WHYWHYWHYWHYWHYWHYWHY I. AM. SO. SAD. I would go to the original Bruxie in Old Towne Orange back home and I absolutely flipped my lid when I drove passed the Glendale location here in Colorado. Both their sweet and savory offerings are top notch! Don’t forget about the frozen custard either. When ordering the Chicken and Waffle sandwich, remember to order the Vermont maple syrup. But I guess you’ll have to go to CALIFORNIA.

So sad this Denver location closed. If you ever find yourself in Orange County, CA, give Bruxie a try. I’ve vistied 2 SoCal locations and this review stands for them, too. Yum. That about sums it up. I first heard of Bruxie while visiting family in Orange County and we were excited to notice that one had opened in Denver. My daughter and I like to split one from the sweet menu and one from the savory side. The roasted turkey club and the lemon and berries were both sooo good. The waffle is light and slightly crisp. The waffle fries are also tasty. We split an order of those, too, and have plenty to eat. If you are looking for a delicious and fun alternative for fast casual, you need to give Bruxie a try. You won’t be sorry!

I was leaving B&N nearby and noticed this place. It looked interested so I tried it and was not disappointed. After talking to the cashier for a minute, I went with the fried chicken. The waffles only have 250ish calories and are relatively large so I was very satisfied with the portion. The fried chicken was moist and crispy on the outside. The syrup was light. I maybe should have added some more but wanted to try it as it was served. The side caesar I got was the right size as well. It came with a parmesean crisp which was a very nice surprise. There are a lot of things on the menu I think I’ll try during my next visit!

Love this place. It’s a little hard to find, but totally worth it. On my first trip here, I had the roasted mushrooms and arugula(don’t skip the sun dried tomatoes!), and on the second, the sausage, egg, and cheese(already pretty greasy — skip the mayo). Sister had the fried chicken and waffles. Everything was AWESOME. For dessert, the custard is heavy. If you’re into frozen custard, this is one of the few places you can get it in Denver, but if you’re just a fan of ice cream, it might be too much for you(it was for me). Dessert waffles are great. Lemon lovers should definitely go for the lemon cream and berries, and the liege waffle was great, too.(I think the pearl sugar should’ve melted more, but we’re really splitting hairs here.) Overall, two thumbs up. I’ll be back! Bonus: you get a $ 5 coupon for signing up for their Fold Club at the register.

I have had chicken and waffles at 4 – 5 other places outside of Bruxie. I’ve also had liege waffles in SF and Belgian waffles in Belgium. So I didn’t think another waffle could surprise me but Bruxie’s defied that stubborn belief! I ordered a ½ chicken & waffle sandwich with a side of fruit(strawberries, pineapple & banana) & a fresh OJ. The waffle wasn’t heavy & thick like they are at IHOP. They’re think & almost seem deep-fried because of their crisp. There were areas in the waffle that were so thin that it had holes in it. This made for a very great texture. The chicken was topped with some cabbage & honey which was nice. The texture of the chicken however was chewy & of low-quality(like the chicken pieces you’d get inside a McDonald’s or Chick-Fil-A sandwich that could have been frozen). I expected the chicken not to be processed. I expected the crust on it to be crispier like Roscoe’s or Popeye’s. Despite the not-so-great chicken, the waffle quality made up for my experience. I can imagine that the liege & dessert waffles are fabulous. I’d also like to try the mushroom waffle next time I come. The side of fruit was fresh & freshly cut. The«fresh oj» tasted like store-bought OJ(maybe because it was a bit too sweet) & was strangely served in a to-go coffee cup. I was surprised by the interior décor of this place because I, for some reason, expected it to be more modern/trendy. The wooden booth seating was cheap/outdated but aren’t in bad condition. There’s an enclosed«outdoor» area that is well insulated & therefore not too cold. Service was great and food came out within 10 minutes. You order @ a counter but the food’s brought to your table.

