We were able to try The Boss at Cheddar Box’s location at the Farmer’s Market today and wow. The hype was right. These girls are wizards. The gourmet grilled cheese was great and well worth the wait. Yes. That rhymed. Anywho, give this sandwich a try — you won’t be disappointed. Can’t wait to visit their establishment near the silos and test out a The Wacoan. Amazing twist on an American Classic.

Cheddar Box is amazing. I’ve lived in Waco for awhile now, and when I heard they were going have a more permanent place at the Silos, I was thrilled! They started small at the Farmer’s Market, and you can tell by the taste that they use local ingredients. Just because they are open 6 days a week hasn’t diminished the deliciousness. I find their price point is appropriately set given their local ingredients. I’ve probably eaten here 30 times and I can honestly say that it’s been fantastic almost every time. They expanded their menu when they moved to the Silos to include a delightful soup and shockingly good Mac ‘n’ cheese. The sandwiches are crisp as they come of the grill. My personal favorite is a Boss and I add an egg to add that final pop. I can assure you as a regular that the review that bashes this place was either a dude having a bad day or an extreme outlier. Either way, this food truck is by far the best option at the Silos. They’ve got a really friendly staff. I highly recommend this to anyone visiting from out of town to see the Silos or any Wacoan looking for a nice bite to eat.

Yum. I had the Wacoan(aged white cheddar + horseradish pecan cheddar on sourdough). Very simple and very good. Even better was the tomato basil soup with roasted butternut squash. So rich and chunky and delicious, it could be poured over pasta! The absolute best, however, was my MACDADDY.(Pretty sure they put their mac and cheese on the grill!) I ordered a cup of Mr. T(lemony Rosemary & white cheddar) to-go and had it for dinner later that evening. Sooooo delicious and creamy! The lemon really came through. Also, the young lady taking orders was super friendly and efficient. Great food truck!

ok, so this is probably going to be really unpopular, but I just wasn’t impressed with this place. at all. my girlfriend and i had been hearing great things from everyone and finally decided to brave the craziness and head to Magnolia for what we thought would be a knockout lunch. as it turned out, the traffic wasn’t the only thing that was underwhelming. in terms of food, it was just ok. any time you melt cheese between buttered and grilled bread it’s gonna be at least fine, but that’s about it. the amount of cheese in our sandwich was pretty skimpy, and the meat in it(brisket?) was totally bland. I honestly don’t remember the exact toppings inside bc it was all so mediocre and didn’t have much flavor. the bread also had no crunch or bite, but was rather pretty soggy. the portions were also really bad for the price. for 7 – 8 bucks I expect something close to a meal but instead got a pretty small sandwich similar in size to the sad plain cheese sandwiches my mom packed for me in elementary school. wait time was another issue for me. like I said, we expected Magnolia to be obnoxiously packed but it was actually fairly dead, food lines included. at the time we ordered there were 2 people in front of us with total wait time about 15 minutes. I know that’s not a lot in terms of a sit down restaurant, but from a food truck on a slow day it seemed unreasonable. I chatted up another customer who was waiting and they said they usually waited about 15 minutes or longer but loved it enough to come back. I actually grabbed something from another truck while we waited and had time to eat it before we got our food. it turned out to be the best decision I made all week, but I’ll save that for another review. the one big plus was that outside of the wait time, the service was actually pretty good. the employees were all really friendly and smiley. i think it’s extremely easy to be charmed by certain foods and concepts to the extent that our brains give bonus points just for«being cute», «cool» or «trendy», but in reality Cheddar box just isn’t all that great. 10 – 10 times I’d rather make my own grilled cheese with crappy white bread and kraft singles.

Who doesn’t love a great grilled cheese sandwich? On Saturday, I tried ‘The Boss’, which had Gouda and Bacon! WOW, the perfect combination and a cheese lovers dream come true! I was also super impressed that the bread wasn’t soggy and was grilled to perfection. Hope to be back in town soon to try the Mac and Cheese.
