My company hosted The Cheese Shack food truck today for lunch, They were very friendly and the bruschetta sandwich was honestly one of the best sandwiches I’ve ever had. It was served on the most amazing bread with a sweet balsamic drizzle. It was hot, crunchy, and made my taste buds sing until the very last bite! My only disappointment was that the mac and cheese balls were so popular that they were sold out by the time I got out there(I was one of their last customers for the day), but I can’t wait to try them next time!

I had the bruschetta melt(with the added bacon, of course), and it was nothing short of amazing. I will definitely visit this food truck any time I see it, because after my experience, I absolutely must try more! I would give it more stars if it were possible!

The Mac & Cheese balls are good. Don’t underestimate their ability to fill you up. Tried the Big Pig BBQ Mac & Cheese on Texas Toast was good. Hope to try the inside out Bacon Sandwich.

The Bruschetta melt is PERFECTION, and the tots are always crispy. This truck has perfect service, simple but insanely flavorful food, and did I mention the crispy tots? Don’t miss this truck, better then most and just the right amount of food for the money. This truck is a winner!

I will say I got my first taste of this food truck at Food Truck Friday in Towergrove Park. I ordered the Hot Italian and was very impressed. It was like pizza in a sandwich. My only reason for the 4 not 5 is that when we showed up at 4:30 they were no where near ready, but kept saying just a few more minutes while every other truck’s line was moving quickly and efficiently.

Visited this truck on a whim during a Food Truck Friday and I am so glade I did. Tried a melty turkey sandwich which was wonderful. Quality cheese and bread used and most appreciated. I also tried the pulled pork and cheese tater tots. Certainly not a health conscious item but honestly worth every artery clogging moment. Can’t wait to visit the Cheese Shack again.

The cheese Shack has some really delicious food and is rather fast. I was there with my co-workers J, TD and TB and they all really like there food especially TD, and J. The only issue i was not able to sample there fried mac and cheese you cant really not sell what you’re known for that’s crazy talk!

a cheese lovers dream come true. these aren’t any old lunchbox sandwiches and paired with something called a mac and cheese ball. yum! so mac and cheese balls are exactly what they sound like. it’s a ball of mac and cheese(covered in breadcrumbs?) that is fried subsequently dipped into marinara sauce and eaten. what a wonderful idea! this is another food truck that takes credit cards and comes by WashU med-be on the look out!

It’s tough to find food that’s delicious, simple and fast, and even more difficult to find food like this from a truck. I first spotted the yellow Cheese Shack truck headed north on 55 one morning and I headed to the internet to know more. A few days later I found the truck at Wells Fargo and was greeted by a young lady who took my order for a Big Pig(a grilled sandwich of sweet pork and macaroni and cheese) and a fried Mac and Cheese ball. I could see the guy cooking was the same guy I’d seen driving the truck a few days before and I could see him preparing my sandwich and fried Mac and Cheese. It was ready in about three minutes and appetizingly presented. This was a hand-holdable sandwich and not a monster by any means yet it was bulging with meat and melted cheese smothered over soft macaroni noodles. I slowed myself while eating it to make the cheesy pleasure last longer but when I finished the sandwich I still had the Mac and Cheese ball to devour. Somehow I expected it to be dry but instead it was crisp on the outside with freshly melted cheese inside; the cheese must melt while *in* the fryer. Genius! Unfortunately I work nowhere near to where The Cheese Shack sets up and yet I find myself making at least a weekly trip to find it. Check the photo I’ll upload for an idea of their menu. Whenever I tell people I’m vegetarian, they usually ask if I’m vegan. The answer? Hell no! I love cheese too much. So when I heard about this new food truck, which just started going out this week, I knew I had to make it part of my summer food truck pilgrimage, stat. My food truck buddy, Megan A., and I hit it up at Cardinal Glennon today. I ordered an Italian without pepperoni, which is basically a fancy grilled cheese, with basic and spices, on bread toasted with garlic herb butter. I also ordered a mac n’ cheese ball and a drink. All of this for under $ 10. They started to make our food and made sure that I just wanted the sandwich without pepperoni, which was nice, because they wanted to get it right. It came out quickly, 5 minutes or less. One of the guys working asked us about the time — you could tell that they are trying to serve customers fast without much wait. For a custom made sandwich, that is a great amount of time. When we got our food, we could tell that they really are making an effort with presentation. The containers the food comes in had cute yellow checkered paper in it, the sanwich was cut in half with an olive in a toothpick, and the marinara dipping sauce for the mac n cheese ball even had a sprinkling of parmesan cheese in it. The sandwich wasn’t huge but not tiny either, and had a LOT Of cheese that was stringy and delicious. It had great flavor from the herbs and basil, and the garlic butter on the toast made it even more out of this world. The mac n cheese ball was crisp on the outside, but extremely hot and creamy on the inside. I’ve never had one like it. Delicious! My sister got a bruschetta sandwich, which also looked great. They serve sandwiches, mac n cheese balls, and fries here. One of the sandwiches even comes with a layer of mac n cheese on it! Wowza. I’d love to see them just serve straight up mac n cheese, and make the Italian without pepperoni be a regular menu item. Still though. five stars form this cheese lover!
