My first visit to Lafayette, CO. I came here to visit a friend and her family — they’re locals and they swear by this place. The Taco Wagon is taco truck-esque place that is a must visit if you’re in the area. 1. Food — lots of options! — tacos — I had the chorizo and asada, both delicious. Warning, the red salsa that came with them is HOTHOTHOT. I mean nose-dripping, tear-inducing, feeling-it-go-all-the-way-down spicy satisfaction(just how I like it) — MUSTGET — breakfast burrito, chose your meat, I prefer chorizo most of the time but everything is good. Choices of mild, half mild/half spicy, hot. I felt the hot wasn’t very hot, but the green chili is just tasty in flavor 2. ambiance — a taco truck! — there is a small parking lot — there is outdoor seating and a bit of covered seating It’s just GOODFOOD.

Had the chili relleno plate(rice & beans) smothered with half and half green chili. Good fresh green chili as was the stuffed fresh poblano pepper. They also have Mexican Coca-Cola. Outdoor patio and a green house covered seating area is nice as it is a food truck(although permanently located). Highly recommend!

Their Breakfast burritos freakin’ rock! Their green chile is hot and flavorful, the burritos are simple, no frills authentic Colorado-New Mexico style. They aren’t huge, so I order 2 ;-)

I had 2 chicken tacos and one al pastor. The flavors are pretty good. I especially love the freshly made tortillas. Here’s the problem, I couldn’t tell the difference between the chicken and the pork. I don’t know maybe I was just having an off day but to me there was no difference in flavor. The salsas that are served with the tacos also are desperately in need of salt. Maybe that’s not authentic and I don’t know what I’m talking about there. But it would’ve been my personal preference to have a little bit of salt in the salsas. They also didn’t have much flavor. I’m giving it four stars because as I said the flavors were delicious in the meat you just can’t tell the difference between the two meats. Also everything was really fresh, and really quickly made and the customer service was pretty good. I will be back to try the beans and the green chili next.

Not so great. I asked for vegetarian bean burrito and was never told that there are chunks of meat in the chili. They made another for me but the taste was okay. I wouldn’t consider this place good or great,. just okay!

Waited 20 minutes for crappy take out tacos that looked like someone shook then up. Props for serving lengua but it got mussed up with chorizo and carne. Not cool. Thanks for serving me a mess. I didn’t order a salad.

I had the most bonerific taco craving. Seriously ready to wrap my hands around the meaty taco chode of goodness. As I was ready to order, the Taco Nazi ruined my rhythm and I lost my taco«O.» Good tacos. Horrible happy ending.

Great good truck find in Lafayette. Its a permanent truck so its always there. Excellent fresh street tacos and Tamales. Really enjoyed the food. Its simple and authentic and priced right. Its a great alternative to other Mexican places on the street that rely on a lot of sauce and cheese for flavor. In the summer they have a patio area to eat outside.

If you’re looking for cheap, fast, authentic mexican street food, this is the place. Minimal menu means they’re great at what they offer. No frills though, this is essentially a food truck with a permanent spot. Offers outdoor seating, which is nice.

Love the breakfast burritos here, but everything else I’ve had is really good too. I’d give them 5 stars if they hadn’t given us someone else’s order on a few occasions. I think they could work out a better system and communication when picking up orders. Otherwise, I hope they don’t change the recipes. Best Mexican food in Lafayette!

I’d rather eat at the Taco Wagon than any other«Mexican» restaurant in Lafayette or Louisville. …like some faux-Mexican restaurants on the same street. Order the tacos. You will not be disappointed. Trust in the fact that you will see many of the locals in the neighborhood eating here. I get the Tacos al Pastor and am never disappointed each time. Comes with your choice of red or green salsa so you can regulate heat levels. Service is very fast and no nonsense. Highly recommended for those looking for that real street taco experience.

I’ve been here more times that I can count and it is yummy! The tortas are my favorite, especially the chicken. Soft bread, all the fixings(including avocado), spicy salsa on the side and I am a happy lady! The tacos are on point(I like the pastor) and you can’t go wrong with breakfast burritos all day. The line can get long, they are not always overly friendly but I’ve always had good food. Pop inside the mercado for some delicious fresh tortillas while you wait or sit on the little patio.

Awesome breakfast burritos! I am very picky about finding good authentic breakfast burritos and these hit the spot. The tortillas are freshly made, the chorizo was amazing with just enough spice, and I loved that there were no beans in the bfast burrito: just eggs, potatoes, green chili, and chorizo. Also, it’s very inexpensive, only $ 3.50 for a filling burrito.

I’m absolutely a fan of this awesome taco truck. A few things to note… This was my first taco truck ever and I have had to come back twice in one week. Lots of variety and quick options. I have only tried the carne asada tacos, but it sounds like the breakfast burritos are a «do not miss» item. That’ll be next for me! I was a little intimidated the first time I walked up to the truck as I had no idea what to expect. By the second time, it was was more comfortable and I just couldn’t wait to have my tacos. Avocado is only $ 1 more which is a steal considering the prices of avocados. The salsa that comes with the tacos is the bomb and best if slathered all over the tacos.(Not a clean experience, but a tasty one) Service is quick and to the point. Be sure to check it out!

Don’t you hate it when second time around they fail your 5 stars review? This is how it happen on Wednesday morning. Order 3 variety tacos and a recommended breakfast burrito(ham). The tomatoes on my tacos were skimpy. The meat were lukewarm. The tortillas did not have the oil dip so they were dry. The breakfast burrito was almost a total failure. The potatoes were smash like. The cheese tasted from cheddar cheese Kroger can. The sauce was lukewarm. The flour tortilla was lazily cooked. The ham was delish. They(insert your thought here) and it will be a while before I come back. It was early in the morning and the crew looked exhausted. Enter here at your own risk I feel awkward leaving the 5 stars last time.

I have visited the Taco Wagon a few times over the years and clearly have been remiss in explaining the delicious goodness they produce to the good folks that read Unilocal. Quite simply, I haven’t had a better chorizo breakfast burrito anywhere in Colorado than what can be found in a silver food truck in a grocery store parking lot in Lafayette. The Taco Wagon has changed a bit over the years in adding a closed in seating area and outdoor tables, as well as updating their truck(which I don’t think used to have a name displayed on) but the food has remained delicious. Tasty green chile, great portion size, and fresh tasting authentic food are the hallmarks at Taco Wagon. On a nice day it’s a great place to go, but if it’s cold, one may wish to have a spot lined up to take their food to as the seating area does not have heat. The Taco Wagon is highly recommended for lovers of Mexican food!

I am salivating a little bit right now. I started thinking about the breakfast burritos from the Taco Wagon. Now, you may not expect much from this food trailer. But if you miss the breakfast burritos here, you’ll be sorry.(Granted, you may not know you’re sorry, but you will be.) For a few bucks, you can enjoy a very healthy sized burrito, with eggs, potato, chorizo, cheese and green chile. But more importantly, all of the ingredients are fresh and DELICIOUS. It’s not a typical bargain food. The chorizo is crumbled up fairly small and the green chile — I do a mix of mild and hot — has plenty of kick to it. The eggs aren’t watery at all and the cheddar cheese isn’t mild or cheap. I LOVE breakfast burritos. I’ve eaten them from Santiago’s, Rico’s, Big City, and some markets. The Taco Wagon beats them all and kicks butt with their prices! Bring cash for the easiest transaction. You can pay with a credit card, but you’ll have to go inside the little market and wait in line. They have a few tables out front. Otherwise, you can take your food to go.
