I have eaten here a couple of times. First I always evaluate the wait staff when I go out to eat. I have found that if the staff treats you with contempt the food will most likely be awful. This is because a restaurant that has pride in it’s food will only hire staff that reflect that pride. And here the staff reflects the pride that Chef Carlos has in his restaurant. That said: The food. The Chicken Salad sandwich is good. Great actually. Not cheap. But it is very good. A few days ago I took my wife here for lunch. She decided to have the ribs. I normally get something different to get a broad idea of the food but I decided to have the ribs as well. Rather than write my usually long rand I will make this one short. The ribs was excellent. Different but really good. And the slaw was simply the best cold slaw I have ever had. The fires were nicely done but fires are fries. Really hard to mess them up unless you have no business in the kitchen. I could rave for a fort night over the slaw and ribs. But then they shocked me and served 2 corn bread muffins. Ribs and cornbread? It worked. They pulled it off. It actually tasted good. Never have anyone served me cornbread with bbq ribs. Did I mention the cold slaw? Yes it was that good. One thing I like is that Chef Carlos will come out and walk around. This takes balls,(gold, tennis etc). Why? Because if the chef makes a bad meal and walks on the floor he is going to hear about it and so is everyone around. So he has to really have confidence in his cooking to do that. Most cooks/chefs hide in the back and you never see them. I have seen him every time I have been there. And he has the common sense to put on a clean apron before he walks out. Our waitress was nice and friendly and we were seated fast. She stayed on top of things and managed to keep my glass full which is no small feat when I have a great peach tea. I gave them 5 stars because I feel like they earned it. Their ribs will not compete with a bbq house like Odams, However they are better than Spring Creek, Dickeys, Chili’s or Cheddar’s. Also they earn stars for great service and that 5th star because the chef is confident enough to walk right up to you and say hi, butting himself in the thick of it. I have personally seen a chef get caught by angry customers on the floor and they publicly let him have it. So anyone willing to walk around talking to people deserve that extra star. Especially if they talk to me because I will be brutally honest.(After I have my plate. Never used your out loud voice when they are making your food.)

Chef Carlos is in the old historic part of Lancaster. The serve lunch and Saturday brunch. I came in for an egg white omelet and fruit. The décor is nice, and the outside patio has a great atmosphere. The waitress was pleasant. When my food arrived I noticed how yellow my egg white omelet was. The waitress said I don’t know but it’s an egg white. I didn’t bother to send it back because I was very hungry and didn’t want to have to wait. The omelet was prepared perfectly, and I enjoyed the choice of bread for the toast. It also comes with a choice of a side. I chose fruit. With tax and a tip I spent $ 10 and some change. The only reason this place gets 2 stars is because of the mistake with the food, and the waitress trying to convince me it was an egg white when I’m clearly looking at a yellow omelet. I’ll go back and hopefully get my egg whites. I also want to try the salmon sliders that I’ve heard great things about.
