My wife is dairy and gluten free, and after discovering the Cookie Counter on Unilocal,which serves vegan and gluten free cookie sandwiches, we had to find it. Though that was a little easier said than done. Thankfully their website show the daily location of the VW bus. And after a quick 10min walk from the Capital Hill light rail station, we made it to our destination. The owner was very pleasant, and were it not for his assurance that it was vegan and gluten free, I don’t know if I would have believed him. Overall, a fantastic experience.

I love this place!!! Everything I have tried is out of this world. The ice cream is so smooth and the cookies have good flavor. I bought some pies through them this past holiday season and they were incredible. I can’t wait until the bakery opens on Greenwood!

Didn’t know about the Seattle Cookie Counter until last year when there was an art fair in Georgetown and the truck was cutely parking on the side. Was thinking, how good is a gluten free ice cream cookie sandwich going to be? Well, AMAZING(and huge)! Thought that was going to be the last time I ever see the truck, but when I saw it again in Capitol Hill, I had to get the ice cream cookie sandwich again! If you ever see the truck and have a sweet tooth, give it a try!

I have had the sugar cookie with lemon ice cream, snickerdoodle with espresso ice cream, and strawberry cheesecake ice cream in a cup. All of the flavors i have tried are excellent! I let my ice cream sandwich soften for a few minutes before biting into it so the cookies are nice and soft. I enjoy the ice cream in a cup so I can ration it and save some for later. Looking forward to the new Greenwood spot!

Pretty much the best vegan desserts in the world. Even the gluten free cookies are incredible and soft, and the ice cream is to die for. I hope they meet their kickstarter goal to open a store in Greenwood because I would basically live there.

I was running errands that involved lots of walking on a hot summer day in Capitol Hill… and was on my way home I found came across Seattle Cookie Counter. I really wasn’t expecting anything great, but hey, when it was so hot outside, I figure any ice cream treats will do. I looked at a the menu and thought.hmm.some interesting flavors out here. let me just try. I ended up ordering 1GF chocolate chip earl grey sammie and another 1GF chocolate chip lavender sammie. Mind you, I’m not a typical GF food eater, but I figured, heck, why not… they sounded interesting! I also love Seatt;e Cookie Counter’s cute, white/blue retro sort of van… so look for it in case you are trying to find them in your neighborhood. Chris, the owner who helped me get the sammie($ 5 each, $ 10 total with taxes), was really nice and sincere. He was concerned that I ordered 2. maybe out of concern that it was going to melt. I told him, don’t worry, I was almost home anyways. He was nice and explained to me the lavender might be a bit soft because they just made the batch fresh that morning… so I just needed to squish and put it in the freezer a bit to get it to make them solidy more. So, as soon as I got home, knowing that the lavender might be softer, I picked and literally devoured in my first chocochip earl grey sammie first. It was really good! The ice cream was so light and refreshing and the choco=chip texture was just perfect. Not too hard, not too soft! The next day, I ended up having the remainder chocochip lavender for breakfast(yea.I know. it was good, so I don’t mind it for breakfast! The lavender ice cream was even better. It had such great aromatic(but not too much) sweet lavender smell to it without being too overpowering! Now that I finished both of the sammies I got, I secretly wished I got more for my freezer, because I don’t know when I’d find their van around my area again. Check Seattle Cookie Counter out if you have a chance! Apparently all their ice creams/sammies are vegan(and some are GF options like the ones I tried). I’m not a vegan or a GF eater. but wow.I really enjoyed those sammies! They were super refreshing and didn’t make me feel icky, sluggish like I’d feel from eating too much sweet/typical ice cream you’d get elsewhere! If I come across them again, I’d definitely not hesitate to get more than one sammies… to save some more for later!

Holy mother of ice cream, what heavenly creation have I just put in my mouth!?! I had my first ice cream sammie here today and was blown away. I mean… strawberry-rhubarb ice cream? Why has this not been done before? The flavors were natural and fresh. The texture was divine. The oatmeal cookie was excellent. The service was perfectly friendly. What a completely satisfying experience!

You all must try Cookie Counter. ASAP. A coworker and I kept trying to visit, but since the hours are different from most of the lunch-time food trucks in Westlake Center, we kept forgetting We finally remembered, and neither of us regret it. I ordered the«London Fog»(earl gray and vanilla shortbread cookie). I didn’t realize the whole truck was«totally vegan» until I saw the wrapping, but I’m cool with minimizing ingestion of animal stuff so it’s all good here. Because their product is all vegan, you don’t get the weighty, filmy feeling you would normally get after eating dairy ice cream. It’s actually quite refreshing! I wondered if they used coconut milk, because I could taste a coconut taste in my earl grey ice cream, but it was delicious nonetheless. The BEST part of the sandwich, however, was the cookie! It is a good thing they don’t sell the vanilla shortbread cookie by itself, otherwise I’d probably go broke trying to buy them out every day. This cookie tasted exactly like shortbread should taste. Seeing as traditional shortbread gets all its flavor from butter, I wonder how they mimicked it in this cookie? But do I really care? All I know is that it is amazing. Chris, who runs the truck, is super nice and easy to chat with. He made the experience even more enjoyable, and his personality alone just makes you want to support ‘em. The prices are a bit steep here, especially compared to your run-of-the-mill ice cream sandwiches, but it’s worth it for good treat made with natural ingredients. The only thing I would have liked to see is more fruit flavors in the ice cream line-up, but I’m guessing these change regularly, so fruit probably does make it’s appearance on occasion.

