Wonderful food. i thought I was getting one taco as something might be lost in the translation but my plate had three stuffed with Korean steak and freshly sautéed veggies. It is gonna take some time to get your food, but quality is worth it. Plate needed a fork, the tortillas were rendered useless by the generous serving. When in Tucson, find this truck, delicious food.

Mafooco is a solid food truck — if you haven’t tried it definitely check it out! However, as a vegetarian, the options are limited(which is totally fine, I understand!) and they always have the same few items every time I see them. So… I’m a little Mafooco-ed out. I’d love to see some variety :) I do love their salsa!

The storied kimchee taco truck caught our eye at the Barrio Fest, and I wasn’t impressed with the chicken and beef tacos. No fusion flavors emerged, and the small tortillas were tough and cold. I wanted to like this truck, but with such heavy competition these days I’ll probably pass them by.

I don’t give a lot of five star ratings but this truck is exceptional! While I don’t expect to be waited on from the window, their customer service is only matched by the creative offerings that come through it. This is one amazing family with a gift they joyously share. My only gripe is that they don’t park outside my house! Well done MaFooCo!

My wife and I split the kimchi quesadilla with beef. Very tasty and cheesy goodness. The beef was melt in your mouth good. I expected more kimchi though. That’s the only negative I have.

Putting kimchi on food does not suddenly make it korean fusion. They can start a spin off company called JamFooCo where they put scotch bonnet pepers and allspice on everything. If you are looking for korean fusion you will be sad. It is spimply a mexican food cart who puts kimchi on things.

So after a few months of my mom telling me I HAD to get the Kimchi Tacos, I finally did today. She texted me and told me that Food Truck Roundup was down the road from her house, so I decided that I would go and check out these tacos I had only heard about in legend. My boyfriend and I walked down the row of food trucks, reading the menus as we passed, but all the while knowing what we came for. We came for kimchi tacos, and we were going to get them! The woman at the register was super friendly and happy to help us, and while we waited for our tacos, plates of amazing-looking food kept coming out of the trucks. I was so excited I could barely stand it. Our tacos came out. We rushed over to a fold-out table. We counted to three, and then bit into a heavenly blend of spicy and fresh and sweet and smokey. The kimchi itself is the stick-to-your-lips-so-you-never-have-to-pay-for-collagen-injections hot, which I love. I can’t even stand tabasco for it’s heat, but this was different. So flavorful that the heat just adds another element to the tacos. The slaw on top was made with rice vinegar, maybe? With sesame seeds sprinkled throughout. Of course, as I was eating, my mom texted me about the Korean Burrito, which just means that I will come back next weekend to try that!

Had an opportunity to try the tacos today when I spotted them off 4th ave. tastes like an asian chipotle with cabbage added. I hate the tour de Tucson by the way.

I stumbled upon a Food Truck Roundup at Sportsman’s Warehouse and was excited to try the Korean tacos from MaFooCo that I had read about on here. The sound of a Korean/Mexican fusion definitely had me raising an eyebrow. There was no wait, and the lady standing in front of the truck to take my order was very friendly and helpful. The Korean tacos were good, however I can’t say that I would order them again. I thought that the salsa they used on top drowned out all the flavors that I was hoping to taste from the Kimchi and Beef Bulgogi. I’m not a fan of the corn tortilla in general, so this also took away from the enjoyment for me as well. Maybe next time I’ll try the Kimchi Quesadilla.

I want my baby back, baby back, baby back… and they heard my calling!!! I’ve heard of MaFooCo for quite sometime. It was the first thing I searched for when I got a Unilocal account. The only truck a ran around Tucson for and to my disappointment, at that time, MaFooCo was closed. They must of known I cried for them. My food truck obsession came upon me when I was in Los Angeles visiting a friend. Food trucks had just become a phenomenon and my friend couldn’t have me leaving without trying it. Korean food served in a taco/burrito. It was genius. MaFooCo comes very close to it. I’m so glad they reopened. The korean meat and flavor is delicious. The menu is simple 3 korean tacos or kimchi quesadilla(with or with out steak). That’s it. One adjustment however, is flour tortilla over corn tortilla. I know corn holds up very well to the sauces but flour is so much easier to chew. Quesadilla was great without steak and had a little spicy kick from the kimchi. You have tried food truck until you’ve tried MaFooCo

