We ate here on a Thursday night at the Food Truck Roundup in South Provo, just north of the tracks. I ordered the«Three blind mice» which is a three cheese grilled cheese sandwich. You get to pick your cheeses. Delicious! We also ordered a kids plate which included a drink for $ 4.00. Next time I’m going to try the Nicholas Cage that has Granny Smith apple slices! Mmmm that sounds good!

I caught them at the Food Truck Roundup — definitely worth the line! We had a couple sandwiches and they were all delicious.

We went to the PG pool food truck night, and enjoyed some tasty grill cheese. The owner was really helpful and really friendly. Will definitely have it again.

I had a craving for a grilled cheese over the past few days and this was an oasis. I got the Odd Father and the Cheesemonger. The Cheesemonger was a beautiful mixture of all of the cheeses, very very gooey and tasty. I loved the taste the goat cheese brought to the mix. The Odd Father was by far my favorite. The flavors were balanced and all complimented each other. The caramelized onions cut through the super creaminess of the Havarti and the goat cheese put a nice finish on the sandwich. I will make a point to hunt this truck down next time I’m in the area.

Epic, Super Food Truck of cheese! I’ve always love grilled cheese growing up, but this food truck kills it. I tried the CheeseMonger! Yes, it’s a explosion of all-cheese-known-to-man flavor and a bit overwhelming for the weak. However, it’s the right serving for the best cheese lovers like me. I give this place a 5-star to boost it’s rating. The toast for the bread is cooked with garlic spice to add to the already crazy kick to your taste. Thank you taste buds, and The Mouse Trap. You killed it.

We get a lot of different food trucks at work, but this one I look forward to and they’ll always get my money when they show up. If I knew their schedule, I might even drive to where they’re at. «Dave’s Spicy Crack» is a winner. Ill be honest, it makes me a little uncomfortable since my bosses name is Dave. Yeah, Its delicious. They may have other stuff, but I can’t get past how much I like this sammich to try anything else on the menu yet. Someday. Right on. I am a fan.

This place is really swell. They don’t just slop something together. Gluten free option which is a huge plus for me(and the GF bread is not dry and gross like I’ve come to expect when substituting). Absolutely worth a shot if you see them around town.

The Nicholas Cage was really good! Brisket, cheddar cheese, green apples, spring greens. The focus is more on the meat than the cheese, but I enjoyed it because it still had the grilled cheese feel of buttery, crispy bread and melted cheese that makes me love grilled cheese sandwiches in the first place.
