I agree with the others, the gumbo is a lot of chicken broth and not a lot of gumbo flavor. Mine literally had one bite of chicken in it, about the size of a quarter, two croutons, and the rest was broth, rice, and celery. Lame, and a rip-off at $ 8. I also had the muffaletta, and it was decent, but nothing special. Surprisingly fresh for a hot sandwich off of a truck, though.

I was in a what-can-I-eat kinda mood today for lunch and was excited to see the Bayou Express truck. Even at $ 10, I was willing to pay for the chicken and sausage jumbalaya. No… just no. Upon opening the top of the container, out swirls the aroma of chicken noodle soup broth. Visually, it could have very well been just that. That alone tainted my anticipation. I see what looks like uncle Ben’s brown rice, 3 slices of sausage, a couple shreds of chicken – along with one or two clumps of chicken skin. The taste was a bit more flavorful than expected, but lukewarm nonetheless. In the trash it went. I feel like I paid $ 10 for some Uncle Ben’s soup. Yes, I can hear you snickering now, «What’d you expect for a food truck?» I expected it not to gross me out, that’s what!

Nice guy, clean truck, good food … what more could you ask for? Loved his gumbo although I would have put in a little more rice.

I stumbled upon the Bayou Express food truck on the corner of Randolph and Franklin while I was going to grab a quick bite to eat, and was excited to see a Cajun food truck. I went to the truck and they had several selections including gumbo, and«bayourritos» which are like burrito po-boys. OMG. I just finished the chicken-andoillue sausage one, and it was so tasty — full of flavor — very delicious. It was nice to have something different for a change. They also had some caramel-pecan bread pudding. Ridiculous. Very good, but very rich — there is no way I can eat this whole thing. The bread pudding is something that should be split between 2 people. The prices are a little on the steep side — $ 8.50 for the Bayourirrito, and $ 5 for the bread pudding — but it’s worth it…