I did not think a kimchi quesadilla could taste so sweet, but oh how wrong I was. I arrived at the food truck round up early in order to avoid the lineas giganticas. The food took a while to get to me, but it was worth the wait. Not too much cheese and a nontraditional fresh kimchi and delich sauce. I shared it with friends, and they all agreed, Mafooco is a winner. I can’t wait to try their tacos next! cash only amigos

OHSOYUMMY! the hubby & I were at 24hr in the old pueblo this past weekend and they had lots of vendors in 24hr town. When we came across MaFooCo we had to stop and try it out! And man were we in for a treat in the middle of nowhere. Absolutely delicious Korean tacos and my hubby had the Korean burro. I wanted more but they were so filling and the seasoning was probably the best spices mixed together that I ever had. The beef was tender and cooked to perfection. Thanks guys for trucking(pun intended) all the way out in the middle of nowhere to be there for the 24hr Epic Ride event at Willow Springs.

Finally tracked down the truck… as a mom of three it is not eady to catch up with food on the move, but glad we did. First of all, we were greeted with a big smile, great attitude person. Then he cooked us short rib tacos and korean tacos. Loved them! I really liked all the flavors. Some of the meat had some gristle, but that’s almost impossible to avoid if you are going to eat meat.

We went to the Mercado San Agustin tonight because we heard food trucks were going to be there. Pulled up and saw the MaFooCo truck out front — SCORE! At the Food Truck Round Up in early January, I waited over an hour to try their food — I really enjoyed it then but I have to say I enjoyed it a million times more tonight because: I didn’t have to wait in line, I could sit while I ate, and I could see what I was eating(it was very dark at that Round Up). We had the tacos and the kimchi quesadilla which we also had last time. I love the tacos — so flavorful! I also really like the quesadilla — I love the crunch the kimchi adds to it. My husband hates kimchi but he likes that quesadilla — he says the kimchi isn’t overpowering. I love kimchi so I wouldn’t mind a bit more in the quesadilla. While I was waiting for my food I chatted up one of the guys on the truck. I was surprised to learn they opened just over 2 months ago! How cool that they already have a following! Love it! He turned me onto the hot sauce/salsa they use on the truck which is called Chilttepica. SOGOOD! And it’s sold right there at the Mercado so of course I ran in and bought some. At lunch time during the week, they’re at the library downtown and on certain nights they’re at Borderlands Brewery — like them on Facebook and run down to wherever they’re at!!!

I stood in line for about an hour to sample the eats at MaFooCo at the latest Tucson Food Truck Round-up. There were hordes of people and maybe they weren’t prepared for that large of a crowd. I had the Korean Tacos and the Kimchi Quesadilla. The tacos were beef with wonderful Korean spices and I believe a little Kimchi. The Quesadilla was just okay. It was large and had some flavor but in my estimation the tacos blew the quesadilla out of the water. MaFooCo was a bit pricer than the other trucks a the Round-Up but they did have plentiful portion sizes. The tacos alone would have gotten 4 stars were it not for the hour long wait.

Tried all three items, the tacos, quesadillas and burritos during the food truck roundup. You guys had the best food of all the trucks we tried. My favorite was the Kim Chi quesadillas… a great blend of Asian and Mexican flavors. My wifes favorite were the burritos. While we enjoyed the tacos, they tasted more like excellent Mexican tacos rather then a Asian/Mexican fusion taco.

