep looking around CR for a better Mexican restaurant. The salsa is also a little weak IMO. I recently moved here from Oklahoma/Texas — and even the weakest Mexican restaurants in my rotation there are better than this place. Not sure if I’ll ever return.

We have been here several times and as always it was great. I had the chicken flautas, they we’re almost as good as my mother-in-law’s used to be. The silver coin margaritas are amazing. I will always stop here when in the Denver area

I have been coming to Guadalajara sometimes weekly for the past 7yrs. It was my favorite Mexican food place. so it is with great sadness that i post this review. The pricing has changed, the atmosphere has changed, the food has changed and most importantly the service has suffered greatly. Sadly I think it is the last time I will go. We as consumers have choices where we spend our money and with the most recent experience I can no longer recommend it and I for one will be spending my money elsewhere.

This Mexican joint is very tasty. The place is clean, the staff friendly and attentive, and the décor festive. I think the tamales have a little too much masa for the amount of filling but the enchiladas, beef tacos, and tacos al pastor are great. The rice and beans are also quite good. The fried ice cream is a little much with the whip cream and chocolate sauce but I guess they thought I was 10. I’m looking forward to trying the sopapillas next time.

Second visit not nearly as good as the first. Menu says 2 for 1 happy hour on margaritas after 8pm, but this is only on minis, not the one you get when you order the«house margarita.» Why the trickery? Margarita just average, nothing special. Food the same. Server said his favorite was the burrito Loco so I ordered it. It certainly wasn’t «smothered» with green chili and cheese as the menu stated. The green chili was virtually nonexistent and had no heat what so ever. Disappointed. The size was good and chicken was quality. A healthy dish in my opinion, if you eat half. Ruce, beans, chicken, cheese, lettuce, traces of tomato, guac, and sour cream.(Chipotle better). My husband had duo of cheese enchiladas and soft relleno. Relleno I didn’t prefer, too much egg taste and no heat. The enchilada was tasty and the sauce was different and intriguing(hint of cumin, perhaps?). Will we ever go back? Meh, probably not.

Best Mexican food in Castle Rock. Great drinks, food and service. Looks a little cheesy from the outside and definitely colorful interior but the food and friendly staff is definitely worth it. Prices are reasonable for the amount of food you receive.

After shopping at the outlet malls, my grandma and I were in the mood for some mexican food. My forst impression of this place was on tje phone. I called and asked if they had vegetarian options and they right away said yes they had many. That right away made me excited! When we arrived the décor was colorful and bright. They seated us right away and brought out salsa and chips. The salsa was a tad spicy, but I still chowed down. The menu had roughly ten or more plates that had specific vegetarian dishes and many more that you could modify. They had a nice and cheap selection of decent wine, not Barefoot or Sutter Home! Ordered the Cabernet Sauvignon(Some winery from Napa, yes I asked to see the bottle) and it was very tasty. For food my grandma ordered the Mexican Pizza from the appetizer menu, which I may add was huge! I did not try it because of the meat, but she said it was awesome. I had the Veggie Fajitas which were awesome! It came with a lot of veggies and a nice amount of sides. The staff was extremely helpful and the service was very quick. They even kept their cool when dealing with an extremely difficult customer in the next booth from us. If you are in the area or even passing through then definitely check them out!

It can be hard to find a great Mexican restaurant when you’re in an unfamiliar place. They’re all pretty similar, but not all of them go the extra mile in deliciousness. I have, as most of you have, had Mexican that was so mediocre it was worse than bad. Guadalajara isn’t a mediocre restaurant! True, it’s not the greatest, but it’s a great price for better than average Mexican food, friendly, fast service, and colorful décor. Burritos are huge and filling. I get the cheese dip burrito, which is a regular burrito smothered in — you guessed it — their house made cheese dip. It’s obviously just the standard mix of melted velveeta-type cheese(read: electric orange) and rotel, but there’s nothing wrong with that! Boyfriend gets burrito al pastor, which he loves. My ONLY qualm is that the salsa is too spicy for me. I remedy this by dipping the chips in the runoff cheese dip from my burrito. And boyfriend loves spicy food, so it’s perfect! Way to go, Guadalajara. See you tomorrow night.
