We love Noble Coyote! We purchase their beans from Whole Foods, and had no idea they were available at area Farmers Markets until I read a review by another Unilocaler. Our favorites are the Morning Grind and the Peru one(I don’t think it has a name). Excellent strong coffee… tastes great as espresso or latte. Keep it up, Noble Coyote!!!

If you ever happen upon Noble Coyote Coffee at a neighborhood grocery store, an arts fair, or a restaurant, be sure to jump at the opportunity to bring some home with you or enjoy it right there on the spot. I feel this is the best independent roaster in Dallas, and I always keep Noble Coyote coffee on hand at home, and I always recommend it to friends as well. Don’t miss out on this incredible coffee — thankfully you can get your very own bag at Green Grocer(that’s where I buy mine). I personally like the Guatemala Huehuetenango.

This little mom and pop coffee bean company takes the prize for the best coffee in Dallas. They sell their beans at numerous stores in Dallas and 5 – 10 coffee shops are now brewing their beans. They do not have their own coffee shop, so you have to be willing to brew at home or find some of their coffee in one of the shops to try it. Your other option is to find them at one of the several farmer’s markets that they have a stand at.(Check their facebook page because they are great about updating the page as to where they will be!) They are always willing to let you sample the coffee there and they sell it by the cup too. Also if you are a coffee nerd like me, don’t be shy at the farmer’s market, they are equally excited to have coffee nerd conversations. **Also as a note they do take credit card at the farmer’s market.** They have the perfect mix of freshness, time, and technique that produces exceptional coffee. All of their beans are fair trade and sustainably sourced. Their beans range between $ 12-$ 15 for 12 ounces of beans. Maybe a little pricey compared to grocery store beans but entirely worth it. So now for the breakdown. I have tried the following beans: Ethiopia Limu: The most recent beans I have tried. These beans have a sweet cherry taste to them at first. They end with a dark chocolate finish. I would give it an A. Barking Dog Espresso: My least favorite of the blends that I have tried. It does have a chocolate finish as well but just not my favorite —A-. That said it might be my favorite compared to many other roaster’s best brews – it has some steep competition. «DRC» Congo: My favorite of the beans I have tried so far. A rich chocolate start with a fruity floral end. This one can be hard to find. A+. Rwanda: This had more of a floral start to it if I remember correctly. I would rank it third place after the Ethiopia and the DRC. Those are the four I have tried so far, excited to keep sampling!

Sadly, I have never been to the actual store. However, I’ve been drinking Noble Coyote Coffee Roasters since I moved to East Dallas.(I buy my supply at Green Grocers.) Their beans are by far the best that I’ve ever tasted! I’ve bought several flavors, but their Rise n’ Grind is my favorite. I’m now at the point where I’d rather brew Noble Coyote Coffee Roasters at home than even consider making a trip to Starbucks. That should say something! I would definitely give their coffees a try! Now that I know the actual store is so close, I’m going to pop by soon! Cheers!

My wife and I don’t drink a ton of coffee, but when we do, we don’t skimp on quality. Coyote has a great selection and every single bag has been great. We have had the breakfast blend, sumatra and the Ethiopian Yirgacheffe so far, and we are converted. We won’t buy anything else. I can’t wait to try another type of bean. It’s awesome to know that whatever I pick up from Coyote, it’s going to be the best. Full flavored, robust, smooth, satisfying.

We absolutely love Noble Coyote’s coffee! They are very passionate about their product and it shows in every delicious sip! Kevin & Marta are so knowledgeable and are always willing to chat about their process, their beans — any questions you might have about coffee — they know the answer! Their coffee is available all over Dallas but we get ours at the White Rock Local Market on Saturdays in East Dallas. Absolutely delicious!

This is my favorite coffee. I’d buy it if I weren’t in Dallas, but I appreciate everything local about it. We love our Chemex but I’m very happy with a regular drip pot of their roast, too.

