Got off the Interstate in Heiskell, Tennessee looking for some petro, and look what We stumbled across. We went in and had some of the best barbecue in these United States. We are from Las Vegas, and wish we could have taken some home. The owners welcomed us with open arms and showed us their smoker and shared their history. These were honest, hard working, REAL American folks. DON’T pass this place up!!! Your LOSS if you do.

In town for meeting, developed a hankering for ‘Q. Folks in the meeting recommended a few places nearby, then one of the guys leaned back, grinned, and said«Nah, the best BBQ in this area comes from Slappy’s.» Several other folks sighed and said, «Yes, Slappy’s.» Yes, Slappy’s. A bit of a drive from Oak Ridge, Slappy’s offers smoked pork, chicken, ribs, and — outside the norm for this area, but well within the norm of its Texas-raised owner — brisket. Let’s start there. Brisket was tender, with a really crisp bark, nice smoke ring, and a solid beef flavor accented with just a hint of smoke. The last part is important; brisket sucks up smoke, and it can taste really nasty if it takes on too much. This was excellent. If you’re a beef eater, you won’t go wrong ordering this brisket! I also ordered ribs. The thick, meaty baby backs were beautifully cooked: nice smoke and smoke ring, tender(yet pulled off the bone with just the right amount of tug), and very, very tasty. Great layering of meat/rub/sauce, with the meat the star. I brought some ribs home. I plan to eat them in tomorrow’s meeting as a thank you to the folks that recommended Slappy’s, and a reminder to everyone else that there is nothing better than meat cooked with skill and love.
