Wonderful small winery with nice wines and a winemaker that is happy to explain his wine making philosophy and techniques. Paul Hoover, his wife Patty, and his entire staff make you feel at home in their beautiful setting. Last Saturday evening Still Waters had their first wine maker’s dinner and it was outstanding. The food was excellent and Paul paired every course with two«vertical» selections — the same wine but different vintages. What a great idea. Paul was chatty and charming as usual and we made some new friends. The music was great. A good time was had by all.

Owners, Paul and Patty Hoover are both California natives who came to Cal Poly in the late seventies. Paul graduated with a degree in Agriculture and Pat graduated from the Child Development Program. The original label is a picture that Pat took of their son, Ben, fishing on a quiet lake of still water above Lake Tahoe. Large line-up of both reds and whites. Great comfortable facilities and a perfect picnic location with lots of shade trees. It is one of the most eastern locations for tasting outside of Paso Robles, but still only 15 minutes from town. We met Patty the day before at Shadow Run Winery. Paul was the host for our tasting and he does the wine tour. I would recommend to go here just to meet Paul, take the tour and hear him talk about the world he loves. Genuinely nice people.

We reserved a beautiful, weathered picnic table under the trees for a bridal shower. The setting could not have been more picture perfect. The staff was friendly and attentive — even shared some Library wines(which I recommend trying). Very easy to work with, when hosting a gathering.

This is the reason that my wife and I keep coming back to Paso Robles. After visiting ATLEAST75 – 80 wineries over the years the plan is always the next FIND. Well this place is it. The setting and comfort of the back lawn view is like no other. The best part of the equation is how good the wine is for the price point. Bocce Ball, Corn-Hole and delectable wine awaits you. I am seriously considering dropping a wine club or two to accommodate Still Waters into my wine rolodex. Check it out. You will thank me later.

Beautiful vineyard and tasting room! The service is welcoming and very assertive. 2 free tastings with check in? Perfect! The tasting room is gorgeous, with a little covered patio looking out to a well groomed lawn. If you take a small hike up the hill they have a very intimate lookout with two chairs staring out at a picturesque scene of the vines. Right now the leaves on the vine are a stunning mixture of orange, red and brown. Great place to relax and enjoy the day with someone you love :-). They have a great selection of whites and reds for tasting, all at a reasonable price. Most of the whites they have are very heavy on the oak and a bit creamy. Especially their Cuvée Blanc, Viognier, Sauv Blanc and Chardonnay. The Pinot Gris was much lighter and crisp(as expected), and the Rose is pretty full bodied with heavy vanilla and strawberry flavors. I liked their whites, but the reds stole the show. My personal favorites were the Syrah, Merlot, and both Cab Sauvs. Definitely worth stopping by! With amazing wines and friendly people, Still waters is definitely not just another pretty face!

I first visited Still Waters a few years ago and when I saw the grounds, I thought, «If I ever get married, I want it to be right here!» After moving to Texas and meeting my now husband, that thought never left my mind and we ended up selecting Still Waters as our venue. Our wedding was last month, and we couldn’t have ended up with a more beautiful place for our big day. The ceremony was held under the olive grove and the reception had the beautiful vineyards in the background. Kasey, the event coordinator, was super helpful every step of the way and helped make it a relaxed, wonderful experience. Thanks for everything!

Lovely setting for a wine tasting, a picnic, or special occasion. We were there for a tasting on a weekend with family. The winery attendants were very friendly and helpful. I enjoyed the tasting and bought a bottle of chardonnay, but I feel that this winery still has a lot of maturing in its wine offerings. The whites we tasted for the 2014 winter season were fresh, bright, and crisp. The reds were generally predictable as single varietals. They have some Bordeaux varietals used in the Cuvee blend, as well as have Spanish ones and of course Zinfandel. I personally prefer blends that allow a winemaker to create a more complex wine using different types of grapes. While the red blend was nice, it was still very young. So I think the wines themselves need to be further developed.