Unpretentious, conscientious and delicious coffee that also happens to be the best in Dallas. Other craft roasters try too hard, and their coffee can end up too weak and fruity for my tastes. Noble Coyote’s coffee maintains all the favorable characteristics of high brow roasters while still tasting like, you know, coffee! If you live in the home delivery area, a coffee subscription from Noble Coyote is one of the best deals around. It will improve your life.

I’ll preface this review by adamantly claiming that I am not a coffee snob, but admitting that I roast my own coffee at home almost daily and have about 9 different brewing contraptions in my house. Kevin roasts the best coffee in Dallas, bar none. I’ve tried all our local roasters, and I love them all in their own way, but objectively speaking NCCR is the best there is. It’s definitely some of the best I’ve ever had, up there with Intelligentsia and Stumptown. If you want excellent coffee the most important things(in order) are good beans, consistent grind, and a well refined brew method… so there is no better place to begin your pursuit of the perfect cup than right here!

Great coffee, great people! Excellent work in caring about where the coffee comes from and the people who grow it. Yummy! If you’re a coffee hound, you will soon find that you can’t do without the Coyote. I was at Café Silva recently(another favorite business) and found out they get coffee from N.C. It’s a small world. If you’re close by, you can get this delivered, or buy it online. My faves: Guatemalan, Nicaraguan, Ethiopian and Café Momentum.

I still do not know why coffee shops, coffee roasters, and random delis enjoy using mountain animals such as moose, coyotes, buffalo, and other furry critters to place on logos and in names. Well, this idea feeds right into yet another Dallas Coffee Roaster(roasting is the new micro-brewing; I’m calling it!); enter Noble Coyote. On a recent visit to a local-centric Dallas grocer, I picked up a bag of their Guatemala Huehuetenango. The roast lent the coffee an extremely full-bodied aroma, but the beans themselves, once brewed, actually lacked juiciness. I did appreciate the oily coat that provided the beans a nice sheen. I used the Chemex Method, and I believe that this particular brewing technique pulled out too much bitterness. Perhaps with their darker roasts, go with a clever or V-60, so as to absorb some of the more tannic compounds. This particular roast seemed a little dry, leaving some silkiness to be desired. I also appreciate their emphasis on sustainability and fairness of purchasing and selling. On their website, they list a number of coffee shops and grocers at which you can purchase some of their caffeinated goods. Noble Coyote provides yet another good addition to the growing population of micro-roasters in North Texas.

This coffee truly is as good as it gets! Bold, honest and perfect. I love it! The coffee roasters are super awesome as well. Get ya some quick before I do. Get 2 bags so you won’t run out. But if you do run out they well get it to you one way or another.

We discovered NCCR’s amazing coffee at our neighborhood’s local market, and I just can’t say enough about how much we love these beans! So far we’ve tried three types: Guatemala, Sumatra, and Café Momentum Blend… all delicious! Not only do they roast some great coffee, they are committed to sustainability and fair trade. At first we had to stock up to make sure we didn’t run out before our next local market, but now NCCR can be picked up many places around town. YAY!

Bought some Guatemala Huehuetenango FTO Roast direct from this Roaster– sent direct to my home… Delicious! They have four main roasts — tried three of them and they were all amazing but the Guatemalan was my fav., dark with a hint of cherry. I agree with Rachel H.‘s review that the coffee makes me feel good especially considering their comittment to Organic — Free Trade. Oh and I love their slogan«Brew Better Coffee»!

Kevin roasts some mean coffee. After educating us a little about what we drink, we found that we don’t need those heavy over-roasted beans to get our buzz. We tried a couple of different roasts and loved them all. My favorite was the Ethiopian blend. Yum! Noble Coyote roasts amazing coffee and makes me feel good about drinking it too! A quote from their facebook page, «We are committed to making wise choices that include: supporting sustainable growing practices, advocating ethical trade, and using methods that make minimal impact on the earth.»
