Yum, yum, yum. This place is sooooo good. Named after the owner’s dog(with pictures of him all over to prove it), KC’s has awesome BBQ. I have had the pulled pork, pulled chicken, and brisket. I don’t know if it’s a Colorado thing, a Vail valley thing, or what, but at every restaurant I visited during my stay in the Rockies, I was asked multiple times how I was enjoying my meal. KC’s was no exception — our waiter was so, so friendly. All of the meat dishes are great, the BBQ is of the smoky kind, and the list of side dishes is endless. The slaw, potato salad, corn bread, and fries are all great. Caution — I was really craving mac and cheese, it goes so well with BBQ — and I was disappointed to discover that the mac here has jalapenos in it. It wasn’t bad, I just wasn’t mentally prepared for that extra kick in my mac — and I don’t recall seeing a description on the menu. All items are a la carte, and you can order them as platters, with sides and corn bread. Also, if you are not too hungry they will let you order a kid-sized sandwich. Delish!
