I have mostly been going to Ski’s butcher of late, but I was in the mood to sample some of the competition so I stopped by Beck’s on Main this week to pick up a beef brisket to have on hand for a weekend of playoff football. I am originally from Kansas City, where BBQ beef brisket(and BBQ in general) is king, so I wanted to show up my brisket abilities to some of my local friends here in Oshkosh. I did not know it at the time, but this place has been in business forever, and apparently does a great deal of business processing meats for hunters and farmers. Buying a brisket in Wisconsin has been depressing in my previous attempts, as Pick N Save and Festival have pitiful offerings, but that is not the case at Beck’s. They cut and trimmed my 22 pounder just for me, and left the cut in place to allow me to have the largest percentage of «burnt ends» after cooking, which is somewhat of a delicacy to us Kansas City folks. Unfortunately, I do not have a smoker on hand, so I had to make the brisket using the oven method. Even still, Beck’s brisket was every bit as good as what I could buy from the butcher shops in KC. It turned out great, supper succulent and flavor that was to die for. While Beck’s is a bit on the pricey side, the price is in line with the quality. The extremely friendly staff here listened to my needs and gave me exactly what I was looking for. I will be back!