I feel like waffles can be the new cupcake. I really jumped on the waffle bandwagon in Chicago. There was this little Belgian waffle shop that would serve the most delicious waffles to go. I never really considered myself a waffle type gal until that waffle shop helped change my ways. Now, I am 100% a waffle girl. I love how airy waffles are and how your topping will just stay in the little crevices; gives you the perfect topping to waffle ratio. So, places that specialize in waffles make me very happy and bring me back to my days in Chicago wondering around eating a waffle on the streets. Bruxie is my favorite restaurant to come to my ‘hood this year. It is waffle galore! You have your choice of savory or sweet. If you are lucky, your friend will halfies with you so you get the best of both worlds. My favorites from the savory side: Buttermilk Fried Chicken and Waffle and Proscuitto de Parma and Gruyère. Both delicious. The chicken is pretty darn awesome. Perfect level of fried. The Proscuitto de Parma and Gruyère is pretty much a grilled cheese waffle. I don’t think it needs selling. From the sweet side: Nutella and Bananas, Seasonal Crème Brulee, and S’mores. Can’t go wrong with any of those options. I will also recommend their Waffle Irish Fries. Not only do they master the traditional waffle, but they also have waffle fries perfected. I love me some waffle fries. I especially love me some waffle fries loaded with cheese and bacon. If I was a complete glutton, I would get these every single time I visited Bruxie. The cool part about their waffles is that they are only 250 calories each. I may be crazy, but I don’t think that is that terrible. I mean, yeah, add on cheese, meat, etc., and that ramps it up a bit, but I would think it would be far more than a 250 starting point for the actual waffle. I will also note that the staff is so friendly and helpful. They help make eating at Bruxie an overall killer experience!

Wow, the the normal breakfast waffles are good, but where this place shines is their sandwiches. The green eggs and ham is amazing, I know it unappealing but it is refreshing and original. Also the bacon egg and cheese is arguable the best breakfast sandwich I’ve ever had. I also want to note the service is amazing and thee is virtually no wait for breakfast which is a big plus on a weekend morning.

We’ve been a couple of times since this location opened and are always pleased with our visits. Most recently we came with a group of 4 on a Saturday and had no issue finding a table on the covered patio. Food wise, I’ve had the cheeseburger, tuna salad, and pastrami sandwich and all have been very good. I would highly recommend the pastrami as it’s ridiculous. A side of fries is ample for sharing between two people and I have never left hungry. I wouldn’t hesitate to recommend this shop as a waffle as a ‘bun’ is soooo much better!

DAAAAAAAAAyum! Waffles as a sandwich vessel? Yes! Imagine a classic combo like chicken and pesto and tomatoes and cheese nestled in a folded waffle. That waffle has more flavor and less calories than two pieces of bread. Wow! Color me impressed. The coffee is seriously good here too. Ambiance and service are casual and excellent.

I so wish I could eat at this place regularly. I still have hopes of one in Boulder though I have heard that, though announced to open last summer(and did not) it might not happen. I had a waffle based sandwich, which is what they are known for. I generally find that if a place has a specialty, it is probably a good choice. Plus it is novel for me since I have no other options to try a sandwich on a waffle. The waffle is not sweet and yet still feels and tastes like a real waffle. It is light enough to fold over like a flatbread, yet not soft or soggy. Great concept for a waffle lover like me. I had the mushroom(roasted) and goat cheese sandwich, with arugula and balsamic drizzle. All parts were good quality and fresh. It was certainly filling enough. I also had a Boylan’s soda, though I probably didn’t «need“it. I would have liked it better if they had had the Ginger Ale flavor though. Typical quick casual service with both nice AC inside on a hot day and a large outdoor seating area too. In a very busy shopping center, but with adequate parking. It was nice to go with a group so that I could see a variety of their offerings.

«Sandwiches in the morning, sandwiches in the evenin’, sandwiches at suppertime! When sandwiches are on a waffle, you can eat sandwiches anytime.» This place is mediocre and a gimmick concept. If you really like this place you should reconsider every choice you have ever made that brought you to this moment.

Waffles are among my most favorite of foods. Sweet or savory makes no difference. When a friend sent me an article about waffle sandwiches it got my attention. Yesterday I got to experience the amazing sensory experience of light and savory waffle with smoked salmon, cream cheese with chive and dill topped with very thinly sliced cucumber. It was a perfect sandwich.

