Guero Loco’s Bubba-Que

Amazing! This is so good.
The que was excellent and the coleslaw is just the way I like it. Here’s a tip: if you want ribs order a day in advance. They’ll take your number and call you to be sure you’re coming. Pretty great service for a very, very busy food truck.

Here’s the the skinny on the Que, I was super happy with the meat and the sandwich. I love the smell of slow cooked BBQ, which is not even close to the same thing as grilling (just because you slap BBQ sauce on something does not make it BBQ). The sides were not so good, the mac and cheese was watery and lacked the cheesy factor (good cheese), the beans we’re just there like grade school cafeteria, edible but not good. I had one more side and I forgot what is was so not very good. They would have a better score if the sides were as good as their meat. So my suggestion is to forgo the sides and get down to the meat of things.

First time for me so this is a very limited review. I ordered the Hawaiian Pork Tacos after considering the steak tacos. Three pork tacos cost $ 5 and three steak cost $ 8 but two steak and one pork cost $ 9??? Anyway, I quit being picky and went with the pork only. Not a bad decision at all. The tacos come smothered in cole slaw and pineapples (canned but they work in this dish) and cilantro. The pork itself was great! Really tender and flavorful. The corn tortillas were also on point — not too stale or stiff like some street tacos I’ve had. All in all, definitely worth the repeat visit to try out the dogs and the burritos!

This. Place. Is. Heaven. On. A. Bun. But seriously, heaven.
The owner is SO FRIENDLY, the food is TOP NOTCH (try the mac and cheese or the SOUP! AHH). The meat has an amazing, juicy smoke flavor — melts in your mouth. Whenever the truck is on the east side, we’re at it!!!

Thanks to the Tucson Food Truck Roundup for introducing me to Guero Loco’s! I ordered one of the Hawaiian tacos and one of the pork sliders. Both feature barbecued pork. My fave was the taco, but that’s probably because I much prefer corn tortillas over actual bread. The pork was seriously good in both items. Tender and smoked to perfection. For me it’s all about the smoke. Barbecue sauce I like in small doses. The tacos had pineapple along with the meat and a delicious sauce. Completely yummy! The slider featured a nice slaw on top of the meat with a generous topping of sauce. It was all good!

Guero Locos bubba-​que is another food truck that I tasted at the roundup.
I’ve had Guero’s bbq twice now, but this review is only for the pulled pork sandwhich. The first time that I tried the pork sandwhich, I fell in Love. The pulled pork was very tender and it had a very nice smoky flavor. The tender pulled pork was sitting in a large soft roll and smothered in tangy bbq sauce. This sandwhich was so delicious, it had the right amount of meat, I thought it was a nice proportion of meat to bread. I enjoyed it very much… so much, that I was actually planning on getting another pulled pork on the next roundup.
And I did!!!
But I was slightly disappointed. After waiting in line for about 10 minutes I finally got my pulled pork sandwhich. I noticed it was slightly bigger (it had a lot of meat) but I didn’t mind at that point. I took my first bite and the pork was as good as I remembered, tender, smoky & tangy all at once. Then I went to take my second bite and the roll/​bun just split in half and all the meat fell out. At this point it was just impossible to eat my sandwhich. I would just take a piece of bread and grab some pork with it and eat it that way. I kind of wished that I would have ordered the sliders or even the ribs. I believe that would have been easier to eat.
I wanted to give them 4 stars, but knocked off a star because of the difficulties I had with my second sandwhich. Besides that, my pulled pork sandwhich was really good and I would definitely go back and eat some bubba-​que hopefully to give them more stars.
