Well, I have to say this place is adorable and delicious. If I hadn’t just come from brunch I may have purchased the whole store. The smell when we walked in was roasted chicken and it made my mouth water immediately. The staff was helpful and knowledgeable about the different kind of cuts, rubs and ingredients. They have dog food !! Natural beef liver and heart and raw hides to kimchi. I think they won me over! Not only can I buy for me but my lovely pooch as well? Sold! Please open up a store in the city so I can buy my meat from you? Pleaaseee! I will definitely be back… With a bigger appetite!

This week we ate a steak and a small lamb roast. Both were exceptional. My only complaint was the pastrami which was mostly fat, unlike the last time we bought it here. Great store.

What is happening with Fleisher’s. The founders, Josh and Jessica Applestone are evidently no longer involved with its management, and there is a new principal owner. The store no longer has the sparkle, level of activity, and positive vibes that it once did. Josh and Jessica were very active in getting out their message of highest quality local supply, and sought personal visibility to espress their philosophy as the public face of Fleishers. Their departure is a big deal for the future of this store, but no public statement appears to have been made on the Fleisher’s website, or on social media such as Facebook or Twitter. Fleisher’s has been recently dropped from Josh’s Twitter feed address without comment. When I was in the store recently, it was apparent that their suppliers had changed. I inquired, and was told that most of their meats now came from the«Northeast Meat Exchange»(I didn’t listen very closely to this, and the name is only approximate, but carries the sense of what I was told). This is certainly not Mike Meiller at Meiller’s slaughterhouse in Pine Plains, NY, which used to be named as their principal supplier. It is also not meat raised within 50 miles and processed within 25 miles, a public claim made frequently during the reign of Josh and Jessica, as the essence of Fleisher’s locavore practice. Under Josh and Jessica, Fleisher’s established itself as one of the best butchers in the Northeast, if not the country. We have shopped there frequently, and found their meats generally excellent, with the occasional inconsistency in quality, and variation in dry ageing. I would have rated it between 4 and 5 stars. Lately the quality has shown some decline. I recently purchased loin pork chops, good, but I’ve had much better here, rack of lamb that was seriously lacking in flavor and an excellent chicken. Overall, not bad, but also not justifying the high prices, or up to their usual level of quality. I will be reluctant to go back until I better understand the changes and their implications. They clearly don’t want to do this, but they need to make a public statement that has substance and is not just platitudes.

Best meat I have found in the US so far! We live in NYC but when we go upstate to stay around the Woodstock area, I make sure I stop there. I have only visited their Kingston place but I know there is a Park Slope one in Bklyn. Sausage, beef, pork, poultry: it’s all great with a special mention for their beef. All meats are naturally raised, grass fed etc. And the quality of it is just amazing. I had the dry aged steak and on the grill it was just perfect. Also, absolutely amazing is their mix of ground beef with bacon. For burger’s lovers that’s just heaven! Just make sure you watch it closely on your bbq because it has obviously a(bit) more fat in it and can get the flames up! The staff is super knowledgeable: they clearly know their stuff! They also carry some very good cheese and a few other products, all of them organic. Just be careful with their hours: they are not open all the time(I think Thursday through Saturday basically but check it online before or you’ll be very frustrated!

I just brought home a 2.2lb dry aged top sirloin from this place that melted my face off. I mean, I could have cooked this thing in my toilet if it were possible and I bet it still would have come out ridiculously good. FYI, I didn’t eat it all at once, I’m not Bigfoot. It actually made for 3 nice dinners. I like to reverse the typical cooking instructions(ie: I cook in oven first, finish in pan) and the parts of the meat that were rare really stood out as super high quality. I’m tempted to start ordering from them for NYC delivery. Coincidentally, they supply Back Forty and Savoy, both places I like for their tasty beef and pork entrees. A bit pricey, but you get what you pay for. Their animals are raised and fed in a good way all grass fed, no hormones etc… you can taste the difference.

Best butcher I have ever been to, bar none. Locally and humanely raised beef, chicken and pork. Sausages, stocks, hotdogs and burgers made in house. Definitely pricey but definitely worth it. Cheese counter also. Call ahead if you have specific requests /cuts and they will accommodate you.