A pretty awesome rotating selection of flavors and sandwich combinations, served up in a cute bus by a funny dude who’s always happy to offer a suggestion if you’re like me and get overwhelmed by options for deliciousness. $ 5 is expensive, but it’s worth it if you want a rich, sweet treat that won’t leave you feeling gross and sluggish. $ 4 for a cup is a good deal, the serving is pretty large, easier to eat than the sandwich and today they were offering a mint cookie flavor with big chunks of Newman-O’s mixed in –definitely give it a shot.

I love ice cream, but I don’t love the stomachache I get after due to my lactose issues. So you can imagine how big my eyes perked up when I saw«Vegan Ice Cream» while walking down West Seattle’s Summer Fest. I tried Seattle Cookie Counter’s Lemon Ice Cream + Sugar Cookie Sandwich and it’s absolutely delicious! Chewy cookie(I hate cookie sandwiches that get hard when cold) + creamy vegan ice cream that you can’t tell is vegan? AMAZING. They’re so good that I probably will start stalking them this summer as this heat wave persists.

i’ve never met one of their sammies that I didn’t love– really top notch product. I really wish they’d partner with some of the vegan places around Seattle(or world for that matter) to distribute their product. We get to them infrequently because we have to drive to find them. I definitely recommend that you do so however– best vegan ice cream around. The pints are a better value(sammies are more cookie to ice cream ratio, pints are the opposite). Darn it– just writing this makes me want to chase them down for another fix. BTW– style points for the VW Bus!

Some of the best vegan ice cream I’ve ever had… and I’ve had a lot of it. And, as if that’s not awesome enough, the cookies are OUTSTANDING. The Snickerdoodle is incredibly buttery sans butter. I supported them on Kickstarted and I’m glad I did. I still haven’t made my way through my punch cards, but I’m sure I will soon. I was a bit concerned about their ice cream being coconut based, but they nailed it. Sometimes coconut based ice cream has a harsh, overwhelming coconut taste(Full Tilt, I’m looking at you) but this ice cream is just really creamy and tastes great. They have a number of really creative and interesting combinations, and every time I’ve gone so far I’ve been able to try something new. The couple seems really adorable and friendly, and I love their cute indie style, with the crocheted hearts, and weird stamp of the guy’s face from when he was in Kindergarten or something… I also sometimes see them take their little kid around with them and I think to myself, how cool would that be, to grow up on an ice cream truck! I didn’t want to take off a star for this, but I do agree with the other posters that the sandwiches seem small for the price. However they’re specialty food and that’s in line with the price of other stuff I’ve seen. Maybe in the future they can lower their prices a bit? Also, I hope they get some better/more regular places to be. The places they’ve been in the past have been sort of out of the way and weird to get to. But I understand it’s a process when starting a new business like this :)

After waiting months to be in the same area as this truck, I finally got to have my ice cream sammie. I had the sugar cookie with mint chip ice cream. The ice cream itself was amazing. I would happily take that in a bowl, in a tub, straight into my mouth, whatever. However, I was not impressed with the cookie. I like my cookies to be soft and this sugar cookie was not rock hard, but it was pretty crumbly, leaving me less than thrilled. I expect this kind of cookie from gluten free recipes, but not from regular vegan cookies. Other than the cookie, I like this truck a lot. I hope they add non-sandwiched ice cream and other items to their truck. It is $ 5 for a sandwich, which seems like a lot at first, but it is pretty filling for what you get. And do you really need an ice cream sandwich the size of your head? No. You don’t. Also, if it’s vegan, support the hell out of it. Is it good or bad for you? I don’t care. I don’t care about your health. You don’t need to take ice cream that is made from milk taken from a raped cow.

My boyfriend and I supported this project on Kickstarter and boy are we glad we did! I am GF and dairy free though not vegan, and boy do I have a soft spot for people with a passion for creating sweet treats aligned with my food sensitivities. We just had our first sammies and I’m even more happy that I supported them. I had the GF snickerdoodle cookie with chai ice cream and my boyfriend had the peanut butter oatmeal with raspberry ice cream. I didn’t try his because it was not GF but mine was delicious, the cookie had a great texture — not too crunchy and not too soft, and the ice cream was velvety creamy. My boyfriend loved his and said it was similar to a PB&J. We will definitely be rooting for them to get a spot in the U District, but to be honest we will drive just about anywhere in Seattle for these sammies. Can’t wait to try more!

After a day of running errands, I took my kiddo to the Ballard Mini-Pod to grab an ice cream sandwich from Seattle Cookie Counter. I had planned on having sushi next door but they were unexpectedly closed. No matter, I decided to grab an ice cream sandwich as well. They’re a fairly new business and they’ve been on my list to try. Both Chelsea and Chris were in their lovely VW bus, waiting to serve up sammies. They seemed really friendly. Chris was fun to talk to. It was interesting to learn about their kickstarter and their product. My kiddo had chocolate chip and vanilla bean. I had chocolate chip and coffee ice cream. The cookies are obviously homemade from appearance. I like a little character to my cookies — they don’t have to all look alike. Did I mention everything here is vegan? I’m not vegan but can appreciate food without animal products. My only requirement is that it taste good. My sandwich was good but I prefer the vanilla bean. It was slightly creamier than mine. The cookie is crunchier than I would expect in a frozen treat but still good. They have wet wipes for your messy convenience which is a nice touch. My kiddo and I both agree this was a good treat and we’ll be back again. My criticism is that at a price point of $ 5, the ice cream sandwich is small. Before you lecture me about the ingredients and«vegan-ness,» rest assured, I get that. However, Seattle is a strong vegan market and the price points are often lower than you would find in other cities. Because I’m not vegan, faced with a choice between this and a comparable larger, non-vegan product it would be no contest. I’d be eating all kinds of animal.
