Hudson & Charles

As I walk into this shop, the faint smell of blood transports me to a simpler time, where I am a hunter searching for my next meal on the open prairies. Will I find enough meat to keep me alive or will I become food, myself… Luckily, I don’t have to worry about this as I am jolted back to reality as the helpful staff asks me what I would like… I get the meatball sandwich and head back to my cave… ahem… I mean apartment.
My one complaint is that it seems more like it should be called Hudson and West 10^th St given it’s closer proximity to w 10^th as to Charles… kind of seems like false advertising to me… But I guess the meat and food more than make up for the lack of truthfulness in their geographic location so I still gave the 5 stars.

This tiny place is a gem. Didn’t want to write a review, just so less people know about it and I keep it all for myself (sorry to the store:), but I want to intercede for guys who work there: they are always friendly and give great advices on what cut to take etc. I like them! Not sure if I’m just lucky that I get great attitudes every time.
As far for products: broths are amazing, chicken is too die for, great meats too! I even don’t want to go to another butchery anymore.

I’ve been regularly going to Hudson and Charles since it opened. The sausages, ground beef, and steaks are amazing. We also buy the cheese and cider to share with our guests.

I was super excited when this specialty shop opened up around the corner from me, but I kept being let down … I can’t complain about the items I’ve purchased, but the overall experience is just uncomfortable and unfriendly. On more than one occasion I’ve gone in, been the only person in the shop, and no even said hello, let alone stopped what they were doing to ask if I needed help or wanted to order. Lighten up, guys! Or don’t. I won’t be back either way.

I come almost every day. They are very committed to local and sustainable meat. We’ve had a number of delicious foods from here: burgers, sausages, smoked meats, steak, rotisserie chicken. Prepared sandwiches are awesome too, especially the banh mi. It’s hard to go wrong. They’re usually happy to accommodate special orders too.
To weigh in on some of the criticisms: the bacon never did it for me either. And the service really depends on who you get. Sometimes they’re busy and I have a very minimal transaction (order, pay, leave); sometimes we chat and I learn a lot about meat. No one has ever been rude; usually the opposite.

This is among the best meat I have ever eaten in my life (you can taste the difference!!) and very affordable. My husband shopped here for our Fourth of July BBQ in which he smoked and slowly grilled the best pork ribs I have ever eaten. The meat is humanely raised and grass fed. The bacon we bought from here was also absolutely delicious… we freeze it making it easy to cut and stir fry when needed. Look forward to shopping here for our next BBQ.

Stopped in after a visit down to the new Whitney and a tasty stopover at the gansevoort market (both to be reviewed sep) after reading a number of positive comments.
Summary: VERY good steak cooked up at home. Will definitely stop into this butcher shop again to not only sample other meats (they go grass fed and dry age on their own facility) but to also try sampling the broths and prepared foods.
Saw a number of interesting and unique cuts and after consultation with the friendly staff, took home over a pound each of the Denver steak and the more traditional Strip. Wasn’t familiar with the Denver but learned its from the chuck and also known as the underblade steak. Had some decent marbling, pricing was reasonable, but most importantly it got a strong endorsement and am happy to share that it was a tasty steak that I will be looking out for in the future. As a fyi, for my small dinner event, went pan seared with drizzle of olive oil, half tblsp of butter and a simple salt, pepper and garlic powder seasoning and served it rare.

I’m not sure why but every time I go to Hudson and Charles I felt uncomfortable. maybe it’s the surly attitude or the unappreciative people that work there. It really feels they are doing me a favor for selling me their meat. Not sure if I want to go back there again. Hate to be a downer on this place because I really like the concept but not the people

I have to say that this little shop is amazing and I’m hoping to see it thrive and stick around a long time in the neighborhood. The deli cuts (pastrami, roast «beast») are amazing. I’ve also liked the beers I’ve tried here (you can buy a growler full). I do less of the raw meats since I am cooking-​challenged, but the ones I have done you can absolutely taste the difference vs what you buy at a D’Ag or a Gristedes. Their chicken prices are actually not that different than the local grocery store and the taste is outstanding. I can get behind flavor, value, and the overall message towards free range, wholesome real food here. Also, the people are also super nice and helpful.

Very sorry to say it, but. the bacon isn’t good at all, and I bought it twice and had the same experience. unfortunately, it is dry in taste (no, i did NOT burn it). While I was warned that the whole chickens smell like sulfur, I was overwhelmed and nearly gagged when took the chicken out of the plastic. I’ve shopped at many other sustainable. ethical butchers (Dickson’s), and haven’t had bad experiences with their bacon and chicken.
Haven’t tried their sandwiches, but their menu looks great. I’ll have to try those out.