My cousins took me here all the time in Orange and Huntington Beach, it became something I had to have anytime I was in California! But it’s here in Colorado now! I’ll start by saying the only bad thing here, and that is the prosciutto sandwich. It is weak. Not sure if it was the particular day it was made or what, but the one we got had melted cheese and the saddest shrivel of prosciutto tossed inside… Now for the good, everything else! First choice is the chicken and waffle sandwich, followed by the pulled pork sandwich. Every time I’ve been it’s been a special, so hopefully it sticks around. Recommend getting one sweet and one savory while there. The coffee is really good there, I haven’t asked if it’s in house or if they get a particular brand. The milkshakes are awesome, especially the coffee flavored ones. You also should get at least one order of fries for you or for your table. Listing all that stuff reminds me that your bill can add up when you want to go big here. Sandwich is close to 8 bucks, fries add 3, the milkshake is 5 etc. But the treat is worth it I think.

Swung by here for lunch yesterday after watching a Travel Channel episode on sandwiches and decided we’d give this a shot because we were looking for something not so run-of-the-mill and this definitely hit the spot! I had the Turkey Club which comes with Gruyère and a Pesto Aioli — it was very good, the combo of flavors were just delicious! My friend had the special which was the Carolina pulled pork — which he devoured and loved. We both of course had to have the waffle fries and they beat Chick-Fil-A hands down! So when you think of a waffle sandwich, I know I immediately thought this would be an incredibly heavy meal but in fact, it was not at all. While we both were quite full, I was not uncomfortable. The waffles are not heavy and also, not sweet — which I’m also not into(the whole sweet/salty sandwich thing is just not for me) but this waffle was light, crispy, and paired perfectly with our sandwiches. For both sandwiches, fries, and one drink(they make their own colas and their coke was very good) we paid about $ 24 so it’s not too expensive but it’s not Subway cheap either. The restaurant was very clean, has a nice covered patio attached and the staff were very helpful. Look forward to returning soon.

Stopped in here for brunch and it was delicious! I thought it would be a sit-down restaurant, but you order at the counter first and wait for your food. The staff is really attentive. I had the bacon, egg & cheddar sandwich and added avocado. The waffle is thin and soft but crispy, and it is not sweet(and 250 calories). I thought it was a great substitution for bread on a sandwich. I wish we had room to try the dessert waffles! They gave us a free sample of their frozen custard and it was extremely tasty – rich, thick, and creamy. Next time!

I’d been looking forward to trying Bruxie for quite some time. I first heard of them in Orange County and was hoping to try them at some point while I was there, but Southern California has such great and interesting food I got distracted by too many other offerings. So thankfully there was a Denver location that I could give a try while visiting my dad. The service was excellent. The woman at the counter was very helpful and explained the whole concept to us. She was also very patient(dad can be indecisive at times). Also, when our food was brought out to us the runner said he’d give me a maple syrup(which is usually an extra $ 1) if i wanted one, but I said no thanks because I’m not really a syrup person. This was a nice touch and very good service, going above and beyond expectations! The space is really nice and has a lovely covered patio that they can close off during the winter or when it’s a cooler time of day. I decided on the Green Eggs and Ham and my dad chose the Turkey Club with waffle fries on the side. My Green Eggs and Ham was pretty good, the waffle was light and the ingredients seemed solid, but in total, it just wasn’t interesting or delicious enough for me to want to eat it again. I couldn’t really taste the arugula in the arugula pesto and the sandwich did need some more bite to it, which the arugula could have offered. I also tried a few of my dad’s waffle fries and they were pretty good as well, but I guess I just don’t get the whole waffle fry thing. I guess they’re supposed to be better because they have more surface area? My dad ate his whole sandwich and he said he liked it. He doesn’t always have the most discerning palate, but I believe him when he says he enjoyed his meal. I can tell this is a well-run business because the staff was very nice and helpful, the space is thoughtfully designed, and there’s a checklist in the bathroom ensuring it gets checked on every hour. I know for restaurants this is pretty much the only way a busy place can make sure the bathroom stays clean, so definitely props to good management. I don’t think I’ll be back, but I know Bruxie will continue to succeed even without my business!

