I grabbed some food from Matt’s Snack Shack when it was in front of Fermentra Brewing. They have an assortment of interesting grilled cheeses with various ingredients mixed in. We grabbed the bbq and the green chili sandwiches as well as some wings. My favorites was the chili. It added a great kick to the sandwich. The bbq was good as well, but a lot sweeter than the chili.
Their wings were good as well, they were about average price wise at a dollar a wing, but the buffalo sauce was one of the better that I’ve had.

The cowboy was absolutely amazing! Grilled but not burnt and delicious. Grilled cheese and pulled prom in one? Why didn’t I think of that! Would return and would love to know where the truck is throughout the week.

As a long time customer of Matt’s I’ve got to say that he would NEVER have served a burnt sandwich.
These days, roll the dice.
I lost on my Cowboy tonight. Burnt on one side and «hidden» by how it was wrapped.
Poor form. Thanks for the last meal I’ll buy from you.

The menu is boring, mostly grilled cheeses with odd disappointing toppings. The chicken wings only offer one sauce and it seems that they went with a bland, ‘no one will hate it’ flavor that leaves me wanting more.
Also, everything seems to take forever to be made despite the boring menu and limited options.
I might be more critical here because they always seem to be at the tap room I go to. One of the reasons I like going to a tap room is the ever changing food trucks but lately I’ve been going hungry cause I’d rather not eat than give Matt’s any more of my money.

BEST HOT WINGS EVER. Homemade hotsauce with a really awesome kick to it and the wings are grilled which = as awesome as it can get.
Sometimes the wings take awhile though but for good reason seeing as how they prep it.
Got to try it out at Declaration Brewery.
Saw it at Prost Brewery too.

Matt’s Snack Shack is regularly at Platt Park Brewing. I usually only get beer there, but was in the mood for some food last week and got the Cowboy grilled cheese. It was AMAZING! I’ll definitely be trying other things when I find their truck.

We’ve eaten at Matt’s food truck twice when he has been posted up at Prost. Both times the order taker, who I presume to be Matt, was uncomfortably rude. The food was fine, but I prefer friendliness.

I caught Matt’s Snack Shack down at Declaration Brewery today. They have a great variety of food that could appease any appitite… sliders, nachos, grilled cheese sandwiches, wings, and brats. Me being a vegetarian, I was super excited to see a vegetarian bratwurst on the menu! You have your choice of different toppings to put on top. I had mustard, onions, and diced green chillies. It was soooo delicious!!! Some vegetarian substitutes have a tendency to be dry, this one definitely was not! I will definitely be back! Friendly staff and fantastic food! I highly recommend that you give them a try!

Mediocre. For $ 8 you’re grilled cheese should not have one slice of single wrapped American cheese, come burnt and take 20 minutes to prepare.

We are eating Matt’s Snack Shack right now. It’s SO good and the service is amazing. The veggie brat is homemade and delicious. They didn’t roll their eyes when we ordered chicken for our dog either. We’re excited that Matt will be at Declaration Brewery every Sunday. It’s a must try. Support local business and try Matt’s Snack Shack. You won’t be dissapointed!

I’m not going to lie — I was pretty skeptical about a food truck specializing in grilled cheese and chicken wings, but our group was starting to become hangry while enjoying a couple of pints at Fermaentra so we decided to give Matt’s Snack Shack a shot. The wings looked and smelled delicious, but I opted for the New Mexico grilled cheese and I was not disappointed. After making short work of it, I struggled with whether to go back and order seconds. It was definitely one of the best grilled cheese sandwiches I’ve had.

Matt’s Snack Shack is the best! We used him for a private event. He was there early, prepared for a large group and delivered amazing food. It was a big hit with our 75 + people. He and his employee were pleasant, full of smiles and very hard workers! I will use these guys again for any event! Can’t beat the food that is for sure! And… they have gluten free options!

These really are the best wings in Denver. I’ve had wings from lots and lots of Denver digs and Matt seriously knows what he’s doing. They arent just fried and thrown in sauce, they are grilled up and made with love. I dont know what hes putting in that Sauce either but theres got to be some black magic involved. I’ve had a beer a few times with Matt himself and he’s a straight shooter down to the bone. One of these days i’ll have to try a grilled cheese but with how good the wings are it could be a while… eat them and like them. That is all

Best grilled cheese I’ve ever had, would normally never order a grilled cheese, but I ordered one for my girlfriend took one bite and went back out and ordered one for myself. I ordered the Santa Fe with bbq pulled pork, a little extra for the pork, but thats what made it. Perfect pulled pork paired with delicious melty cheese makes for something incredible! Gonna try the wings with a side of grilled cheese next time.

Food is very sub standard, the truck looks like a grease pit covered in dust and the server, I presume Matt himself, was a complete dick. We got our cold wings 30 minutes after ordering and wished we had gone to McDonald’s instead. Avoid this place.

Best buffalo wings in Denver, hands down. I never thought I’d be saying this about a food truck.
I tend to try buffalo wings everywhere I find them. Perfect sauce, wings grilled to perfection, to the point of qualities you get from frying. I prefer them crispy. A burnt look but no taste of carbon to be found. If you love buffalo wings, you must seek these out. Great grilled sandwiches too.
Happy to see this guy at River North Brewery every Wednesday.

Matt serves up snacks that are perfect for beer drinkers. The wings, with his homemade Buffalo-​style sauce, are vinegary with just enough heat. Grilled wings? It worked for my table!
We each got a different grilled cheese. My buffalo chicken grilled cheese was gooey, and delicious. The New Mexico, with its hatch chiles, was pretty good too.
The truck is simple: no sleek skin on the truck with a fancy marketing campaign. Just a white board menu and a guy inside making delicious food. It was a weeknight, and he even brought food into the brewery to customers.
We’ll seek out this truck again, I’m sure.

Oh, man, the wings… Every time I order Buffalo wings (which is more often than I care to admit), they always come out deep fried, crispy, greasy, and then as I’m licking my fingers, I totally regret eating them.
Not at Matt’s.
His are grilled, deliciously charred, juicy, and somehow, I’d even call them «fresh,» which is never a descriptor that enters my mind when I eat other wings. The medium-​spicy, mouthwatering red-​orange sauce evokes memories of Buffalo sauce, but it’s so delicious and from-​scratch tasting that it seems like it’s on an entirely different level. One of these days, I’ll try something else on their menu, but it’s a hard sell for me once I start thinking about those wings.