I’ve been eye-ing this cart for a few weeks now… My office directly overlooked the Jacome Plaza(with a GREAT view of the weird red statue in fron the library). Now that Eat-A-Burger made the switch to Brick and Mortar in my building, I’ve be out a good reliable food cart lunch choice. MaFooCo always had a steady stream of folks coming and going, but I stalled because I couldn’t really understand what«Mexican Asian» food was. However, last week I needed something on the go and decided to give it a shot. I strolled up and gave their menu a glance… limited items, all around the $ 5 – 6 range. Short rib tacos, quesadilla… about 5 choices in total. I decided to give a cheese quesadilla a shot. The man working the cart was happy, helpful, and peppy. As I waited for my meal, two seperate people came up to the truck and said how great their short rib tacos were. I regret my quesadilla choice, but I’m sure this will be good too. About 5 minutes later my quesadilla is ready, and the man gives me two tin-foil plates… one with the quesadilla, and one with a side of rice. I hurry back to my office to unwrap these delicious smells before me! The quesadilla is good – for $ 5 much better than the boring ones I get in a standard restaurant with just plain cheese. My quesadilla is… crunchy? It’s cabbage, oddly enough. A little too much cabbage, but still surprisingly good. Also in there are onions, corn, and who knows what else. A bunch of veggies. Some I can’t identify. I’m a little picky so I pick a few out, but overall good. Rice is T-A-S-T-Y. Spanish rice, some extra green onions. Simple but good! I’ll be back, and maybe try those short rib tacos people kept raving about.

Mmm… MAFOOCO! tried it for the first time at the food truck roundup, and the tacos were delicious! Now I keep track of them on FB and try to stop by when I can. Today I found them behind the AZ National bank and had the Korean tacos & the kimchi quesadilla w/beef(got them to go since I had to share with my husband and they were still really good) Give them a try, they are definitely worth it!

Disclaimer: The person writing this review is a huge fan of Korean food and Mexican food. All right, now that that’s outta the way, I am ready to rave about the MaFooCo food truck. It was so conveniently parked outside Borderlands Brewery last night for the brewery’s grand opening. Many people were drinking beer, but we were also hungry! This is where MaFooCo comes in. This steel food truck was like a beacon of deliciousness luring us in. The menu was simple, which was perfect: Korean tacos, Kimchee quesadilla, and Korean burrito. My fiancé moved through the crowd inside the brewery to get to the food truck and came back bearing gifts. We tried the tacos and the quesadilla first. For those of you who have not had Korean food or don’t know what kimchee is, this food is a wonderful gateway drug. It gives you a sense of familiarity with the Mexican flair, but then it takes you on an adventure by adding some Korean seasonings and some chopped up kimchee. It’s an amazing combination. (Kimchee is a Korean staple at every meal. It is fermented napa cabbage with Korean chili powder/flakes and minced garlic. I love it.) The tacos were so fresh, with a nice heaping pile of tender, cubed beef, some minced kimchee, and a little pile of chopped romaine on top with a mild sauce that reminded me of almost a sweet ginger soy sauce mixture. Simple. Elegant. Delicious. The kimchee quesadilla was new terrain for me. I had never eaten anything that combined cheese with kimchee; it sounded like blasphemy. But it was very well made. There wasn’t an overwhelming amount of cheese like generic quesadillas are commonly guilty of(sorry to end a sentence with a preposition). A bit of cheese, nice amount of beef, and once again, some chopped kimchee. The ingredients were all the same, but the different permutations were unique and exciting. Lastly, before leaving the brewery, we went back for SECONDS. This time, we ordered the tacos again and a burrito. The burrito was a nice surprise, there was a different ingredient in there: seasoned sticky rice. For an Asian like me, the rice just elevated the burrito to soul food status. I’m craving it right now as I’m writing this review. In conclusion, MaFooCo serves as a delicious reminder that it pays off to be adventurous with food. You never know where you might find a great meal… for me, it was the MaFooCo food truck.

Today, I tasted MaFooCo’s Korean tacos for the first time. Yum! I did not know what to expect from Mexican-Asian fusion food. Now I can tell you: MaFooCo is worth tracking down in town to experience. The beef was tender and the light marinade was tasty. Service was fast and friendly. I found MaFooCo at the Fruchthendler Elementary School holiday bazaar, and tonight they’ll be at a brewery grand opening. Check their Facebook page. I’ll be watching it frequently now.
