Absolutely amazing — I can’t wait to return and sample more. Watching them prepare your sandwich is artistry in motion. The quality of the ingredients is second to none. Truly, a lunch spot that takes their offerings to a new level.

I had a great lunch here today(the Little Miss BBQ smoke turkey with cherry jam and mozzarella). I really enjoyed the texture of the bread which was thin rather than being think/doughy. I’ll be back for sure! The staff members were also friendly and knowledgeable about the ingredients. That said, parking was pretty insufficient and it was hard to get into or out of a spot without hitting someone’s car. The wood fire grill is a nice touch and I liked the look and feel of the interior.

Its the best bread I’ve had in my life. I see no reason to keep searching for the perfect bread. Every loaf I have seen was perfect. Perfect bread structure. Prices are great too.

Unilocalers, if you haven’t been here, YOUNEEDTOGO! Small place, seats maybe 20? Owner is Italian and this is without a doubt the best bread I have ever had in my life. Lived in Europe for 2 years and this is authentic. This is craftsman, artisan bread. This is NOT the crap you buy in the«bakery dept» of a grocery store. They only serve lunch and there is no menu. The menu is written on a chalkboard to your right as you walk in and changes daily. There is ALWAYS a vegetarian option or two. My wife and I had lunch here today. REAL homemade cold cuts, real homemade mozzarella cheese and of course the BREAD… OMG the bread! I had an apple roasted ham, mozzarella and greens sandwich and my wife had the vegetarian sandwich. Roasted peppers, greens and more that she loved. Can you tell I’m not interested in vegetables? Anyway, this place is the real deal, so do yourself a favor and give them a try. You won’t be disappointed!

These guys bring such a wealth of food and restaurant knowledge to their venture, and it shows in the quality of their offerings. You can show up and just buy a loaf of bread, but you can also enjoy a delicious lunch here. The menu is brief and changes daily, but some of the offerings during my two visits included a beluga lentil & farro soup, a sandwich that featured smoked turkey from Little Miss BBQ, a salami and parmigiano sandwich with raw spinach, and a few thoughtfully conceived and perfectly executed salads and sides. Claudio is from Italy and has a professional cooking background, and the food here reflects that. The breads are made with natural levain and contain no commercial yeast; they’re also made with organic flour and undergo a long fermentation. Beautiful loaves. I was told by the owners that they’ll soon be milling their own flour… this is the Slow Food movement at its best. Come here and enjoy some of the best of what Phoenix has to offer.

I can’t say enough positive things about my experience here. The breads are inspired. Organic and made without commercial yeast. The epidemic of people claiming to be gluten sensitive are just not eating bread made the way you’re supposed to eat it! Long slow fermentations of organic whole grains with a natural levain is the only way to eat wheat and rye. Here’s your bakery! We enjoyed some small bites of cherry tomatoes, cauliflower and a delightful lentil soup. The menu changes daily with locally sourced and thoughtfully procured produce and ingredients. This is a must try. We had roast pork shoulder with a brilliant mozzarella and spinach sandwich. Nicely herbed and lightly dressed on ciabatta from their wood burning oven. Delicious. I would be here all the time if I lived here. I hope you’ll come out and support these folks and spread the word.

Absolutely the best bread in Phoenix. The heart and passion that Noble has for giving a pure product to us shows in every loaf. I can not wait to try the sandwich shop!!! Great texture and of course flavor!

I picked up this bread at the farmers market in Roadrunner park this morning and let me say it is AH-MAZING! I got the 9 grain and it did not disappoint, a dense bread with great texture and flavor. It went really well with some heirloom tomatoes I picked up as well! I will definitely be back for another loaf very soon! I am also going to have to give their sandwich shop a try next. :)

I visited the new Noble Bread sandwich shop near downtown Phoenix on Tuesday and Claudio gave me a sample of the pillow bread they will be selling when they open next week. Just like the bread they now sell, the new products will be fresh, healthy and delicious. I was not expecting a quick tour of the bakery, but one look at the freshly baked loaves that were being packaged for the farmers market told me that this place has serious chops when it comes to bread. From the wood fired oven to the sourdough bread, Noble delivers top shelf foods in a humble, honest manner. Well done Claudio and Jason.

The quality of this bread defies description. From texture to crust, to complexity of grains, it is the best bread I’ve ever eaten anywhere on this planet. Let me start out by saying that I can’t eat most bread products. I don’t have celiac, but I cannot eat commercially made bread. This bread is not only delicious, it’s made with care, fermented for days, traditionally made. It’s how bread used to be, and should be. Every time I eat it, I am shocked that I don’t have bloating and fatigue I usually get after being«glutened». Yay noble bread :)

Seriously, the best bread out there in the Phoenix area. I buy a loaf each week at either the Town & Country farmer’s market(at the McClendon’s Farm booth-another great purveyor of excellent food) or at the Scottsdale Market on Saturday. This bread can be toasted all week long-you won’t find a tastier, toothier, complex, bread. From what I hear they use there own method of rising(non commercial yeast) and heirloom grains. Some people have commented that they can eat this bread if they are gluten sensitive.

Take me home… country loaf… to a place… where I be-long hong… Yes, this bread makes me sing… out loud, and for very good reason. It is all that a bread should be. The crust is crisp and chewy, and you can taste the wood fire that kissed it. That leads to an inside that has a beautiful texture and air pockets with a slight sour flavor from the natural fermentation process. Simple, yet so very few can replicate bread such as this here in the valley. One of my favorites a few years ago, who was also a farmer’s market vendor, caught the attention of Thomas Keller and is now working in NYC. Let’s hope this noble bunch sticks around here for a spell. I usually snag mine at Town and Country farmer’s market inside McClendon’s booth on Wednesdays. They say bread is life… and this stuff makes me wish I could live forever. But first, it’s off to that twelve step meeting of carboholics anonymous.

See for yourself what real artisan bread tastes like, if you’re lucky you can talk to the owner about bread baking techniques and his ingredients they obsess over. It’s all about the bread but people don’t know he makes awesome pizza too!

Their bread is amazing! I found this at the Town and Country farmers market. This changes my view on what good bread is. I highly recommend this and get there early because they sell out fast.
