Elite Event At Infinite Monkey Theorem

Yes, it was kinda warm out the day of this event, but I’d take that over cold rain & snow! This was a great event. I had never heard of IMT before this event and in the days leading up to it, it seemed it was ever where I was, so I was excited to check it out.
Props to Ben, I don’t think I would have enough guts to take such a risk like he did, but it’s all working out & I have a feeling it’s about to take off. The wine was delish. It went perfect with the munchies from Tony’s. I loved the Riesling. It was perfect on such a hot day. The Syrah was also fantastic. My dad got me a bottle to enjoy later. Oh yea, did I mention I got to enjoy this event with my parents who were in town from PA?! How cool is that?! My dad loves Unilocal,but unfortunately where they live, there aren’t any cool events. Thanks Laura for lettin them come, they really enjoyed it!

This was event was super cool, despite it being super hot out. I loved loved loved the wine, especially the 2 whites: Sauvignon Blanc, and Riesling. The food was perfect for a hot summer day… except for the fact that there were no plates. I didn’t end up eating that much because I didn’t want to hold up the line while stuffing my face. Yes, some people did use the fans as a plate, but found out they weren’t too sturdy.
But overall I had a great time, and it was fantastic to see my Unilocal friends, all while learning about and sipping some really fabulous wine.

Wonderful event! The winery was nothing like I was expecting but their bar/​patio is way cool as is the *nice and chilly* hut where they store the barrels. I loved hearing the story behind IMT from the owner/​winemaker. Normally, I would not have selected a Riesling but it was so freaking hot and I wanted something cool and summer-​y and it was perfect. I’ll be snapping that up retail ASAP.
The Tony’s boys were completely darling and their food was good (as always).
The Goodness Knows bars were a nice surprise. I’m now a total addict.

Really delish wines, including a fabby-​fab Reisling that surprised me by not being too sweet and made me want to branch out of my wine box more often.
No, no… not the box I drink wine from. Like, you know. «think outside the box.» Say what? Oh, drinking wine in 106 degree temps will do a number on your brain cells. Thanks for all that awesome bottled water, by the way! Oh and the Fuze drinks too… do you pronounce that «fuse» or «foozie?» I’ve got a fiver riding on the answer.
The food was so so so so good… but it would’ve been better with plates and napkins! By the way, you know how it suddenly became de rigeur to use your fan as a plate? I was the first one to do that. My idea. You’re welcome.

It was so hot I think I lost about 20 lbs in water weight, but at least I had unlimited wine to keep me hydrated. And good chilled wine at that!
This was another fun event that introduced me to yet another ambitious entrepreneur in the Denver scene. Ben Parsons of Infinite Monkey Theorem was kind enough to let us not only try his wine, but also get a behind the scenes view of his business operations. His dedication for wine is certainly reflected in his product, and it was intriguing to hear of his future goals for expanding his facility into a wine bar and restaurant.
Props to Laura who did an awesome job at pairing our wine consumption with good hors d’oeuvres from Tony’s, music from Ginger the DJ, and graffiti action by the Dope Group.

Thanks Laura. You are the awesomest. Your sistah is cool too. Our first elite event, and I loved how the Unilocalers used the Unilocal fans as plates for the lovely food. They are so inventive ! I never knew about the urban winery before… ah, what other wonders does Denver hide from us ??? We are planning to go back for one of their wine tasting and food events… I loved the white… My DH preferred the red. There should have been more dancing… maybe when its not 100 degrees out…:_)

I am absolutely thrilled to have learned about Infinite Monkey Theorem winery. The thermometer wasn’t the only elevated thing there, my synapses were in bliss! Ben Parsons’ passion, philosophy, and dedication are truly an inspiration to this connoisseur of wine, science, and literature; an awesome trifecta.
You may have a finite amount of wine, but i shall enjoy it near an infinite amount of time!

There was a simple « Unilocal» Event sign out front with an open wooden gate leading onto a patio between a main building and a Quonset hut. The Quonset hut, it turned out, contained the wine production rooms for Infinite Money Theorem Urban Winery.
It was 101 degrees in the shade on the patio; 56 degrees cuttled up to the wine barrels inside the Quonset. Brrr. .. wonderful!
Ben Parsons, founder/​owner/​manager/​winemaker/​and it sounds like «Jack-​of-​all-​trades at this little urban winery, was down-​to-​earth, open and friendly. The tour was very interesting. Listening to how Ben pulled together the many pieces and parts to start this little business and how his business continues to grow in urban Denver was worth the trip.
But. .. .
He does need a handyman to pull together his front offices into a more professional looking business. Obviously all his time and effort are going into the wine making, not into professional office set-​up. His wine is superb, so I guess he has his priorities straight!
It was another great YEE and fanastic to know we have someone locally making really good urban wine. I bought a bottle of SB to give to a friend, took the wine tour and met some new and old Unilocal friends.
Five stars for this Elite Event. It was an introduction to a little known, but great new small business that I might not have ever known about without the YEE! Thanks Laura!

This was my first Elite event, and I am SO impressed! Loved it! The winery is original and local which I loved. It was really great to get a personal tour. The food was wonderful. Looking foward to the next event!

Another great event put on by the superstar Laura L! I’d heard a lot about this winery, so it was nice to finally get to try them out at the winery’s digs with some cool Unilocalers! Wife and I loved the Sauv Blanc/​Semillon, and I liked the Syrah blend. The graffiti art was super cool, and it was nice to find out that one of the artists did the graphics for my Never Summer snowboard. And who could pass up the deliciousness of Tony’s to go with some vino.

My husband and I had a great time! Thanks for all the effort you put into this event. The tour of the winery was really interesting, and we met some really nice people. The only thing I’d change would be the heat, of course, but who can help that?
I love my lunch box schwag, by the way! ;)
Anyway, now I can’t wait for the next one!

Another Unilocal event for the win!
Having never been to a winery, I was eager (of course) to finally see where the action is. What surprised me was how small it is; a big garage with lots of bottles and a refreshingly cold room.
Outside, we bumped into some recent acquaintances on Unilocal and discussed food, drink, and Denver itself with new people, all while swilling tasty wine in sweltering heat.
Now I’m trying to decide what to do with my Unilocal lunch box. I’m thinking I could turn it into some kind of portable cocktail kit. That seems appropriate.
