With another try earlier this morning, my previous concerns are put to rest. The last time I ordered from What the Truck I found the corn tortillas a bit stale and their garnish missing from my breakfast tacos. Great tasting as they were, these issues gave me reason to question giving a perfect review rating. Not this time, the corn tortillas for their Hangover Tacos were fresh and flavorful. The perfect holder for the fluffy scrambled eggs, crispy bacon, shredded cheese, leeks and Sriracha sour cream bursting out both ends of the shells. The perfect way to start my morning. I would definitely grab a bite from What the Truck again.

They offer well thought out, inventive and creative offerings that are worth trying just because — because they’re created by people that care about producing good food, because they don’t charge as much as they probably could and because even if you don’t like what you get(you probably will) you very likely won’t regret trying it. I think they could benefit from frying, steaming or otherwise simply heating their tortillas before serving.

If you see this truck driving by, flag it down and order one of everything they are serving that day and then get two orders of their fish tacos. They don’t always have fish tacos so that’s why you want to eat one now and save one for later. Everything this truck has is really that good and you will want to be a food hoarder with it. After you get done with all the food you ate, go over to The Winchester because the same guys that do What The Truck own that place. Repeat the same process of ordering everything in that resturant.

Ate here while I was downtown for Artprize. Very unique menu with asian style BBQ tacos. Usually you can get a meal of 3 tacos for $ 6 with potatoes. Everything tastes great.

enjoyed/loved the chorizo breakfast burrito. Wow! 5+ stars. The potatoes were lame. 1 star at best. Big disappointment. Soggy with no flavor. Because the burrito was so good I’ll make a point to find the truck.

Was in town for Art Prize and decided to check out What the Truck. Saw they had a special of 3 tacos for $ 5 and decided to give that a try. I had one of each of their available options that day, A beef chicken, and pork taco. While all three were really good, the Polynesian Pork taco was my favorite. It contained: BBQ braised pork, jalapeño pineapple salsa, ginger cucumber pickles, and cilantro lime sour cream. Delicious, and a great deal.

The concept of a food truck is certainly not new, but here in Grand Rapids, What The Truck? is the first real food truck. Operated by the fine folks from the Winchester, you can find out where the truck will be via Facebook or Twitter. This morning, my fiancé and I tried them out for the first time at the entrance to the Fulton St. Farmers’ Market. A simple menu of five items(Chef’s Omelette with chorizo, goat cheese, avocado coulis; breakfast burrito w/egg, potatoes, guac, tomatoes, cheddar, caramelized onions and salsa verde; breakfast tacos w/egg, chorizo, salsa verde and cheddar; corn griddle cakes w/cuban black beans, avocado coulis, cheddar; and braised beef hash w/tomatoes, potatoes, caramelized onions, jalapeños, fried egg and spinach) and simple beverage list. Very affordable, and very tasty! The wait for the food this morning wasn’t very long, and they provided camp chairs to sit in while we waited for our orders and then ate. I would definitely try anything they decided to serve.
