Amazing, I’m still drooling from the steak. The restaurant is conveniently located inside Vail Resort and Spa, which was brilliant because it was snowing pretty hard and we didn’t feel like driving in the madness. We were greeted with a smile and taken to our table. They were moderately busy but gave us a huge booth anyways, which I liked. Our server was very nice, helpful and checked on us often, but not too often ;) We asked if she had a Spanish wine preference and of course she picked the most expensive one, but we took her advice and ordered it anyways. It started with an «F» and I wish I could remember what it was. All I remember was that it was red, almost spicy, and the perfect match for our steaks. Our salads were good, but the steaks were so unbelievable! They were perfect and tender and didn’t need any extra flavoring or sauces, even though they came with several on the side. Desert was scrumptious, delicate, creamy and filling, but then again we were pretty full by that time anyways. I’m still really amazed by everything this restaurant had to offer and look forward to dining there again. Only downside is that it was a little pricey and you shouldn’t go in jeans, but the food was perfect and worth every penny and then some!

Located in the ultra-service-oriented Cascade at Vail, one would think that Chaps would be the epitome of first-class service. One would be wrong. We stopped in at the end of lunch on one day. The hostess was very kind, but it took our waiter 10 minutes to acknowledge our presence. He got my order wrong, took it back, then the kitchen got it wrong. All of this took over half an hour — an eternity when I’m running low blood sugar. The next morning we braved Chaps again(having learned the hard way that DJ Macadams was closed), figuring going in the middle of breakfast would be a different story. They have the typical buffet breakfast, and the omlette chef rocked. But our waiter disappeared once he sold us on the $ 20/plate buffet, and the french toast and pancakes in the buffet were inedible. Maybe they are better at dinner. But I was sorely disappointed to find this level of bad service within Cascade. The rest of the hotel staff rock, they completely rock. But Chaps might as well be attached to a Howard Johnson’s in Miami Beach.
