Excellent food and environment. Had the pulled pork plate with the sauce inside. Loved the sauce and the potatoe salad casserole.

Absolutely amazing. Simply perfect BBQ across the board. Tried everything on the menu and have NEVER received a slightly average meal, everything has been off the hook delicious. Even the sides are good.

Delicious BBQ and the potato casserole is great too. Pulled pork was my favorite. Very casual restaurant and your clothes will smell like they were hung over a campfire when you leave. We will definitely go back.

Sauce was the boss! I had ribs, brisket, potato casserole and pinto beans. Ribs were excellent, brisket really good, casserole was mediocre and beans were not good(and I love beans). The sausage looked good, just didn’t want that much food. If I had a do-over I would probably have skipped the sides and done all meat. Worth eating there or convenient drive-thru.

Was in town for work and looking for a good place to eat lunch. Checked Unilocal and online, and then got a suggestion from a coworker who has been in the area before. Everything pointed to Scholl Brothers Bar B Que. Wasn’t busy at all around 1PM, I thought they were closed actually. But they were open and I am glad they were! I got the 3 Meat plate, and you get a good portion of each meat and 2 sides with bread. Came in Less than $ 15 for that. Got Sliced Beef, pulled pork, and turkey. All of them were really good. The pulled pork was a hair on the dry side, but their sauce quickly took that away. Everything else was really moist and flavorful. Got Baked beans and Mac and Cheese for a side. Both were good. Now that Sauce… what can I saw about that sauce? It was so good that I wanted a bottle of it for myself to take home! It was sweet with a little tang. So good. I started eating with just a little sauce to dip in then ended up dousing and tossing my meat in it so I could get more. Even sopped up what I could with the bread. The service was nice a I will go back next time I am in town. Go, eat, and sauce your way into a food coma.

I came here for lunch a few times, so I have had the brisket, ribs, ham, pulled pork, and sausage. They all are really good. I have never had an issue with dry meat. I do have issues with dairy, so I it was difficult to select side options. I ended-up getting the green beans. They had a lot of flavor. I would not recommend this location if you are a vegaterian or vegan.

Glad I made the stop. Came at the height of lunch rush and staff were fast and friendly. 3 meat combo with 2 sides and a drink was less than $ 13. I’d say that’s quite the deal considering I couldn’t finish it. Brisket was moist and tender. Not as much smoke as I like, but great flavor. Pulled pork a bit more smoke flavor, also delicious. Pork ribs were sauced(a BBQ sin) but out of the world fantastic. Did not like the slaw. Too much of a mayonnaise flavor. I debated whether to get the slaw or the baked potato caserole which the table next to me got. My choice, my bad. The baked beans… sweet, sticky and smokey… tasted like how I make them. I had heard about Scholl brothers and was just passing through Paris and had to stop to se if the fuss was true. If this is what Texas tastes like, Texas tastes mighty fine!

I’m having a tough time with this review. We were down in Texas Hill Country on a motorcycle trip and hit some BBQ places. I thought the beef here was 4 star. Tender, nicely smoked, tasty. However, also ordered ribs where were basically 2 star. Tough, not cooked enough, just not tasty at all. Agree with a previous poster. Sides were not homemade, basically out of a can somewhere. Get some BBQ beef here, avoid the ribs. Sides are Meh… I’d stop again for the beef brisket. :)

This is, by far, the BEST beef brisket I have ever had in my entire 40 years on earth. The meat was SO tender it melted on my tongue. The baked beans were to die for and the banana pudding tasted like grandmas… with excellent, polite young man assistance behind the counter. Two thumbs up!

Had to give these folks a solid review after seeing their rating. Really friendly staff, excellent food and great vibe. I may not be from Texas but I think people should be a little less quick to hand out 1 or 2 star reviews – save that for horrible places. You’re just hurting a small business who’s trying to make ends meet. Dude behind the counter have me some free sides when he heard I was from out of town. Super cool. Try the red beans, they rock and it’s hard to find beans like that outside of Texas.

I had lunch here today and decided to go all out and try a 1 meat plate which is served with 2 sides. I tried the Texas Hot Links with the potato casserole and green beans. The portions were generous and served in a simple fashion on a tray. The food was hot and tasty. If I ever travel back to Paris I will stop here for a meal again.

I’ve eaten here twice, over a period of three years. I find that the brisket when doused with their BBQ sauce is quite nice and that the sides are OK. There is a pickle bar that has pickles, onions, jalapeños, scallions, bacon bits, etc… For soft beverages, they have the usual selection, plus sweet and unsweetened tea. There is also a soft serve ice cream machine with waffle cones. Ice cream, beverages, and pickles are included with a plate, and have unlimited refills. It’s a place that I make sure to visit any time I’m in Paris. Since I’ve never seen this place empty on lunch, I’m not sure where the one and two star reviews came from.
