I went in and checked if they had hemp milk, they did not, however the very next day she got it for me. Going above and beyond! Upbeat, positive, friendly! Fantastic coffee and the waffles are amazing!

The family and I were on our way to Smith Rock when we decided to visit this place. The owner frequents my place of work so I thought we should do the same.
This place does not disappoint! The maple waffle is AMAZE-​BALLS!!! So delicious. We also got a dark chocolate mocha. With me being a barista I set the bar pretty high on drinks. Again, this drink was amazing as well.
All of this complimented by the fast, friendly service we received we will definitely be coming back again! MAKE LOCAL HABIT PEOPLE!!!

Proust waffles what an experience right next door to the Redmond Brew Shop on 6th St. It’s a must go to if your a waffle snob. The churro waffle is perhaps the best thing I have ever ate I ordered that and drizzled some house made caramel syrup over the top, unbelievable! also try an old fashioned marshmallow made right there to good to describe. This place will need to expand after the word gets out

Terrific, friendly and fast service. Excellent coffee and world-​class waffles! Seriously these waffles are out of this world and the price is great, about seven bucks for a good sized waffle and coffee. Atmosphere is family friendly, modern and clean. Such a great place, looking forward to try all the varieties of Waffles and coffee!

Best waffles ever! Tender, light… wonderful! I had mine with lemon juice, powdered sugar and butter, and it was wonderful. My breakfast buddy had hers with yogurt, berries and granola on top; may have to try that next time. What a find!

I absolutely adore this place. The atmosphere is great with old times tunes from the record player, and I love the idea of the wonder wall. My milk chocolate mocha was perfection, and the waffles are amazing. I know I will be back very often!

I’ve been to Proust twice and can’t wait to get back there… the cardamom waffle was exquisite, the latte (with homemade marshmallow) divine. So glad to have this addition to Redmond!

Delicious coffee! Redmond is lucky to have this new great addition. The atmosphere and decoration is on point. I had a peppermint white mocha and it was done perfect! I will be back for sure!

Delicious and exciting!
They have completely reasonable prices, daring and interesting menu selections, and a great family atmosphere, complete with activities for kids.
I could definitely spend hours there sipping creatively blended lattes and sampling their homemade marshmallows or eating the hearty and tasty waffles (sweet and savory options) all while hopping on to free wifi to work while my little one colors at the expansive tables provided.
I hope the location doesn’t do them in because they could be easy to miss and are surrounded by mostly open store fronts.
But they are definitely worth seeking out. They have bright green tables outside which does help their visibility.

So stoked to have a place like this in Redmond!
They’ve been open for less than a week and I’ve already been in three times! Each time, I’ve tried something new and been blown away with every choice.
Hot chocolate is my thing and Proust delivers, utilizing ganache to bring a punch of chocolate to your taste buds, yum! Just about everything, except the waffle syrup (chosen for bringing back fond memories) is made in-​house; jams, flavoring syrups, marshmallows, waffles, etc!
So excited to continue finding new favorites!