I walked in to get two pieces of filet mignon for dinner. A man behind the counter suggested to try more flavorful, more fat content, meat. It was tied up to keep the shape as a log of wood and priced better. I like more fat content in a meat so I bought them for dinner tonight.
I was afraid to overcook the meat but it was pretty easy and cooking friendly (ask for the staff what’s the best way to cook your choice of meat. That’s what I did and came out nicely).
On the way out, I notice the fridge full of interesting stuff. I zoomed into one item first, ramen broth, what? I don’t have to be a slave in the kitchen for hours anymore? I am definitely coming back to get it very soon. Beside the ramen broth, there were lamb, beef, chicken, or turkey broth as well. I will get the chicken broth when I get sick. Other items I wanted to try were meatloaf and lasagna. They are all Hudson & Charles brand, nice. I like this shop.

Hoping at this point everyone knows to buy meat from places like this. That most people don’t know, or worse, don’t want to know, what they eat or what they eat eats, is hilariously sad.
You eat diseased, infected, such meat that’s chocked full of hormones and antibiotics, and you’re wondering why you don’t feel your best? Wonder why!
Apparently «free-​range» and «humanely raised» can mean chickens with breasts rotting from infection since their sitting on years’ worth of feces, locked up in coops that farmers are contractually obligated to keep closed. Bonus: «all vegetarian diet» means unhappy locked up chickens, since chickens love worms and bugs.
Here, you can rest easy that these animals were happy and healthy.

Also great frozen beefballs with organ meat for doggies at $ 6 a lb… much better than Natures Variety or Primal which charges more for likely diseased animal meat plus veggies.

I always adore people doing what they do with a passion; and this place is even more special because it’s just super yummy. After moving into the neighborhood 1 day, I walked in, Kevin introduced himself and their business idea. It’s only been 2 weeks and I shopped there at least 4 times — and I did not even like to cook. Their sausages are all so yummy; and I’m in love with the pig butter. So happy to be so close to them :)

A neighborhood spot rather than a citywide destination. The shop is charming as is the counterman who I took to be the owner. Each item we tried had merit. Store made mortadella is richly flavorful without nitrites it is brown. Ground beef great mineral flavor, but could have used another pass through the grinder for burgers, as it was suitable more for chili or bolognese. Turducken sausage well turned out, left a wonderful fond in the pan. Delmonico steaks chewy and tasty completed our meats. Corn chowder, from the freezer, was up to the fine quality of the meats.
If you want the cooked chicken or ribs order in advance, they require reservations.

A little pricey, but worth it. I’ve never had better sausages. The staff are helpful and friendly. I’ll be back, not often enough to break the bank, but for when I’m looking for that little extra quality.

This place has a great selection of the best quality meat at really affordable prices. Not only do you eat well, but feel good that you’re buying locally sourced and environmentally friendly products.
Not to mention they’ve also got great beers and sandwiches to go!

The meat here is superbly delicious, a perfectly butchered and curated meat selection, very well worth it. Local grass fed is the way to go and these guys are passionate about good meat. If this were in my neighborhood it would be my go-​to source for all things meat. Sure you get less than you would than if you were buying generic grocery brand meat, but taste REAL meat (meaning according to how livestock has been raised for thousands of years before the relatively recent grains based practices). taste real meat once and you will confidently pay the premium forever more. Local, ethical, gourmet meats /​cheeses /​brews. Sammies and snacks too. YES YES!

Well here at Hudson & Charles you can do just that! That’s right. Grass fed meat is some of the most nourishing food on the planet. and for the planet too! That’s right! Surprising? Look up «Soil Ecology».
If I may use the podium for a moment and kindly recomend the following: Google: «How cows can save the world» and then GO to this fantastic butcher shop. Do you, your body, your offspring, and the good of all man-​kind a solid — EAT plenty of grass fed (and finished!) BEEF, LIVER, and PANCREAS — I promise you this. You will FEEL BETTER! Pick up a tub or two of their pasture better, and don’t be a stranger to it (Bulletproof coffee ladies and gentlemen, Behold). Pasture raised butter. There lies yet another solid case in favor of mother earth and against Corpocracy. In what other way can you fight evil that tastes this damn good. and no kidding yourself either. You WILL be fed and you will perform!
And go call your grandma because she would love to hear from you and while you are at it — ask her how to cook some liver!
Seriously tho, this place has got everything you need to stay alive. Today I got pasture butter, pasture eggs, meats, even a healthy looking head of Chinese Cabbage! All at very reasonable prices! ($ 7 /​ib ground beef) It’s all as fresh as possible. Raised and slaughtered in New York. Fresh and never frozen (which kills off B — vitamins). It is sweet and delicious. The best I’ve tasted. I eat it raw. All of it. keep teying, you’ll get there :-)

Kevin and his crew know meat, lemme tell ya. This is the kind of awesome local business that makes a neighborhood worth living in, while simultaneously fighting against the encroaching Douche Quotient. Their meat is fantastic, grass-​fed and locally sourced, and I’m so happy these guys are open now.
