I’m from Phoenix, and it’s perplexed me my whole life that the farther away you get from Mexico, the worse the Mexican food gets, even when it’s made by Mexicans. It makes no sense, because the ingredients are readily available, and it’s not that hard to make. The taco trucks in this part of the country have the best Mexican food, better than the restaurants. Taqueria el Corral is a good one. I’m not sure why the trucks never have potatoes, a necessary ingredient for one of my favorites, the Beans/Cheese/Potatoes/Chorizo — no-eggs-in-the-chorizo Burrito, but apart from that, these trucks get the job done. The carne asada at this truck is especially good, and the service is friendly. Don’t be scared, pull in and get some tacos!

Went here with my mom because I was craving something not from a restaurant. We pull up and the woman who took our order was super friendly and nice. We waited about 5 minutes and our 4 tacos adobada, carnitas, and our carne asada burrito are ready. We also get a nifty frequent buyer card. At home I crack open the tinfoil wrapped Styrofoam plate(as it should be) and dive into my adobada tacos. Yum yum yum yum yum. The red salsa is super spicy, so seriously, watch out. I ate some of the carnitas and that was delicious as well. If you have a craving for authentic Mexican food, then this place is serious business and hit the spot for a San Diego native transplanted in Enumclaw. Delicious.