On a Saturday morning earlier this month, my husband & I found ourselves needing a bite to eat while we waited for our car to finish at the(best) Chevy dealership in Denver. Such dealership happened to be neighbors to this great little café, Bruxie! If you have a taste for carbs like I do — trying Bruxie is a must! Savory & sweet waffle treats galore! Even with my safe & simple order of some Grilled Cheese & Tomato Bisque, I was MORE than pleased with the selection I made. Suggestion to Bruxie: add Vermont Cheddar to your menu! The cashier seemed somewhat clueless and tried to nickle & dime me for two extra pickles, but the Manager was a different story. He exuded a natural sense of customer service — just very observant and super interactive with customers WITHOUT overstepping. I don’t mind making Bruxie our tradition when Pearl needs an oil change! But next time, I am sitting on the large covered patio!

Interesting concept, creative ingredients and combinations, has that fresh California vibe, but somehow the food lacks that«umami» factor. How do I put it? Seems like the only flavoring agent for the savory dishes is salt, not that they’re overly salty or over-seasoned, I meant that there was no other flavor profile besides salt. So to resolve that, my BF and I paired our sweet and savory orders together, his Hot Pastrami Bruxie with Sweet waffles Seasonal Créme Brulée style, my Green Eggs & Ham with Liege Waffle with Caramelized Pearl Sugar, and ate them all together to create that deliciousness of sweet and savory. But if it involves this much work(lol), I’m not sure we’re all that engaged. I also got the Albacore Tuna Salad with the tuna on the side because he couldn’t have fish that day. He missed out because the Tuna part was very… tuna-y, unlike any other tuna salad I’ve had(presumably from a can), bet it’s the«Albacore» tuna working there. Yet again, it’s tuna-y and, you guessed it, salty. I’d suggest the chef sprinkle a couple granulates of sugar in the mix… Or, sigh, just DIY like I did. My BF wasn’t too too crazy about the homemade cane sugar soda. Hey, now I thought about it, we could’ve had the tuna salad and the soda together, that might make both more yummy. As we were dining, staff was handing out samples of Wisconsin Frozen Custard, that was great. Needless to say I dipped some waffle fries in them. Oh the waffle fries were fine, standard, I was just playing with the soft serve. I had read about Bruxie’s coffee when this Colorado location was introduced, so I had to try a cup of BOLDBLEND. If you like very strong coffee, you’ll enjoy it. Unlike their food, this coffee has very complex flavor profiles, I felt I tasted a few spices in the mix. Can’t say I thoroughly enjoyed it. I like my drip coffee simple and nutty. However, I absolutely LOVED Bruxie’s caramel latte. Asked for decaf so perhaps the decaf espresso is very different from the BOLDBLEND. I’d come in again just to have the caramel latte, it’s so much better than Starbucks, you can actually taste the coffee with a hint of sweetness from the caramel, perfectly foamy on top, that cup was my savior for the night.

I love this place! I tried the Bruxie Salad, and the Lemon Vinaigrette & Balsamic dressing was delicious. The waffle fries are the best fries I’ve ever had. Not sure what it is about them, maybe because they are soft on the inside and crispy on the outside. And if you get the Nacho fries, they come with bacon! Yum yum. I asked them about Gluten Free waffles, and they said they are working to perfect their recipe. After all, the waffle IS the bread and butter of their business. So, I can’t wait until they offer GF waffles, and then I’ll get to try their sandwiches!

Wow-what a cool place! So much variety in the menu: waffles galore, salads, old fashioned pure cane sugar sodas, floats, shakes and sundaes. Seriously, if you can’t find something to like on this menu, something must be wrong with you! :-) Prices were very reasonable for everything. I got the Buttermilk Fried Chicken & Waffle with syrup and tomato soup. Calina ordered the Albacore Tuna Melt and tomato soup. OMG – they were so freaking delicious! We washed down this deliciousness with a chocolate shake and the black cow float! Just outstanding! Left us feeling satisfied and happy! The location was very convenient, plenty of parking and all the staff we encountered were very friendly, happy and helpful. Looking forward to coming back again soon. Thanks Bruxie’s for opening up this location in Denver!