The best decision we made when planning our June 2014 wedding was to have it at Still Waters Vineyards. From our first visit here it was clear that this place is something special. Our guests were blown away by the beauty of the grounds, the quality of the wine and the friendliness of the staff. We received countless compliments on what an amazing location we had chosen for our big day. Perfect for a small, intimate event. Thank you Kasey, Paul and team for making our day a truly amazing one that we will never forget. We are also wine club members and in my opinion you cannot find better wine in Paso at this price point. Do not hesitate to stop next time you are in Paso for a tasting and to soak in the view… I guarantee you will not be disappointed. Relaxing, laid back, quality wines with an AMAZING view.

We were just here for a family wedding last weekend. We had to use their wine for the reception and it wasn’t that good. The servers of the wine were really friendly and nice. I can’t say enough about how beautiful the grounds are!

We had a fantastic tasting experience at Still Waters. As others have stated, the owner and winemaker, Paul, was there and provided us with an impromptu barrel tasting and wine education, which felt like such a special privilege. Taylor was so much fun and very personable. The wines were all fabulous. We have been recommending Still Waters to everyone we know who is going tasting in Paso and will definitely be back.

We had our daughters wedding reception at Still Waters Vineyards and words cannot adequately express how beautiful and perfect it was. From the first day we met Kasey the manager and Paul and Pat the owners we knew we had found the perfect place for our daughters wedding. Still Waters grounds and location is God’s Country. Still Waters Vineyards wines are hand crafted and it shows. Our family and guests could not stop commenting how great the wine was. I visited still waters after a day of wine tasting and it was a great last stop. Taylor sat us out at a picnic table and let us do our tasting from there. Good wine, good view, good service. She was knowledgable about all the wines and was fun and friendly. I would definitely come back to still waters for a glass of wine and some of their bread and olive oil.

Wonderful view of the vineyards and great greenery to walk around. Has nice outdoor seating that faces the vineyards along the hillside. You also will see old olive trees. Walking inside, very friendly, warm staff. Wines were great. I enjoyed their Chardonnay and Viognier and their Syrah. I ended up taking a bottle of each. While we did our tasting, we also got to taste their estate olive oil with fresh bread. Their chardonnay has a very rich crème brûlée, buttery flavor, with hints of pineapple with a little coconut finish on the end. The Viognier was very floral, citrus, honeysuckle. The palate was clean, crisp, asian pear, not syrupy or oily — perfectly balanced. Compared to the other wineries in Paso, this would rank near the top.

We tend to gravitate towards the smaller wineries and this one was no exception. Our pourer was actually the owner and winemaker Paul who regaled us with stories about their winery as well as Paso Robles in general. It is not often you find the owner/winemaker in the tasting room chatting and getting super excited talking about his wines and with no hint of condescension to us folks who know not much about wines. Stillwater was our last vineyard after a weekend of wine tasting so I think I was a bit wined out at that point but we did walk away with their 08 cab which was on sale for $ 20.

«Probably one of the most beautiful settings on the east side.» It’s what I always say when people ask me about this place, and it’s the truth. The wines aren’t the best, but they are not the worst either. The sauv blanc and the cuvee are dry and crisp and not over-oaked. But I can’t say the same for the rest of the red lineup, with the exception of the primitivo and the petit sirah. They do have great estate grown olive oil, but the $ 22 for 375 ml. is a little steep. Service is very friendly and they give good discounts to their wine club members.

We have been wine club members for years and just got married at this beautiful Vineyard. Everything could not have been more prefect or beautiful. The rentals we used from them were very reasonably priced and beautiful. The lighting they set up was also breathtaking and added so much ambiance. All of our guests loved their wine and their service. They were so accommodating to us and our needs. We felt like family. The only thing that would have made our event more prefect would have been if we could have been more event time, 4 hours flew by! The pricing for all their services were extremely reasonable. Every single person we spoke with at their venue was amazing and helpful. Some times there would be a slight lag time in responding but nothing compared to what we experienced with multiple other vendors. I would recommend this winery to anyone for wine tasting, picnicking, and for any event that required a beautiful venue! Thank you Paul, Patty, and Casey, you made our wedding magical and unforgettable.

I came here for a wedding. The location and grounds are absolutely gorgeous. It was perfect for a wedding. This place is really beautiful and romantic. The food was also fantastic. There were great appetizers, including yummy cheeses and chicken skewers. The main course was also really delicious. I drank their wines all night and liked them(although I am not the pickiest wine drinker). Chardonnay and sauvignon blank were good, as was the Zin.
